Steps:
- To make pudding, butter a 2-quart souffle dish with a tightly fitted lid. Have ready a pot with a lid, large enough to hold the covered souffle dish and a rack that will fit in the bottom of the pot to allow water to circulate freely under the dish. Bring a large saucepan of water to a boil.
- Meanwhile, whisk the butter and the sugars together in a large bowl. Whisk in eggs, milk and brandy. In another bowl, combine flour, baking powder, salt and walnuts. Add butter mixture and stir just until smooth. Scrape mixture into buttered dish.
- Place rack in the bottom of the pot. Cover souffle dish and place it in the pot. Pour in enough boiling water to come halfway up the sides of the souffle dish and cover. Check occasionally to make sure there is enough water and that it is simmering; add boiling water if necessary. Steam the pudding until a skewer inserted into the center barely comes out clean, about 1 1/2 hours.
- To make sauce, place milk, vanilla seeds and pod and orange zest in a saucepan. Whisk yolks and sugar together in a bowl. Bring milk mixture just to a boil. Whisking rapidly, slowly pour the milk into the egg mixture. Pour mixture back into pan and place over low heat. Cook, stirring constantly, until sauce thickens enough to coat the back of a spoon -- do not let it come to a boil. Remove from heat and strain through a fine sieve. Whisk in orange juice. Refrigerate until cold.
- Carefully remove the souffle dish from the pot, uncover and let cool for 10 minutes. Unmold. Cut into wedges, place each wedge on a plate and surround with a pool of the orange sauce. The pudding can also be served at room temperature.

PERSIMMON PUDDING WITH HARD SAUCE
An old-fashioned steamed pudding may not be your traditional Thanksgiving Day dessert, but it is a tradition on our Thanksgiving table. You will need a pudding mold and persimmons, a beautiful orange fruit that looks like an apple. The persimmons will need to be quite soft, almost overripe to the touch. Persimmons taste like a cross between a peach and an apricot, but they are a little tart. The pudding should be served slightly warm, which makes the hard sauce - one of the best tastes - melt.

Steps:
- To make the pudding, in a large bowl, cream together the butter and sugar with an electric mixer at medium speed. Add the flour, 1/2 cup at a time, alternating with the persimmon pulp, brandy, eggs, and baking soda mixture. Stir in the vanilla, spices, walnuts, and raisins and mix on low until the butter comes together, about 5 minutes.
- Butter the top and bottom of a 2-quart pudding mold with a lid. Spoon in the mixture. Put the buttered lid on tightly and lock into place. Put the mold in a bigger pot filled with water to come halfway up the side of the mold; cover the pot. It is necessary to have a well-buttered mold and enough water for ample steam for this pudding to come out right. Bring the water to a simmer and let simmer over medium-low heat for about 2 hours. Make sure the water doesn't evaporate; add more hot water if it does. The pudding should be checked with a cake tester. When the tester comes out clean, the pudding is done. Take the mold out of the water and unmold when cool, 1 to 2 hours.
- While the pudding is steaming, prepare the hard sauce. Cream the butter and sugar together with an electric mixer. Beat in the brandy. Chille at least 1 hour. Serve with the warm pudding.

- Fill and boil the kettle. Put a little hot water in the bottom of the slow cooker and start pre-heating it on High whilst you assemble the pudding.
- (Jam) Put about 3 tablespoonfuls of any jam of your choice into the bottom of the pudding basin before you pour in the batter. Serve with custard.
- (Jam Sauce) Put 1.5oz of white sugar and 75ml water (yes, I know I'm mixing my units, but it's what's easiest to measure for me!) in a small saucepan and boil up until it starts turning syrupy. Add 2 heaped tablespoonfuls of the jam or marmelade of your choice. Boil up again until you have a homogenous sauce. You can add a little lemon juice to improve the flavour if you have it. I most often do this with seedless rasberry jam - depending on your choice of jam you might like to strain it before serving.

- Grease a ceramic bowl with butter and sprinkle with the extra tablespoon of sugar and a tablespoon of the reserved syrup. Pile half the drained apricots in the bottom of the bowl, and cut the rest into a large dice. Set aside while you make the batter.
- Put the softened butter, sugar, eggs and orange water into a large mixing bowl. Sift the whole wheat flour, almond flour, salt and baking powder over it. Beat together with an electric whisk until well blended. If the mixture seems stiff, add a tablespoon of milk or a little of the reserved apricot syrup to bring it to dropping consistency, where a small amount of the batter will fall off a spoon if gently shaken. Gently fold in half the diced apricots. Pile the batter gently into the bowl covering the apricots. Lightly smooth the top with a spatula.
- Tear off a piece of parchment paper larger than the rim of the bowl. Fold a double pleat in the center and place the paper over the top of the bowl, folding the edges under the rim. Secure the paper by tying twine tightly around the bowl.
- Set the bowl on a trivet or coaster inside a large saucepan. Pour enough boiling water into the saucepan to come up to about ⅓ of the bowl. Bring to a boil. Turn the heat down, cover with a lid and simmer for 1 hour. Check from time to time that there is still enough water in the pan.Always add boiling water during steaming to keep the heat up, never cold.

- 1. Butter the inside of a one-litre (size 30) traditional pudding bowl, place a small disc of non-stick paper in the base, then dust the inside with flour to make it non-stick. Have a deep 25cm lidded saucepan ready and check your bowl will sit inside it with some room around the base and sides.
- 3. Beat the butter and sugar in a mixing bowl until light and fluffy then beat in the eggs one at a time. Stir in the milk and vanilla.
- 4. Sift the flour and baking powder into the mixture, stir well until evenly combined, then spoon this on top of the jam in the pudding bowl. Traditionally you would cover the bowl with foil and tie this on firmly with string, creating a loop over the top to help lift the bowl out of the saucepan easily. But I do what my mum does today, and just sit the open bowl in the saucepan and stick the saucepan lid on – less fuss.
