WALNUT PIE WITH MOLASSES AND ORANGE

Walnut Pie With Molasses and Orange image

This pie is fudgy, nutty, salty-sweet and spiked with citrus. It's a meeting of sorts, between arguably Britain and America's greatest desserts: the treacle tart and pecan pie. Cut corners by grating the crust instead of rolling it out, but don't skip making your own bread crumbs and roasted walnuts; the texture and flavor rely on the freshness of both. Once you've prebaked the crust to biscuit brown, err on the side of undercooking the molasses-custard filling: It'll firm up when cooled and stay gooey for days.

Time 2h

Yield One 9-inch pie (about 10 servings)

Number Of Ingredients 10

Shortcut Pie Crust (see recipe)
4 1/2 ounces/130 grams whole raw, unsalted walnuts (about 1 1/2 cups)
1 cup plus 1 tablespoon/255 milliliters light corn syrup
Zest of 1/2 navel orange (about 1 teaspoon) and 1/4 cup juice (from the whole orange)
1 tablespoon blackstrap molasses
1/4 teaspoon ground ginger
3/4 teaspoon kosher salt
3 ounces/85 grams crustless white bread (crusts removed or reserved for another use), torn into small pieces, then pulsed in a food processor until very fine (about 2 lightly packed cups)
1/2 cup/120 milliliters heavy cream, plus more for serving
1 large egg plus 1 large egg yolk

Steps:

  • Prepare the Shortcut Pie Crust through Step 3.
  • Once the dough has chilled, working over a 9-inch pie dish, prepare the crust through Step 4, then chill, at least 30 minutes or up to 2 days. (This can be done ahead.)
  • When you're ready to bake the pie, heat the oven to 350 degrees and arrange two racks near the center of the oven. Place the chilled pie crust on a sheet pan, and the walnuts on a separate sheet pan. Transfer both to the oven. Bake until the walnuts are evenly golden throughout, 12 to 15 minutes. Continue to bake the pie crust until it turns golden and is fully cooked, another 10 to 15 minutes (for a total of about 25 minutes). Finely chop the walnuts to between the size of a steel-cut oat and a pea. Variety in size is nice.
  • While the pastry bakes, prepare the filling: Add the corn syrup, orange zest and juice, molasses, ginger and salt to a small saucepan and warm over low heat just until the syrups liquefy and loosen. (Do not boil.) Add the bread crumbs and toasted walnuts to the warmed mixture, stir and let sit until slightly cooled.
  • In a medium bowl, whisk the heavy cream and eggs together with a fork to combine, then fold it into the cooled walnut mixture. Pour into the pie crust and bake on a sheet pan until the center of the pie just sets, about 25 minutes. Serve at room temperature or just above, with plenty of heavy cream for drizzling.

Categories     Dessert

Time 1h30m

Number Of Ingredients 21

200g (1¼ cups) plain flour
50g (½ cup) confectioners' sugar
40g (¼ cup) almond flour
6g (1 tsp) salt
1 orange, zested [optional]
150g (⅔ cup) unsalted butter, cold
1 egg yolk
15ml (1 tbsp) cold water
300ml (1¼ cups) orange juice, about 3 large oranges
4 eggs
60g (¼ cup) caster sugar
25g (3½ tbsp) cornstarch
6g (2 tsp) gelatine powder
115g (½ cup) unsalted butter
15ml (1 tbsp) Angostura orange bitters [optional]
250ml (1 cup) heavy (double) cream
23g (3 tbsp) confectioners' sugar
5ml (1 tsp) Angostura orange bitters [optional]
1 orange, peeled and segmented
7g (10 nuts) shelled pistachios, crushed
mint leaves

Steps:

  • Place the flour, confectioners' sugar, almond flour, salt, orange zest and the cold butter into a food processor. Pulse the ingredients until a fine breadcrumb consistency has been formed.
  • Add the egg yolk and cold water, pulse again until the mixture sticks together in clumps.
  • Tip the contents of the food processor onto your work surface and bring together into a ball with your hands. Knead the pastry a few times until nice and smooth. (If your butter wasn't cold and was a bit too soft your pastry might be too. If so, wrap it in parchment paper and chill in the fridge for 15 minutes.) Set aside.
  • Grease a 23cm/9in loose-bottomed tart tin.
  • Lay a piece of parchment paper on the work surface. Remove the base of the tart tin and lay it on the paper. Using a pencil, draw a circle onto the paper 4cm/1½ins bigger than the base of the tin.
  • Dust the base of the tin with flour. Place the pastry ball in the centre of the tin base and flatten out slightly. Roll out the pastry, still on the tin base, until it meets the circle marks. As you are rolling the pastry, turn the pastry by turning the paper.
  • Gently fold the pastry into the centre of the tin base. Carefully lift the tin base off the work surface, drop it into the tin, ease the pastry into the corners and up the sides of the tin, pressing the overhang lightly over the rim. If the pastry has cracked at all, simply press it together to seal.
  • Press the pastry into the curves of the tin then lightly prick the base with a fork, but not all the way through. Place the pastry-lined tin onto a baking tray, cover loosely with cling film or tea towel and chill in the fridge for 30 minutes.
  • Preheat the oven to 200°C/180°C Fan/390°F/gas mark 6.
  • Remove the pastry from the fridge and uncover.
  • Line the inside of the pastry with foil so it supports the sides, then fill with baking beans.
  • Bake blind for 12-15 minutes, until the pastry is set, then lift out the foil and beans.
  • Carefully trim the excess pastry from the sides using a potato peeler, lightly run the peeler over the top of the excess pastry until it falls away, leaving you a smooth top to your edges. Remove the trimmings from the sheet.
  • Return the empty pastry case to the oven for another 10-12 minutes or until it is pale golden and completely dry.
  • Set aside and allow to cool while you make your orange filling.
  • [Optional] If you are using fresh oranges, zest the oranges and set aside the zest for later. Now juice the oranges and place the juice into a small pot.
  • Heat the orange juice on the stove over low heat until it simmers.
  • While the juice is heating up, whisk together the eggs, sugar and cornstarch in a bowl until smooth.
  • Once the juice starts to simmer, slowly pour it over the egg mixture while whisking. Mix well until combined and smooth, then pour it back into the pot.
  • Place the pot back over a low heat and keep mixing until the liquid starts to thicken. Remove from the heat and transfer into a mixing bowl. Add the gelatine powder and whisk until fully incorporated.
  • Leave the filling to cool down slightly then add the soft butter, orange zest and Angostura orange bitters. Quickly mix it in with a whisk until fully combined.
  • Pour the orange filling into the pastry case and lightly drop the case onto your counter, from about 2.5cm (1 inch) off of the counter, a few times until all bubbles have been released from the filling. Place in the fridge to set for at least 3 hours or, for best results, overnight.
  • Remove the tart from the tin.
  • Place the cream, confectioners' sugar and the Angostura orange bitters into a bowl and whisk together until firm.
  • Now decorate as you see fit. Feel free to take inspiration from the photos or just go with your own ideas. Enjoy!

Number Of Ingredients 18

1/3 cup walnuts
1 teaspoon chopped fresh rosemary
3/4 cup plus 2 tablespoons all-purpose flour
1 tablespoon granulated sugar
1/4 teaspoon salt
6 tablespoons cold unsalted butter, chopped into 1/2-inch pieces
4 tablespoons (1/2 stick) unsalted butter
1 cup dark brown sugar
1/2 cup honey
1/4 cup heavy cream
1 teaspoon pure vanilla extract
1 teaspoon fine salt
2 cups walnuts, coarsely chopped
1 teaspoon finely chopped fresh rosemary
1 1/2 cups heavy cream
2 teaspoons granulated sugar
1 teaspoon orange zest plus 1/4 cup fresh orange juice
Powdered sugar, for dusting

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F.
  • For the tart shell: In the bowl of a food processor, pulse the walnuts, rosemary and 2 tablespoons of the flour until the nuts are finely ground. Add the granulated sugar, salt and remaining 3/4 cup flour and pulse to blend. Add the butter and pulse until the dough resembles coarse sand. Pour in 1 tablespoon cold water and pulse until the dough just comes together in a ball. Shape the dough into a disc, wrap in plastic wrap and refrigerate until the dough is firm, about 30 minutes.
  • Place the dough between 2 sheets of parchment paper and roll it out until it is 1/4 inch thick and 10 inches in diameter. Transfer the dough to a 9-inch tart pan and press the dough into the bottom and up the sides of the pan, trimming away any excess dough. Prick the dough with a fork, place the tart pan on a baking sheet and bake until light brown, about 20 minutes. Set aside while you make the filling.
  • For the tart filling: Melt the butter in a small saucepan over medium heat until it is golden brown and fragrant, about 3 minutes. In a large bowl, whisk together the brown sugar, honey, cream, vanilla and salt. Add the browned butter, walnuts and rosemary and stir to combine.
  • Pour the filling into the tart shell and place on a baking sheet. Bake until the filling is bubbly and thick, about 35 minutes. If the edges of the crust begin to get too dark, cover the tart loosely with foil. Transfer the tart to a wire rack to cool.
  • For the orange chantilly cream: In the bowl of a stand mixer with a whisk attachment, combine the cream, granulated sugar and orange zest and juice and beat until soft peaks form, about 2 minutes.
  • To serve, dust the tart with powdered sugar and top each slice with a dollop of the cream.

WALNUT TART

Walnut Tart image

If you seek inspiration for a better pie, you need look no further than a traditional French walnut tart. It is only marginally different, but vive that difference. The reason is butter: butter in the crust and butter in the filling. Oh, and cream in the filling, too. If they had pecans in France I'm sure they would use them, as you could in this recipe.

Provided by Mark Bittman

Categories     pies and tarts, dessert

Time 40m

Yield 8 to 12 servings

Number Of Ingredients 6

1 stick butter, more for smearing foil
1 unbaked pastry shell in a 9-inch pie pan
1 1/2 cups sugar
1/2 cup cream
2 1/2 cups roughly chopped walnuts (there should be large chunks)
Salt to taste

Steps:

  • Preheat oven to 400 degrees. Tear off a piece of foil twice as large as crust. Fold it in half and smear it with butter; lay buttered side onto crust. Weight foil with a pile of dried beans or rice (these can be reused for this purpose), pie weights, or a tight-fitting ovenproof skillet or saucepan - anything that will sit flat on the surface. Bake 12 minutes, then remove foil and continue to bake at 350 degrees, until crust is a beautiful shade of brown, another few minutes. Remove and let cool on a rack while you prepare filling.
  • Put sugar in a heavy 6- or 8-inch saucepan or deep skillet with a tablespoon of water and turn heat to medium. Cook, gently shaking pan occasionally, until sugar melts; then cook, stirring occasionally and scraping sides with a heat-proof flexible spatula, until mixture turns golden.
  • Turn heat to low, then carefully add butter and cream. Cook, stirring constantly, until butter melts and mixture is uniform. Stir in walnuts and a large pinch of salt if you like, then spread on crust. Refrigerate for about an hour, then sprinkle with a little more salt and serve.
