Easy Brown Sugar Walnut Bars image

These easy walnut bars are made with brown sugar, egg, vanilla, and chopped walnuts. A great alternative to cookies.

3/4 cup/3 1/2 ounces flour (all-purpose )
1/2 teaspoon salt
3/4 teaspoon baking powder
1/8 teaspoon baking soda
1 large egg
1 cup light brown sugar (firmly packed)
1 teaspoon vanilla extract
1 cup walnuts (chopped)

Steps:

  • Cut into 2-inch bars; cool in pan. The recipe makes about 16 walnut bars.

2 eggs
2 cups packed brown sugar
2 teaspoons vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped walnuts

Steps:

  • In a bowl, beat the eggs, brown sugar and vanilla. Combine the flour, baking soda and salt; add to the egg mixture. Stir in walnuts. , Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 20-25 minutes or until bars pull away from edges of the pan. Cool on a wire rack.

1 cup flour
1/2 cup butter, room temperature
2 tablespoons brown sugar
2 eggs, beaten
1 1/2 cups brown sugar
1 cup chopped walnuts or 1 cup pecans
1 cup shredded coconut
1/4 teaspoon vanilla
2 tablespoons flour
1/2 teaspoon baking powder

Steps:

  • Preheat oven to 325 degrees F.
  • For Bottom Layer mix ingredients and press into 9 X 13 pan greased with butter Bake for 10 minutes or until golden brown.
  • For Top: Mix ingredients together and spread on top of cooled bottom layer.
  • Bake 350 F for 25 minutes till golden brown.
  • Let cool till set and cut into squares.

1 teaspoon vanilla
1/4 cup egg substitute (Egg Beaters)
1/2 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup walnuts, chopped

Steps:

  • Preheat oven to 350°F.
  • In a medium bowl, combine the brown sugar, vanilla and egg substitute, beating until well blended.
  • In a separate bowl sift together the flour, baking soda and salt.
  • Add the dry mixture to the brown sugar mixture and stir just until incorporated and moist; don't over mix.
  • Fold in walnuts; then spread into a greased 9" square pan.
  • Bake in the preheated 350°F oven for 19 min; then cool in pan.
  • Cut in squares to serve.
  • Variation: swap out the walnuts for pecans instead.
  • TIP: you may wish to chop the walnuts a little more finely if you have very young children, if choking may be an issue for them or refrain from giving them access to this treat entirely.

1 cup butter, softened
1 cup icing sugar
1 egg
1 teaspoon vanilla
2 1/4 cups all-purpose flour
1/4 teaspoon salt
2 cups candied red cherries, cut in half
1 cup walnut halves, chopped

Steps:

  • In bowl, beat butter with sugar until fluffy; beat in egg and vanilla.
  • Then add flour and salt; stir until blended.
  • Stir in cherries and walnuts.
  • Divide dough into thirds; shape each into 10" (25 cm) long log.
  • Wrap and chill until firm, at least 3 hours.
  • Cut logs into 1/8th" or 3 mm thick rounds and place about 1 inch (2.5 cm) apart, on parchment lined baking sheets.
  • Bake in top and bottom thirds of 325 deg F oven, rotating and switching pans halfway through, just until edges begin to colour, 8-10 minutes.
  • These cookies brown even faster than shortbreads, so keep a close eye on them! I start checking early, and they're usually done around the 8 minute mark.
  • Let cool on pan for 5 minutes, then transfer to wire rack and let cool completely before storing. Store layered with waxed paper in airtight container for up to 2 weeks, or freeze for up to one month.
  • Makes about 12 dozen cookies (less, of course, if you cut them a little thicker).
  • These are really delicious cookies, well worth the time it takes to make them!
  • Hint: If you want to use red and green cherries do not mix the cherries in same batch, they look better if made separately!
  • Note: chill time of 3 hours is not included in prep time.

I cut this recipe out of our local paper. These cookies are some work but so worth it!! Toasting the oatmeal is the secret to cookies everyone will die for.

2 cups walnuts (chopped)
1 cup oats (not instant...)
1 cup sugar (granulated)
1 cup brown sugar (packed_)
1 cup butter (softened)
2 eggs
1 teaspoon vanilla extract
1 2/3 cups soy flour
1/2 teaspoon salt
2 cups raisins
1/2 cup sweetened flaked coconut

Steps:

  • Preheat the oven to 375 degrees. Spread walnuts and oats on a baking sheet and cook for 2 minutes. Stir, and cook 2 minutes, or until lightly toasted. Remove from the oven and pour into a large mixing bowl. Set aside. Coat 2 large baking sheets with nonstick cooking spray and set aside.
  • In the bowl of food processor fitted with a steel blade (or in a mixer), combine both sugars, margarine, eggs and vanilla. Process until smooth and creamy, about 30 seconds. In a small bowl, combine the soy flour and salt. Spoon the soy flour mixture on top of the batter. Pulse 3 or 4 times to mix.
  • Scrape the batter into the walnut-oatmeal mixture. Add the raisins and coconut. Fold the ingredients together.
  • Drop the dough 2 inches apart onto the prepared sheets, using 2 tablespoons of dough for each cookie. Bake for 12 to 15 minutes, until the tops are just beginning to brown but the middles still look a little soft. Cool on the baking sheets for a few minutes and then transfer to a rack to cool.
