EASY BERRY MAPLE PANCAKE OR WAFFLE SAUCE (HEALTHY)



Easy Berry Maple Pancake or Waffle Sauce (Healthy) image

Easy and delish on pancakes, waffles, crepes, or anything else that needs some great berry flavor! Use blackberries or raspberries as your berries. Other berries really don't work :) This doesn't make a huge amount of topping so you can double if you wish.

3 tablespoons frozen raspberries or 3 tablespoons frozen blackberries
1 tablespoon maple syrup
2 teaspoons fat-free evaporated milk
1/2 teaspoon all-purpose flour
sugar or artificial artificial sweetener, to taste

Steps:

  • Heat first 3 ingredients in a bowl for 45 seconds, or until berries are thawed and have released their juices.
  • Lightly mash the berries until the sauce no longer has any big chunks, and mix in flour and sweetener.
  • Enjoy over pancakes, waffles, crepes, or whatever you want! Great with margarine and a dollop of Cool Whip.

3 tablespoons unssalted butter
1 cup flour
1 teaspoon baking powder
Pinch of baking soda
Pinch cinnamon
Pinch of salt
1/4 sugar
1/2 cup yogurt
1/2 cup milk
1 egg, lightly beaten
1 cup frozen blueberries not thawed

Steps:

  • Preheat waffle iron and read manufacturer's instructions. Melt butter in microwave. In a large bowl, combine flour, baking powder, baking soda, cinnamon, salt and sugar. In another bowl, beat together yogurt, milk and egg. Whisk liquid mixture into dry ingredients until just combined. Fold in frozen berries. Stir in melted butter. Brush hot waffle iron with butter or spray. Spoon about 1/2 cup of batter onto iron, smooth out with back of spoon and close to cook. This first waffle will be the tester. Cook waffle until golden brown. Remove to plate and keep warm. Serve with butter, maple syrup or blueberry syrup.

3 eggs, separated
1 2/3 cups milk
2 cups flour
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1/4 cup butter, melted
2/3 cup blueberries
1 1/2 cups blueberries
3 tablespoons honey
1/2 cup orange juice, divided
1 tablespoon cornstarch

Steps:

  • Heat waffle iron.
  • Separate eggs into one bowl for whites, one for yolks.
  • To start the batter: Whisk milk into the egg yolks, then add the flour, baking powder and the salt. Whisk them together then add the butter and whisk until batter is just smooth then stop. Set aside to rest while completing the next steps.
  • Put the 1 1/2 cup blueberries in a saucepan with the honey and 1/4 cup of the orange juice.
  • Mix the 1 tbs of cornstarch in the other 1/4 cup of orange juice.
  • Bring the sauce to a boil, then add the orange juice/cornstarch while whisking constantly. Continue to whisk until it thickens to a thick syrup like sauce.
  • With a hand mixer, beat the egg whites until stiff. Gently fold egg whites and the 2/3 cup of blueberries into the batter.
  • Cook waffles according to your waffle irons instructins and top cooked waffles with sauce.

Steps:

  • Wash and stem blueberries.
  • Place in a deep saucepan and crush.
  • Cook over medium heat for 5 minutes.

1 pound frozen blueberries, thawed, undrained
1/2 cup plus 2 tablespoons apple juice
1/2 cup sugar
1 tablespoon cornstarch

Lemon-poppy seed waffles
1 1/2 cups all purpose flour
6 tablespoons sugar
2 tablespoons poppy seeds
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
3 large eggs
1 1/4 cups buttermilk
1/4 cup (1/2 stick) unsalted butter, melted
1 tablespoon grated lemon peel

Steps:

  • For blueberry sauce:
  • Bring blueberries, 1/2 cup apple juice and sugar to boil in heavy medium saucepan. Simmer over medium heat until reduced to 2 cups, about 15 minutes. Dissolve 1 tablespoon cornstarch in remaining 2 tablespoons apple juice and add to blueberry mixture. Add lemon juice. Bring to boil, stirring constantly; simmer until thick, about 1 minute. Cool slightly. (Can be made 2 days ahead. Cover and refrigerate. Rewarm over medium-low heat before serving.)
  • For lemon-poppy seed waffles:
  • Whisk first 6 ingredients in large bowl to blend. Whisk eggs, buttermilk, melted butter and lemon peel in small bowl to blend. Add buttermilk mixture all at once to flour mixture and whisk until just blended. Let mixture stand 15 minutes.
  • Preheat waffle iron according to manufacturer's instructions. Spoon batter onto waffle iron. Cover and cook until golden and cooked through, about 7 minutes (cooking time will vary, depending on waffle iron). Repeat with remaining batter. Serve immediately with warm blueberry sauce.
