Steps:
- Prepare an ice-water bath by filling a large bowl with ice and water
- Bring a large pot of salted water to a rolling boil over high heat. Add the beans and cook until crisp-tender, about 2 minutes. Drain well in a colander, then set the colander with beans in the ice-water bath, making sure the beans are submerged. Drain the beans, shaking off the excess water.
- In the same pot, heat the oil over low heat. Add beans, garlic, tomatoes, olives and basil, and toss to combine. Drizzle vinegar over beans and toss to coat. Taste and adjust for seasoning with salt and pepper. Serve hot, warm, or cold.
VIRGINIA HAM AND CHEESE BALLS

- In a large bowl, combine ground ham, cream cheese, hot sauce and mustard until well blended. Roll into a ball and then roll in chopped peanuts. Garnish with cherry on top of ball. Serve on cheeseboard with crackers.

- Heat oven to 325 F.
- Melt chocolate and butter in a double boiler over simmering water.
- Stir sugar into chocolate until blended. Add eggs and vanilla. Stir in flour and nuts. Spread into a buttered 13" x 9" baking pan.
- Bake 30-35 minutes or until toothpick inserted in center comes up with crumbs (not batter). Cool in pan.

- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking pan. Line the pan with parchment, leaving an overhang, then butter the parchment.
- Whisk the flour, baking powder and salt together in a medium bowl and set aside. In another bowl, whisk the melted butter and brown sugar together until combined. Add the vanilla and eggs and stir to combine. Fold the flour mixture into the wet ingredients, being careful not to overmix. Fold in the walnuts and 1 cup of the chocolate chips. Pour the batter into the prepared pan and smooth the top. Scatter the remaining 2 tablespoons chocolate chips over the batter.
- Bake until the top is a light golden brown, 20 to 25 minutes, being careful not to overbake. Let cool on a wire rack. Remove the blondies from the pan and transfer to a cutting board. Cut into rectangles, sprinkle with flaky salt and serve.
VIRGINIA BROWNIES
If you like a fudgy brownie this is the one for you! The original recipe came from an old Southern Living book series that my Mom has. My baby brother would make this recipe and set up a brownie stand in the summer in leiu of the usual lemonade stand! We made this so much as kids the page it is printed on has fallen out of the book... I use melted butter in place of the shortening. This is good with or without the glaze.

- Combine all ingredients. Stir until smooth. Spread dough into a greased 9x13" pan and bake in a preheated 350 degree oven for 30 minutes.
- FUDGE FROSTING: Combine 1 c sugar, 1/4 c cocoa, 1/4 c cream or whole milk, 1 1/2 Tbsp butter in a saucepan and bring to a boil. Remove from heat and stir with a whisk until the mixture just begins to thicken. Cool to room temp before frosting brownies.

- Preheat oven to 350 degrees.
- Grease a 9x13" pan.
- Melt shortening in a large saucepan over low heat, then stir in cocoa.
- Remove from heat.
- Mix in sugar and vanilla then mix in eggs one at a time.
- Stir in remaining ingredients then stir in nuts.
- Bake for 30 minutes.
- Cool completely, before cutting into 2x2" squares.

- Stir 2 to 3 minutes to blend thoroughly before starting to cook.

- Melt the butter and chocolate over a double boiler, or just in the microwave for a quick zap!

- Preheat oven to 350° F. and butter and flour a 9-inch square baking pan, knocking out excess flour.
- Toast and skin hazelnuts (procedure this page). In a food processor pulse hazelnuts until coarsely ground (bits should be about 1/8 inch).
- Chop chocolates into small pieces and in a double boiler or a metal bowl set over a saucepan of barely simmering water melt chocolates with butter and Nutella, stirring occasionally until smooth. Remove top of double boiler or bowl from heat.
- While chocolates are melting, into a bowl sift together flour, baking powder, and a pinch salt. Whisk sugar into chocolate mixture until combined well. Add eggs, whisking until mixture is glossy and smooth. Stir in flour mixture and hazelnuts until just combined.
- Pour batter into baking pan and bake in middle of oven 35 to 40 minutes, or until a tester comes out with moist crumbs adhering to it. Cool brownies completely in pan on a rack and cut into 16 squares. Brownies keep, layered between sheets of wax paper in an airtight container at cool room temperature, 5 days.
