- For the rub: The day before cooking, mix the turbinado sugar, salt, paprika, chili powder, granulated garlic, onion powder, ground cumin, ground mustard, cayenne pepper and black pepper together.
- For the ribs: Take a slab of ribs and turn over so the curved side is up. Using your fingernail or a knife, pry under the membrane until you can put your finger under it and then pull it off.
- Sprinkle this side of the ribs with about 1 tablespoon rub, and then about 1 tablespoon yellow mustard. Use the mustard to help evenly distribute the seasoning. Turn the ribs over and repeat the process. Cover and store in the refrigerator overnight.
- To cook, start a smoker and bring the temp to 200 degrees F. Use apple or cherry wood chunks to provide smoke and flavor. Place the ribs in the smoker, curved side down. Smoke for 2 hours at 200 degrees F, and then raise the temperature to 250 degrees F for about 2 1/2 hours. Check for tenderness by testing if the bones will pull apart with a slight bit of pressure. If they are still tough, allow to cook for another 30 minutes.
- Remove from the smoker. For dry-style ribs, sprinkle with about 1 tablespoon rub. For wet-style ribs, glaze with the BBQ sauce.
BEER BRINED BABY BACK RIBS WITH HONEY BBQ SAUCE
Great ribs recipe. The brine keeps the meat moist and juicy. The sauce is quite tasty as well! Recipe adapted from "Simply Perfect Grilling". Make the sauce ahead of time to save time and effort before cooking!

- Prepare your ribs by rinsing them off and removing the membrane on the back (slide a sharp knife under there to loosen it, then grab it with something dry like a paper towel and pull it off).
- You may cut your ribs into sections before brining, if desired.
- Mix together beer, salt, brown sugar, celery seed, cayenne pepper, black pepper and liquid smoke in a saucepan.
- Heat over low heat, stirring gently until all the salt dissolves; allow to cool.
- Place rib sections in a large ziplock or resealable bag and pour the cooled brine over; squeeze out as much air as possible and seal the bag.
- Allow the ribs to brine in this mixture, for 6 hours or overnight, rotating bag occasionally.
- Prior to cooking, remove ribs from brine and pat dry; discard used brine.
- Using a drip pan, prepare a grill for indirect cooking.
- Place the ribs over the drip pan and grill using indirect medium heat (test by placing your hand over the heat- you should be able to keep it there for about 3 seconds).
- Cover grill and cook for 1 1/2- 1 3/4 hours or until the ribs are tender, and the meat has pulled back from the edges of the bone slightly.
- Add additional coals during cooking if needed.
- Baste with honey bbq sauce during the last minutes of cooking, allowing the sauce to set.
- To make the sauce, cook onion and garlic in oil in a small saucepan until the onions become tender.
- Add the chili sauce, beer, honey, Worcestershire sauce and mustard to the pan, stirring to mix well.
- Bring sauce to a boil, then lower heat and simmer for about 20 minutes, stirring occasionally, or until it is as thick as you like it.
- Use sauce on ribs as a baste; sauce can be prepared ahead.
SMOKY BABY BACK OVEN RIBS RECIPE BY TASTY

- Preheat the oven to 300˚F (150°C). Arrange a rack in the center of the oven.
- Using a paring knife, cut a small slit in the membrane of the ribs. Slide the blade underneath the membrane and over the bone. Lift the membrane with the knife until it tears away from the bone. Grip the released membrane with a paper towel or kitchen towel and pull away to remove.
- Line a baking sheet with aluminum foil and arrange the ribs in the center. Season the ribs on both sides with the smoky spice blend and salt. Tightly wrap the ribs in foil.
- Transfer the ribs to the oven and cook for 2 hours and 40 minutes to 3 hours, until the meat is tender and falling off the bone.
- While the ribs are cooking, make the smoky barbecue sauce: In the bowl of a food processor, combine the ketchup, honey, Dijon, Worcestershire sauce, apple cider vinegar, onion, and smoky spice blend. Process on high speed for 45-60 seconds, until the onion is completely broken down. Transfer the sauce to a bowl and refrigerate until ready to use.
- Remove the ribs from the oven and turn the broiler on high.
- Unwrap the ribs and generously baste the tops with the barbecue sauce. Return the ribs to the oven and broil for 1-2 minutes, until the sauce is beginning to caramelize.
- Remove the ribs from the oven and baste again with more barbecue sauce.
- Serve the ribs with more barbecue sauce on the side.

- If necessary, remove thin membrane from ribs and discard. Combine broth, soy sauce, 1/2 cup sugar, vinegar, olive oil and garlic. Place ribs in a shallow baking dish; pour two-thirds of the marinade over ribs. Turn to coat; refrigerate overnight, turning occasionally. Cover and refrigerate remaining marinade., Drain ribs, discarding marinade. NIMROD'S BABY BACK RIBS
These are the best ribs I think I have ever made. They are fall off the bone tender and juicy with a tangy/spicy sauce that we loved. I started with a recipe from my Weber's Big Book of Grilling, tweaked it to our liking and experimented on the grill and finally, after 4-5 tries, came up with the perfect Baby Back Rib recipe, IMHO. Thus the name, Nimrod's Baby Back Ribs. For a hickory flavor, soak 2 handfulls of Hickory Chips in water for at least 30 minutes and add to the hot coals the last 30 minutes of grilling. I was hoping to get the cooking time exact, but it varied each time I made these. Hope you enjoy. Be sure to have lots of napkins on hand cause you will need them. You also will need a grill that you can cook using indirect heat.

- To make the Sauce: In a medium saucepan over medium-high, warm the vegetable oil. Add the onion and cook, stirring occasionally, until translucent, 4-5 minutes.
- Add the garlic and cook for 1 minute more.
- Add the remaining sauce ingredients, including Tabasco sauce to taste, and bring to a boil.
- Reduce heat and simmer for about 15 minutes. (It might taste a little vinegarie at first but it won't by the time you use it).
- Set aside.
- Pour some of the sauce in a small bowl to use for basting the ribs.
- Allow the ribs to stand at room temperature for 20-30 minutes before grilling.
- Season with salt and pepper.
- Grill the ribs, rib side down, over Indirect Medium Heat (keep grill at about 325-350 degrees) until the meat is very tender and has pulled back from the ends of the bones, 1 1/2 to 2 hours.
- Turn after the first 30 minutes and again in 30 minutes, then do not turn again.
- During the last 30 minutes of grilling add the soaked hickory chips to the hot coals (if using).
- During the last 30 minutes of grilling time, baste generously with the small bowl of sauce every 5-10 minutes, depending on how much sauce you want on the ribs.
- Serve warm with the remaining sauce on the side.
