Steps:
- Heat the oven to 150C/130C fan/gas 2. Put the tomatoes and garlic in a baking dish that provides a snug fit. Season well. Pour over the olive oil and cover with foil. Bake for 1¼ hrs, then squash the garlic and stir into the oil. Eat warm with crusty bread. Will keep in an airtight container in the fridge for up to two weeks. Leave to cool first.

ROASTED VINE TOMATOES
Steps:
- Preheat the oven to 350 degrees F.
- Place the tomatoes still on the vines (plus any that fall off the vines) on a sheet pan. Rub or brush gently with olive oil and sprinkle generously with kosher salt and pepper.
- Roast for 10 to 15 minutes, until the tomatoes are tender and a few start to split. Sprinkle with basil, if using, and fleur de sel, and serve on the stem hot or warm.

- Heat the olive oil in a saute pan large enough to hold all the tomatoes in one layer. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, salt, and pepper. Reduce the heat to low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to loose their firm round shape. Steps:
- Heat olive oil in a saucepan over medium heat and add sliced garlic. Cook and stir for about 30 seconds before adding basil leaves. Sizzle garlic and basil in olive oil until the thinnest slices of garlic just start to turn golden. Quickly transfer in tomatoes. Add salt and pepper flakes and increase heat to medium-high.
- Cook, stirring occasionally, until the mixture simmers and the tomatoes have completely collapsed and liquefied. Turn off the heat.
- Using a strainer or colander, strain the sauce into another pot, pressing everything through with the back of a ladle or spatula, until nothing is left in the colander except the skins and seeds.
- Place strained sauce back over medium heat and reduce to about 5 cups, or until desired thickness. Taste for seasoning and use immediately, or store in an airtight container until needed.

- Prepare Tomatoes: Boil a large pot of water and prepare a bowl of ice water.
- Cut an X in the bottom of each vine ripe totmatoe.
- Place in boiling water for 30 seconds or until skin begins to peel back.
- Immediately remove and place in ice water.
- When all tomatoes are prepare, remove skins, core, cut each in half, and squeeze to remove seeds and pulp.
- Coarse chop tomatoes and set aside.
- In a large saute pan or skillet brown sausage and prosciutto.
- Add onions and galic and saute until onions begin to appear translucent.
- Deglaze pan with 1/4 cup of white wine and allow to reduce until liquid is almost gone.
- Add tomatoes and herbs and allow to simmer for 45 minutes.
- About 15 minutes before done add a generous amount of parmesan cheese to help thicken and flavor sauce.
- Prepare Angel Hair Pasta per directions cook until al dente.
- Drain and add to sauce, mix and transfer to large pasta bowl.
- Serve with fresh grated parmesan cheese.

- Blanch tomatoes in boiling water until skins split. If you make a little cross on the bottom end they will split faster. You don't want to cook the tomatoes. As soon as you see that they will peel easily, plunge into ice water to cool. Peel the tomatoes, and dice. Put in bowl. Mince the garlic and add to the bowl. Toss in the chopped basil and drizzle with olive oil until lightly coated. Add salt and pepper to taste. Place covered bowl into refrigerator and chill. They are now ready to eat.
