UKRAINIAN SALAT VINAIGRETTE (BEET SALAD)
A delicious Ukrainian beet salad! Great with meat and poultry dishes (especially Chicken Kyiv) with a side of mashed potatoes! The preparation takes some time, but I really like the salad! It is one of the few salads popular in Ukraine that doesn't contain mayonnaise! Enjoy!

Steps:
- Place the beets into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer for about 20 minutes. Add the carrots and potatoes. Boil for another 10 minutes, then cover the pot and leave overnight.
- The next day, peel and dice the beets, carrots, and potatoes into small, even pieces. Place the vegetables in a large bowl. Stir in the pickles, onion, peas, olive oil, salt, and pepper. Garnish with parsley before serving.

- Place beets and onion in a large bowl.
- In a cup, combine oil, raspberry vinegar, balsamic vinegar, and garlic.
- Season with the salt and pepper.
- Whisk to combine.
- Pour over the beet mixture and toss well.
- Sprinkle with the chives (if using).
- Cover and refrigerate for at least 15 minutes or up to 3 days.

VINIGRET SALAD (BEET VEGETABLE SALAD)
It took me 5 years to develop this recipe. This is an excellent vegetarian salad but does take some time to make.

Steps:
- Cook beets in 4 cups of water either in a large saucepan or in a pressure cooker; cook until just tender.
- Reserve 1 cup of liquid to use later and discard the remainder.
- Immediately immerse beets in cold water, then peel off skins and discard.
- When beets are cooled, slice the beets into 1/4 inch thick slices; then cut again into 1/4 inch strips; then cut into about 1 inch lengths.
- In a microwave proof dish, add 1 tablespoon water and frozen petite peas.
- Cover and microwave on HIGH (full power) for 2 minutes.
- Stir and continue to microwave covered on HIGH (full power) for an additional 2 minutes.
- Drain peas and immediately add about 6 ice cubes and cover with cold water, set aside and let cool.
- Drain peas well before using.
- In a large mixing bowl, add sliced beets, grated carrots, dill pickles, onions, celery, apples, sauerkraut, red kidney beans, petite peas and gently mix together.
- DRESSING--------------.
- In a mixing bowl, combine sugar, lemon juice, olive oil, red wine vinegar, reserved beet juice and horseradish; stir well to blend.
- Adjust dressing mixture to taste.
- Pour dressing over prepared vegetables and gently fold together to coat.
- Cover and refrigerate until ready to serve.
- Serve on individual side plates and spoon some of the dressing over.
- Salad will keep very well for at least 10 days when covered and refrigerated.

BEET AND ENDIVE SALAD WITH GARLIC AND HERB VINAIGRETTE

- Preheat the oven to 375 degrees F.
- Place a large sheet of aluminum foil on a baking sheet. Place the beets on top, drizzle with the olive oil and sprinkle with salt, then fold the long and short edges of the aluminum foil up to the middle and roll together, making a packet with the beets inside. Put in the oven and roast until fork-tender, about 1 1/2 hours. (Can be done a day or two ahead of time.) Allow to cool, then slip the skins from the beets, trim the ends, and cut into 1/2-inch cubes. Set aside.
- Quarter the endives lengthwise, then slice crosswise into 1/2-inch thick moons. Combine the beets and endive in a salad bowl and toss with the vinaigrette. Season with additional salt and pepper, if necessary. Serve immediately.
- In a small glass bowl, melt the salt in the vinegar, then add the pepper, shallot, garlic, mustard, and herbs and combine well. Whisk in the olive oil in slow, steady stream until the dressing is thickened. Alternately, place all ingredients in a glass jar, close the lid, and shake vigorously.

- In a medium pot, boil beets until easily pierced with knife, about 1 hour. In a separate pot boil potatoes and carrots until easily pierced with knife, about 30 min. Drain all vegetables and let cool to room temperature. Peel skin off beets, potatoes, and carrots. Finely dice all vegetables, including onion and pickles. Dice all vegetables equal size, or use a vegetable chopper. Separate diced beets from the rest of the diced vegetables. Place diced beets in a bowl, add 1 tablespoon of sunflower oil or olive oil. Add diced beets to the rest of the ingredients (carrots, potatoes, onion, pickles and sauerkraut) and add 1 1/2 tablespoons of sunflower oil or olive oil. Mix well and refrigerate until ready to use.
TRI-COLOR BEET SALAD WITH CHERRY VINAIGRETTE

- For the beets: Preheat the oven to 400 degrees F. Lay out a large sheet of foil on top of a roasting dish and spread the beets across evenly on the sheet. Drizzle with a little olive oil and season with salt and pepper. Top with another sheet of foil and crimp to seal the edges. Poke holes in the top to allow steam to escape. Place in the oven and roast until the beets are tender, 30 to 45 minutes. Remove from the oven. Allow to cool in the foil pouch before loosening the skins and discarding. Quarter the peeled beets and place in a large bowl.
- For the cherry vinaigrette: Drain the cherries and roughly chop. Whisk together the vinegars (including the red wine vinegar from the cherries) and cherries while slowly drizzling in the olive oil so it lightly emulsifies. Season with salt and pepper. Set aside until ready to use.
- For the salad: Toss the warm beets with the cherry vinaigrette. Add the kale, pepitas, goat cheese and mint, continuing to toss. Season with salt and pepper.

- To Roast the Beets: Adjust the oven rack to the center position and preheat the oven to 400°F Rub the beets with the olive oil and wrap them together in a large piece of aluminum foil. Put the beets in a small roasting pan or baking dish and roast them for 50 minutes to an hour, until they are tender when a knife is inserted in the center.
- Remove the foil packet from the pan and let the beets cool on the foil before unwrapping. Using your fingers, peel the beets over the foil. The skins should slip off easily; if not, use a paring knife. Cut the beets into 1/4-inch matchstick slices and reserve.
- To make the Vinaigrette: Put the olive oil, balsamic vinegar, red wine vinegar, onion, jam, mustard, and sugar in the container of a blender or food processor. Process until well blended and emulsified. (You should have 1 cup.) Season to taste with salt and pepper.
- To Assemble the salad: In a large salad bowl, toss the greens, beets, and walnuts with half of the dressing. Season to taste with pepper. Top each serving with some of the cheese. Pass the remaining dressing at the table.
