ENGLISH SCONES
When I came to America from England in 1967, I made sure to bring along my favorite recipe for scones. Served warm with butter, they're perfect for breakfast.

Steps:
- In a large bowl, combine the flour, sugar and baking powder. Cut in butter until mixture resembles fine crumbs. Stir in raisins. Beat milk and egg; add to dry ingredients, stirring lightly. , Turn onto a lightly floured surface; roll to 1-in. thickness. Cut with a 2-1/2-in. biscuit cutter. Bake at 425° until golden brown, 10-15 minutes. Serve warm.

ENGLISH PLAIN SCONES
Simple english scones. Great straight from the oven. Cut them open, butter them. Add strawberry jam if you like. For a super indulgent english afternoon tea add clotted cream. Makes 6-8 scones depending how thin you roll the dough.

Steps:
- Put the flour and salt in a bowl then rub in the butter.
- Add the sugar.
- Add the milk and mix to form a dough. You may want to mix with a knife as the dough gets very sticky as you add the milk.
- Flour a board ready for the dough. EXTRA TIP: Using rice flour on your board at this stage will make your scones wonderfully crisp on the outside.
- Knead the dough lightly on the board.
- Roll with floured rolling pin (or press with your hand) the dough to about 2cm thick.
- Cut rounds from the dough with a cutter (or use a glass with edges dipped in flour if you don't have a round cutter).
- Place the rounds on greaseproof paper lightly dusted with flour on a baking sheet/tray. Or use a greased tray.
- Gather up the odd bits of dough and lightly knead them together. Press/roll to 2cm thick again on your floured board, cut rounds and repeat until all the dough is used.
- Optional: Brush the tops of the scones with a little bit of milk.
- Bake in pre-heated oven for 12-15 minutes until they have risen and start to become golden. Gas mark 7, 220c.

ENGLISH SCONES RECIPE BY TASTY
Here's what you need: self-raising flour, butter, sugar, baking powder, salt, milk, egg yolk, jam, clotted cream

Steps:
- Preheat the oven to 425˚F (220˚C).
- In a large bowl, rub together the self-raising flour and cubed butter until you form fine crumbs.
- Mix in the sugar, baking powder, and salt, and make a well in the middle.
- Pour in the milk and gently mix together until just combined.
- Tip the dough onto a floured surface and knead for about a minute. Be careful not to over-knead the dough.
- Using a round cookie cutter or the rim of a glass, cut circles into the dough that are about 1-2 inches thick.
- Place onto a baking tray lined with parchment paper and coat the tops of the scones with the egg yolk.
- Bake for 12 minutes.
- Serve with clotted cream and jam.
- Enjoy!

Steps:
- In a large bowl, sift together the flour, baking powder and salt. Whisk in the sugar. (Or give all the dry ingredients a quick whirl in a food processor.) Cut butter into bits and work it into the dry ingredients with fingertips or a pastry blender, or by pulsing the processor, until mixture is finely crumbly. If using a food processor, transfer mixture to a bowl.
- Gradually add 1 cup milk and the currants, if using, and mix with a fork. Knead lightly by hand to make a smooth dough. Wrap in plastic and refrigerate 20 minutes.
- Heat oven to 425 degrees. Grease a baking sheet with butter or line it with parchment paper. Roll dough to a 3/4-inch thickness. Use a fluted 2- or 3-inch cutter to punch out scones. Scraps can be kneaded lightly for additional scones. Beat the egg yolk with remaining milk and brush on the scones. Place on baking sheet and bake 10 to 12 minutes until risen and golden brown.

My grandmother is Scottish and her family made GREAT scones.... In search of the best scone recipe in the world I have adapted their recipe with my own touches and with the famous scone recipe from the world renowned Savoy hotel in London. I now believe I have adapted the BEST SCONE RECIPE IN THE WORLD!

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Sift the flour, baking powder, sugar and salt into a large bowl. Cut in butter using a pastry blender or rubbing between your fingers until it is in pea sized lumps. Stir in the currants. Mix together 1/2 cup milk and sour cream in a measuring cup. Pour all at once into the dry ingredients, and stir gently until well blended. Overworking the dough results in terrible scones!
- With floured hands, pat scone dough into balls 2 to 3 inches across, depending on what size you want. Place onto a greased baking sheet, and flatten lightly. Let the scones barely touch each other. Whisk together the egg and 1 tablespoon of milk. Brush the tops of the scones with the egg wash. Let them rest for about 10 minutes.
- Bake for 10 to 15 minutes in the preheated oven, until the tops are golden brown, not deep brown. Break each scone apart, or slice in half. Serve with butter or clotted cream and a selection of jams - or even plain.

- Add flour, salt and baking powder to a large bowl and mix. Add in the butter. Mix butter and flour using your hands until it looks like breadcrumbs. You can use a food processor to speed up the process.Add in your sugar and mix.
- Make a well in the middle of your bowl. Crack-in eggs and add milk. Beat your mixture until well combined(You can do this in a separate bowl). Scoop-up 2 tbsp of the wet mixture and set aside. Slowly fold in your dry mixture into the flour mixture. Remember to avoid over-kneading. It's better to err on the side of handling your dough too little. Cover your dough with plastic wrap and let it chill in the fridge for20-30 minutes.
- Once mixed, put the dough on a lightly floured surface. and use your rolling pin to flatten it down to about an inch high. Use a round cutter and press down to cut the dough into individual scones. Knead the excess dough as little as possible to recombine it and roll it out again to cut more. You can cut in different shapes, as long as they are2-3" wide.
