SLOW COOKER SAUSAGE, BEAN AND PASTA STEW
Two secret ingredients do double-duty in this sausage stew: fire- roasted canned tomatoes boost the flavor and add smoky backbone, while a Parmesan rind-which you can get on its own in many supermarkets-adds a savory, just-slightly-cheesy note and tons of body.

Steps:
- Spread the onions over the bottom of a 6- to 7-quart slow cooker and top with the carrots, garlic, white beans, thyme bundle and sausage links. Mix the diced tomatoes with the broth and 3 cups water and pour over the sausages. Add the Parmesan rind if using.
- Cook on high for 4 to 5 hours or on low for 7 to 8 hours; the beans will be tender and begin to fall apart. Uncover the slow cooker, remove and discard the thyme bundle and Parmesan rind and transfer the sausage links to a cutting board. Stir the pasta into the stew and continue to cook, covered, until the pasta is cooked through, about 20 minutes.
- Turn off the heat. Cut the sausages into bite-size pieces and stir into the stew along with the parsley and vinegar. Season to taste with salt and pepper. Serve with grated Parmesan on the side for sprinkling on top and crusty bread for soaking up the broth.
- Cook's Note: This stew is also a great way to use up leftover cooked pasta. Simply omit the ditalini, reduce the water by 1 cup and stir 1 cup of cooked pasta (cut up if long noodles) into the finished stew along with the sausage pieces.

SLOW COOKER ITALIAN SAUSAGE AND PEPPER STEW
I LOVE a good sausage and pepper sandwich, so much so, I wanted to try and make a stew with the same hearty flavors and robust color. This is a fabulous slow cooker dinner, served with garlic bread on the side to sop up every last drop! I buy the bag of peppers with one each of red, orange and yellow for visual impact.

Steps:
- 1. Coarsley chop veggies - potatoes cut to about 1 and a half inch pieces. Line the bottom of a 5 - 6 qt. slow cooker with the potatoes. Brown sausages whole (I use hot, but mild or sweet will taste just as good!) in pan, and place in single layer on top of potatoes. Saute peppers, onions, and garlic in a little oil in pan about 2 minutes to just soften edges. Deglaze pan with some of the broth to get all that good flavor, and pour evenly over top of the sausages. Sprinkle the tapioca over the pepper mix. Next layer, pour tomatoes with juice evenly on top of peppers. Oregano, salt, and pepper sprinkled, then finish by pouring chicken broth over everything. DO NOT MIX! Leave in layers.
- 2. Cook on LOW for 4 hours. Remove sausages and let rest. Turn heat to HIGH, add 2 heaping tablespoons of cornstarch mixed with a little water to pot and stir in. Slice up the sausages, return to pot - stir in. Cover and continue cooking on high for 20 minutes or until sauce has thickened slightly. Serve with grated parmesan and garlic bread.

- Slow Cooker Chicken Alfredo. Who doesn’t love creamy alfredo sauce with al dente pasta and roasted chicken? It’s about as close to perfect as food gets if you ask me!
- Slow Cooker Lasagna. Have you ever cooked lasagna in the oven only to have the edges burned and the middle still cold? Slow cookers use evenly distributed heat, so everything cooks at the same time.
- Slow Cooker Spaghetti Sauce. When I make sauce on the stove, I usually leave it cooking for at least an hour. Maybe two if I forget about it. I think it’s best when it simmers slowly so all the ingredients can marry.
- Slow Cooker Beef Ragu. Ragu is similar to bolognese sauce, with the biggest difference being the former is thicker and uses red wine to make it extra decadent.
- Crockpot Stuffed Shells. I still remember trying to stuff pasta shells and struggling to get the spoon inside. Then when I saw someone using a piping bag, I had a serious facepalm moment.
- Minestrone Soup. Soup is the Crockpot’s best friend. There’s nothing better than throwing a whole bunch of ingredients into the pot with broth and coming back to a comforting bowl of goodness.
- Crock Pot Pizza Casserole. I prefer to think of this as pizza-pasta, but you can call it whatever you like. As you might’ve guessed, it’s the perfect blend of hearty pasta and yummy pizza flavors.
- Crock Pot Italian Sloppy Joe. If you’re looking for a classic sloppy Joe that’s maybe a little lighter, you’ll have to try this turkey version. I love ground turkey (and chicken) because they’re wonderfully lean and super tasty.
- Soft And Creamy Slow Cooker Polenta. I have a dangerous weakness for polenta. When it’s made with cream and cheese, I just can’t get enough. As with rice, you’ll want to cook the polenta in stock first and then add the cream at the end.
- Slow Cooker Cheesy Tortellini. Pasta is great. It’s cheap, easy to cook, and a pretty safe dinner option no matter who you’re cooking for. But if you like your comfort food with extra comfort, you have to try making your next pasta meal with three-cheese tortellini.

- Pat the chicken dry with paper towels and season with salt and pepper. Add the chicken to the slow cooker.
- Heat 1 tablespoon of oil in a large skillet set over medium-high heat. Cook the sausages until the are brown on all sides, about 1-2 minutes per side. They shouldn't be fully cooked at this point since they will continue to cook in the slow cooker. Transfer the sausages to a plate and set aside. Once they have cooled for a few minutes, slice them into bite-size pieces.
- Pour off all but 1 tablespoon of the fat from the pan and add the onions. If you don't have enough fat in the pan add some olive oil instead. Cook the onions for 5-8 minutes, stirring often, until they start to soften and brown lightly. Stir in the garlic, tomato paste, thyme, and red pepper flakes. After about 1 minute and the onions are coated with the tomato paste, stir in the flour and cook, stirring, for another minute. Whisk in the wine, scraping up the brown bits from the bottom of the pan. Gradually whisk in 1 cup of the broth until no lumps of flour remain. Transfer the mixture to the slow cooker.
- Stir the remaining 2 cups of broth into the onion mixture along with the bay leaves, beans, and sliced sausage. Cover and cook for 6-8 hours on low or 3-4 hours on high.
