SAUCE:
4 strips thick-slice bacon
1 1/4 pound ground beef
1/4 cup minced onion
1/4 cup fresh parsley, chopped
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 medium onions, sliced
1 (8-ounce) package button mushrooms, sliced
2 tablespoons flour
1 (12-ounce) bottle dark beer
1/2 cup beef broth
2 teaspoons sugar
2 teaspoons tomato paste
1/2 teaspoon minced fresh garlic
1/2 teaspoon caraway seeds
1/2 teaspoon kosher salt

Steps:

  • Cook bacon in a pan until crisp, transfer to a paper-lined plate and reserve drippings. Crumble bacon and reserve. Combine ground beef, minced onion, parsley, 1 teaspoon salt and 1/2 teaspoon pepper. Shape mixture into 4 3/4 inch patties. Brown patties in 1 tablespoon bacon drippings in the same pan over medium-high heat about 4 minutes per side. Remove patties from pan. For the gravy, add sliced onions and mushrooms to the pan and saute until the onions are tender about 8 minutes. Stir in the flour and cook 1 minute. Off heat, stir in beer, broth, sugar, tomato paste, garlic, caraway seeds and 1/2 teaspoon salt Return to the medium-low heat and bring liquid to a boil about 1 minute and simmer until cooked through. Return the patties to the pan, cover and simmer about 10 minutes. Serve steaks topped with gravy.

2 cups CLAUSSEN Sauerkraut, rinsed

Steps:

  • Cut sausage into 3 pieces, then cut each piece lengthwise in half. Cook in large nonstick skillet on medium heat 5 to 7 min. or until evenly browned, turning occasionally. Remove from skillet; cover to keep warm.
  • Melt butter in skillet. Add onions; cook 3 min. or until tender, stirring frequently. Stir in mustard. Add sauerkraut; mix lightly. Cook 5 min., stirring occasionally.
  • Top with sausage; cover. Cook 5 min. or until heated through.

4 slices bacon, thick sliced
1 1/4 lbs ground chuck
1/4 cup onion, minced
1/4 cup fresh parsley, minced
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 medium onions, sliced
1 (8 ounce) package sliced mushrooms
2 tablespoons flour
1 (12 ounce) bottle dark beer or 1 1/2 cups beef broth
1/2 cup beef broth
2 teaspoons sugar
2 teaspoons tomato paste
1/2 teaspoon caraway seed
1/2 teaspoon garlic, minced
1/2 teaspoon kosher salt

Steps:

  • Cook bacon in a large saute pan until crisp. Remove bacon, reserving 1 Tbs of the drippings in the pan. Crumble bacon and set aside.
  • Combine ground beed, minced onion, parsley, 1 tsp salt and pepper. Shape mixture into four 3/4" thick patties.
  • Brown patties in bacon drippings in saute pan over medium-high eat 4 min per side. Remove patties from pan.
  • Add sliced onions and mushrooms to pan; saute until onions are tender, about 8 minute
  • Stir in flour; cook and stir 1 minute.
  • Remove pan from heat; add beer, broth, sugar, tomato paste, caraway seed, garlic, and the 1/2 tsp salt.
  • Return pan to heat and bring liquid to a boil for 1 min to thicken.
  • Return patties to pan; cover and simmer until meat is cooked through, about 10 minute.
  • Top steaks with onion-mushroom sauce and bacon.

1 1/2 pounds lean ground beef
1/2 cup seasoned breadcrumbs
2 teaspoons dry mustard
4 dashes Worcestershire sauce
2 tablespoons ketchup
One 1-ounce packet French onion soup mix
Kosher salt and freshly ground black pepper
1 tablespoon salted butter
1 tablespoon olive oil
1 tablespoon all-purpose flour
1/4 cup sherry
1 1/2 cups low-sodium beef broth
Fresh parsley leaves, for garnish

Steps:

  • Place the ground beef, breadcrumbs, dry mustard, Worcestershire sauce, 1 tablespoon of the ketchup, 1 tablespoon of the soup mix and some salt and pepper in a bowl and knead until well combined. Form into 4 oval patties, and using the side of your hand, make lines across the patties to give them a "steak" appearance.
  • Place a skillet over medium-high heat and add the butter and oil. When the butter has melted and the oil is hot, fry the patties on both sides until no longer pink in the middle, about 5 minutes per side. Remove from the skillet and pour off all but 2 tablespoons of the grease.
  • Sprinkle over the flour and let cook for a minute. Remove the skillet from the heat and deglaze with the sherry, scraping the skillet to release all the flavor. Return to the heat and add the beef broth, remaining 1 tablespoon ketchup and remaining soup mix. Bring to a boil and let thicken, 2 to 3 minutes. Taste and adjust the seasoning as needed.
  • Remove the skillet from the heat and return the patties to the gravy, spooning a little gravy over each. Garnish with the parsley.

When I was a kid, we didn't have smartphones or the internet, all we had was a TV. But we didn't care because as we watched, we got to enjoy a little something called a "TV dinner." The king of those dinners, in my opinion, was the Salisbury steak, which is what I'll show you how to make here, along with one of the greatest gravies ever invented. Serve with buttered mashed potatoes and a vegetable side of your choice.

1 pound 85% lean ground beef
½ teaspoon freshly ground black pepper
1 teaspoon dry mustard
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
1 large egg, beaten
1 pinch cayenne pepper, or to taste
½ cup plain bread crumbs
2 tablespoons salted butter
12 large white button mushrooms, sliced
1 cup diced onion
1 pinch salt
2 tablespoons all-purpose flour
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
3 cups high-quality, low-sodium beef broth
salt to taste
2 tablespoons salted butter

Steps:

  • Combine beef, black pepper, dry mustard, ketchup, Worcestershire, soy sauce, egg, cayenne, and bread crumbs in a mixing bowl. Use a fork or your hands to stir the ingredients until very evenly distributed.
  • Cover with plastic wrap and refrigerate for 2 hours, or up to overnight.
  • While the meat is resting, melt 2 tablespoons butter in a large nonstick pan over high heat; add mushrooms, onions, and a pinch of salt. Saute, stirring occasionally, until very nicely browned, 5 to 8 minutes. Reduce heat to medium and add flour. Cook and stir for 3 minutes.
  • Stir in ketchup, Worcestershire sauce, and beef broth; increase heat to high. Bring to a simmer; reduce heat to medium and cook, stirring occasionally, until the gravy thickens slightly and reduces, about 10 minutes. Taste and adjust salt as needed. Transfer to a glass measuring cup, scraping the pan clean with a spatula, and reserve.
  • Remove meat from the refrigerator and divide into 4 equal portions. Moisten hands and form into oval patties, about 1/2 inch thick. Season both sides of the patties lightly with salt.
  • Melt 2 tablespoons butter in the previously used nonstick pan over medium-high heat. Add the patties and cook until browned, 2 to 3 minutes per side. Pour in gravy and bring to a simmer; reduce heat to medium and continue to cook until gravy is piping hot, and the meat is just cooked through and springs back lightly when touched, about 5 minutes.

2 teaspoons Worcestershire sauce
1 teaspoon beef bouillon granules
1 medium onion, quartered and sliced
1 can (4 ounces) mushroom stems and pieces, drained

Steps:

  • In a small bowl, combine the egg, bread crumbs, garlic powder and pepper. Crumble beef over mixture; mix well. Shape into two patties; dredge in 2 tablespoons flour. In a small skillet, brown patties on both sides in oil; drain. Set patties aside., Add the remaining flour to the skillet; whisk in water until smooth. Stir in the ketchup, Worcestershire sauce and bouillon. Add the onion and mushrooms. Bring to a boil. Return patties to the pan. Reduce heat; cover and simmer for 15-20 minutes or until beef is no longer pink. Serve gravy over patties.

  • COOK: bacon in large saute pan til crisp. Remove bacon, reserving 1 tbsp drippings in pan. Crumble bacon, set aside. COMBINE: rest of ingredients for steak. Shape mixture into four 3/4 inch thick patties. BROWN: patties in bacon drippings over medium-high heat 4 minutes per side. Remove patties from pan. Add sliced onions and mushrooms to pan; saute until mushrooms are tender, about 8 minutes. Stir in flour; cook and stir 1 min. REMOVE: pan from heat; add rest of sauce ingredients. Return pan to heat. Bring liquid to a boil for 1 minute to thicken. Return patties to pan; cover and simmer until meat is cooked through, about 10 min. Top steaks with onion-mushroom sauce and bacon.

2 tablespoons butter
3 tablespoons all-purpose flour

Steps:

  • In a medium bowl, combine egg, cracker crumbs, onion, salt, pepper and sage. Add beef and mix well.
