1 cup butter, softened
3 cups sugar
6 large eggs, room temperature
1 tablespoon vanilla extract
2-1/4 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking powder
1/2 teaspoon salt
1 cup semisweet chocolate chips
1 cup vanilla or white chips
1 cup chopped walnuts

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs and vanilla; mix well. Combine the flour, cocoa, baking powder and salt; gradually add to creamed mixture just until blended (do not overmix). , Pour batter into 2 greased 9-in. square baking pans. Sprinkle with chips and nuts. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool.

1 (12 ounce) package semi-sweet chocolate chips
1 cup butter or 1 cup margarine (2 sticks)
1 cup walnuts, toasted and chopped (optional)
4 eggs
1 1/2 cups sugar
2 teaspoons vanilla
1 1/4 cups all-purpose flour
1/2 teaspoon salt

Steps:

  • Place 3/4 cup of the chocolate chips and the butter in a saucepan on very low heat, and stir, until melted, being careful not to scorch.
  • Allow melted chocolate to cool to room temperature.
  • Preheat oven to 325 degrees F.
  • Spread walnuts (optional) on a baking sheet (if not already toasted), and bake in preheated oven for 10 minutes; remove pan from oven and allow nuts to cool before chopping.
  • Mix together eggs and sugar in a large mixing bowl; stir in vanilla and salt.
  • Sift flour, and add in small portions to egg, mixing well after each addition, until thoroughly blended.
  • Stir in cooled chocolate and mix well; then fold in chopped nuts (if using).
  • Add remainder of chocolate chips (about 1 1/4 cups) to the batter and stir well.
  • Pour batter into a greased 9x11-inch pan and spread evenly.
  • Bake at 325 degrees for approx 25-30 minutes, then allow brownies to cool in the pan on a wire rack.
  • Makes approx 15 brownies, depending on size preference.

1 cup all-purpose flour, spooned and leveled
1/4 cup unsweetened cocoa powder

1 cup semisweet chocolate chips
8 ounces semisweet or bittersweet chocolate, chopped
1 1/4 cups sugar
3 large eggs

Steps:

  • Preheat oven to 350 degrees. Brush a 9-inch square baking pan with butter. Line bottom and two sides with a strip of parchment paper, leaving a 2-inch overhang on the two sides. Butter paper, and set pan aside. In a small bowl, whisk flour, cocoa, baking powder, and salt; set aside.
  • Place butter and chocolate in a large heat-proof bowl set over (not in) a saucepan of gently simmering water. Heat, stirring occasionally, until smooth, 2 to 3 minutes; remove bowl from pan. Add sugar; mix to combine. Add eggs, and mix to combine. Add flour mixture; mix just until moistened (do not overmix). Add chocolate chips. Transfer batter to prepared pan; smooth top.
  • Bake until a toothpick inserted in center comes out with a few moist crumbs attached, 50 to 60 minutes. Cool in pan for 30 minutes. Using paper overhang, lift brownies out of pan; transfer to a rack to cool completely (still on paper). On a cutting board, using a dampened serrated knife, cut into 16 squares. Store in an airtight container at room temperature, up to 2 days.

185g unsalted butter
185g best dark chocolate
85g plain flour
40g cocoa powder
50g white chocolate
50g milk chocolate
3 large eggs
275g golden caster sugar

Steps:

  • Cut 185g unsalted butter into small cubes and tip into a medium bowl. Break 185g dark chocolate into small pieces and drop into the bowl.
  • Fill a small saucepan about a quarter full with hot water, then sit the bowl on top so it rests on the rim of the pan, not touching the water. Put over a low heat until the butter and chocolate have melted, stirring occasionally to mix them.
  • Remove the bowl from the pan. Alternatively, cover the bowl loosely with cling film and put in the microwave for 2 minutes on High. Leave the melted mixture to cool to room temperature.
  • While you wait for the chocolate to cool, position a shelf in the middle of your oven and turn the oven on to 180C/160C fan/gas 4.
  • Using a shallow 20cm square tin, cut out a square of non-stick baking parchment to line the base. Tip 85g plain flour and 40g cocoa powder into a sieve held over a medium bowl. Tap and shake the sieve so they run through together and you get rid of any lumps.
  • Chop 50g white chocolate and 50g milk chocolate into chunks on a board.
  • Break 3 large eggs into a large bowl and tip in 275g golden caster sugar. With an electric mixer on maximum speed, whisk the eggs and sugar. They will look thick and creamy, like a milk shake. This can take 3-8 minutes, depending on how powerful your mixer is. You'll know it's ready when the mixture becomes really pale and about double its original volume. Another check is to turn off the mixer, lift out the beaters and wiggle them from side to side. If the mixture that runs off the beaters leaves a trail on the surface of the mixture in the bowl for a second or two, you're there.
  • Pour the cooled chocolate mixture over the eggy mousse, then gently fold together with a rubber spatula. Plunge the spatula in at one side, take it underneath and bring it up the opposite side and in again at the middle. Continue going under and over in a figure of eight, moving the bowl round after each folding so you can get at it from all sides, until the two mixtures are one and the colour is a mottled dark brown. The idea is to marry them without knocking out the air, so be as gentle and slow as you like.
  • Hold the sieve over the bowl of eggy chocolate mixture and resift the cocoa and flour mixture, shaking the sieve from side to side, to cover the top evenly.
  • Gently fold in this powder using the same figure of eight action as before. The mixture will look dry and dusty at first, and a bit unpromising, but if you keep going very gently and patiently, it will end up looking gungy and fudgy. Stop just before you feel you should, as you don't want to overdo this mixing.
  • Finally, stir in the white and milk chocolate chunks until they're dotted throughout.
  • Pour the mixture into the prepared tin, scraping every bit out of the bowl with the spatula. Gently ease the mixture into the corners of the tin and paddle the spatula from side to side across the top to level it.
  • Put in the oven and set your timer for 25 mins. When the buzzer goes, open the oven, pull the shelf out a bit and gently shake the tin. If the brownie wobbles in the middle, it's not quite done, so slide it back in and bake for another 5 minutes until the top has a shiny, papery crust and the sides are just beginning to come away from the tin. Take out of the oven.
  • Leave the whole thing in the tin until completely cold, then, if you're using the brownie tin, lift up the protruding rim slightly and slide the uncut brownie out on its base. If you're using a normal tin, lift out the brownie with the foil. Cut into quarters, then cut each quarter into four squares and finally into triangles.
  • They'll keep in an airtight container for a good two weeks and in the freezer for up to a month.

This is posted in response to a request on the boards for recipes that travel/store well. It's from a cookbook distributed by MADD (Mothers Against Drunk Driving) in the mid 1980's. In all honesty, I don't know if they keep well - - they typically don't last very long after I make them. :) The recipe is supposed to make 36 small brownies, however, they can be larger. Trust me! LOL! I hope they turn out as well for you as they do for me.

1 (6 ounce) package semisweet chocolate morsels
21 graham cracker squares, crushed
1 (14 ounce) can sweetened condensed milk (not evaporated milk!)
confectioners' sugar

Steps:

  • Preheat oven to 375 degrees Farenheit.
  • In a mixing bowl, combine the chocolate morsels, crushed graham crackers, and sweetened condensed milk.
  • Grease an 8-inch by 8-inch pan, line with waxed paper, then grease the waxed paper.
  • (Sounds odd, but I've never been brave enough to not do this.) Press mixture into prepared pan.
  • Bake for 30 minutes.
  • Allow to cool slightly, yet turn out of pan while still warm and peel away waxed paper.
  • Cut into squares, and roll in confectioners sugar.

4 ounces unsweetened chocolate
3/4 cup butter (no substitutes)
2 cups sugar
3 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
6 ounces semi-sweet chocolate chips
1/4 cup water
2 tablespoons butter (no substitutes)
1 teaspoon almond extract
1 cup whipping cream, whipped

Steps:

  • In a microwave or double boiler, melt chocolate and butter for brownies.
  • Cool 10 minutes.
  • Add sugar and mix well.
  • Stir in the eggs and vanilla.
  • Add flour and mix well.
  • Line a 13x9x2 inch baking pan with foil and grease the foil.
  • Pour batter into the pan.
  • Bake at 350F for 25-30 minutes or until a toothpick inserted into the center comes out with moist crumbs.
  • Do not overbake.
  • Cool completely.
  • For topping, melt chocolate chips, water, butter, and almond extract in a microwave or double boiler.
  • Stir until smooth.
  • Cool to room temperature.
  • Fold in whipped cream.
  • Spread over brownies.
  • Chill before cutting.
  • Pour a big glass of ice cold milk and INDULGE!
  • Store leftover brownies (if there are any) in refrigerator.
