12 ounces uncooked vermicelli
1 bottle (16 ounces) creamy Italian salad dressing
1 small green pepper, chopped
1 small sweet red pepper, chopped
6 green onions, chopped
1 teaspoon dill seed
1 teaspoon caraway seeds
1 teaspoon poppy seeds

Steps:

  • Cook vermicelli according to package directions. Drain; transfer to a large bowl. Add remaining ingredients; toss to coat. Refrigerate until cold.

Fresh and Easy Vietnamese Noodle Salad image

This light and fresh Asian salad filled with cucumber, carrot and bean sprouts is a tangy side dish for grilled meats and poultry or eaten as a main dish on its own.

Number Of Ingredients 12

12 ounces thin Asian vermicelli noodles such as rice stick or mung bean
2 carrots (shredded)
2 cucumbers (seeded and shredded)
4 green onion (chopped)
1 1/2 cups fresh bean sprouts
1/3 cup chopped cilantro
1/2 cup fish sauce
1/2 cup seasoned rice vinegar
3 tablespoons sugar
2 cloves garlic (pressed or minced)
1/4 teaspoon crushed red pepper
Lime

Steps:

  • Soften the vermicelli noodles in a large bowl by covering with boiling water and soaking for 3-4 minutes or until tender. Rinse under cold water, drain, and add to a large bowl. Add the shredded carrots, cucumbers, bean sprouts and chopped cilantro to the noodles.
  • In a glass jar fitted with a lid or a bowl, mix together the fish sauce, rice vinegar, sugar, garlic and crushed red pepper. Pour 3/4 of the dressing over the noodles and toss to coat. Add more dressing if desired. Sprinkle with more cilantro and green onion and a squeeze of lime if desired. Salad can be made ahead and refrigerated overnight, however if making ahead, add the cilantro just before serving.

100g / 4 oz dried vermicelli noodles ((Note 1))
2 cups white or green cabbage (, shredded)
1 1/2 cups shredded carrot ((1 medium carrot))
1 1/2 cups bean sprouts
2 green onions (, finely sliced)
1/2 cup coriander/ cilantro leaves
2 tbsp light soy sauce
2 tbsp rice wine vinegar
1 1/2 tsp sugar
1 1/2 tbsp grapeseed oil ((or any other neutral oil))
1 garlic clove (, minced)
1 birds eye chilli (, finely minced )
Fried Asian Shallots (, to garnish (optional))
Red chilli (, finely sliced)

Steps:

  • Combine dressing ingredients in a jar and shake well to combine. Set aside for 5 minutes for the flavours to infuse.
  • Prepare vermicelli noodles per packet directions (usually soak in warm or boiling water 2 minutes). Drain well then set aside for 10 minutes to drain off exces water. Turn out onto tea towel if necessary to dry more (watery noodles = watery flavour).
  • Combine vermicelli noodles with remaining salad ingredients.
  • Just prior to serving, toss through dressing. Garnish with Fried Asian Shallots if you wish.

1 pkg (12 oz.) vermicelli (thin spaghetti)
2 Tbsp lemon juice
3 Tbsp accent
4 Tbsp wesson oil
1 can(s) ripe olives, small can sliced
4 celery, ribs chopped
1 bunch green onions, some tops
1 medium sweet bell pepper, chopped
1 jar(s) chopped pimentos, small jar
1 1/2 c mayonnaise
1/2 c miracle whip

Steps:

  • 1. Cook, rinse and drain Vermicelli (or spaghetti).
  • 2. Whip together lemon juice, accent and Wesson oil and pour over well drained vermicelli.
  • 3. Chop fine and add to the above: ripe olives, celery, onions, sweet pepper and pimentos. Mix well.
  • 4. Blend together mayonnaise and Miracle Whip and add to vermicelli mixture.
  • 5. Refrigerate overnight. Salad gets better with age.

Steps:

  • In a medium bowl, combine the chicken thighs with your marinade ingredients, and set aside at room temperature for 30 mins to 1 hour while you prepare the other salad ingredients.
  • Combine all the nuoc cham ingredients and stir until the sugar has completely dissolved into the sauce. Taste and adjust any of the ingredients if desired.
  • Boil the rice vermicelli noodles according to the package instructions. Drain and rinse under cold running water. Set aside in a colander.
  • Heat 2 tablespoons of vegetable oil in a cast iron skillet, grill pan, or frying pan over medium high heat. Sear the chicken for about 4 minutes per side, or until cooked through. Set aside on a plate.
  • To assemble the salad, combine the rice noodles with bean sprouts, julienned carrots and cucumber, romaine lettuce, mint, and cilantro. Slice the chicken thighs and add to the salad. Serve with your nuoc cham sauce.

2 (8 ounce) boxes vermicelli
1 teaspoon olive oil
4 teaspoons salad oil
1 teaspoon Accent seasoning
3 teaspoons fresh limes or 3 teaspoons fresh lemon juice
1 cup celery, chopped
1 green pepper, chopped
1 bunch green onion, chopped, all parts
1 (2 ounce) jar pimiento, drained and chopped
1 (3 7/8 ounce) can black olives, drained and chopped
2 cups mayonnaise
1 (10 ounce) package frozen peas, unthawed
fresh coarse ground black pepper
beau monde seasoning
garlic salt or garlic powder

Steps:

  • Boil vermicelli in salted water with 1 T oil added.
  • Don't overcook.
  • Drain and blanch in cold water.
  • Marinate vermicelli overnight in remaining oil, accent and lemon or lime juice.

1 tomato, chopped

1 1/2 cups mayonnaise

Steps:

  • The day before serving the salad boil the vermicelli for 10 to 12 minutes. Drain and rinse.

  • Add the mung bean vermicelli to a bowl of cold water. Soak the vermicelli until the noodles have become soft and lost their brittleness; about 5 minutes.
  • Meanwhile, add ¼ cup of water to a medium-size saucepan and bring to a simmer. Over low heat, add the halved prawns and cook for 1-2 minutes, depending on the size of the prawn, turning them occasionally. When cooked the prawn flesh will no longer be glassy, it becomes white, tinged with reddish-pink. Using a pair of tongs, remove the prawns to a plate and set aside.
  • Add the minced/ground chicken to the same pan. With a silicone spatula, stir occasionally until the chicken is cooked. It’s not necessary to completely break up the mince. In fact, it’s preferable to have some pieces. When cooked, lift it out onto the plate with the prawns. Set aside. Discard the liquid which is left.
  • Drain the noodles from the bowl of water. Using the same saucepan, bring 2 cups of water to the boil and add the noodles. Cook for about 2 minutes until the noodles are soft, pliable and translucent. Drain the noodles in a colander, then put them on a chopping board. They will be sticky, in one gelatinous mound. Don’t be concerned, that’s fine. Using a sharp knife cut across the mound about 4 cm (1 ½”) apart.

  • Sprinkle salt over julienned carrot and cucumber in a bowl, mix and leave for 5 minutes. Squeeze water out and place them in a mixing bowl.
