VELVEETA CHILI CHEESE DIP
Velveeta chili cheese dip is creamy and delicious. With only 3 ingredients, it is super easy to make for the best snack or appetizer.

Steps:
- Cube the Velveeeta cheese and place in a skillet or a sauce pan.
- Place the chili and chopped green chiles on top.
- Heat of medium heat, stir frequently until the cheese has melted and all ingredients are combined. Serve warm with chips and enjoy!

VELVEETA GREEN CHILIES CHEESE SPREAD
This is a home canned recipe. Velveeta and all cheeses are going through the roof in price! You can use any proceesed cheese spread. I bought 6 2lb bricks of velveeta cheese, on sale for half price and came up with this recipe. Store in a cool dark place. Refrigerate after opening. Green chilies can be mild, medium or hot.

Steps:
- In a double boiler add cheese, canned diced green chiles, and milk.
- Melt until blended. Add the vinegar, salt and dry mustard. Mix well.
- Heat clean10 half pint jars or 5-6 pint jars with seals and lids. Ladle mixture in the jars. Leave at least one inch head space in the jar. Do not fill to the top. Wipe the rims off with hot sterile cloth. Seal with lids and rings.
- Place in a boiling hot water bath for 15 minutes. Take out and place on a towelled surface without drafts. When you hear a "pop" and the seal is indented the jar has sealed.
- Note: If you want a more creamy cheese spread, add 4 more ounces evaporated milk.
- This delicious over fried potatoes and baked potatoes as well as crackers and also cooked cauliflower and broccili.

GREEN CHILI CHEESE FRIES
This is too simple to be this good. I cannot remember where I first had these but they have been a favorite of my family for years! You will end up cleaning your plate with your fingers.

- Melt the velvetta in a double boiler (pot of boiling water on bottom, bowl on top, velvetta inside bowl). When melted add the green chili's (juice and all).
- You may like more green chili's or less. Taste it after the first 2 cans and add to your taste. (Ive added 4 cans before!).
- Serve over baked french fries.
- (Feel free to just spoon directly into mouth also).

VELVEETA CHEESE LOG
Steps:
- Cream together Philly Cream Cheese, green chilies, and jalapenos. Place in refrigerator.
- Tear 2 strips of waxed paper (approx 36"). Place Velveeta cheese between the two sheets and roll with rolling pin until cheese is about 1/8" thick and the length is longer than the width. Using knife spread Philly Cream Cheese spread on Velveeta and roll up like a jelly roll.
- Refrigerate for at least 4 to 5 hours. Serve with your favorite crackers.

Steps:
- Heat oven to 425ºF.
- Brown meat in large skillet; drain. Return meat to skillet; stir in 3/4 cup water. Add Vegetables and Seasoning Mix; stir. Bring to boil; cook 1 min. Simmer on medium-low heat 5 min., stirring frequently. Stir in tomatoes. Spoon into 2-qt. casserole sprayed with cooking spray; cover with Cheese Sauce.
- Add remaining water to Cornbread Mix; stir until blended. Spread over cheese sauce.
- Bake 17 to 19 min. or until filling is heated through and topping is golden brown.

Steps:
- 1. Combine all ingredients (EXCEPT the Velveeta) in a medium size sauce pan. Simmer for 1-1/2 hours;
- 2. Melt cheese in microwave (if on stove slowly on low) and mix with ingredients that you've had simmering.
- 3. This an be kept warm in a warming pot or crock pot; if gets too thick you can thin it with beer.
- 4. Can be served with corn chips or lil smokies.
