2 lbs red potatoes (any waxy potato will work )
6 slices thick-cut bacon (chopped 12-to 1/4-inch)
1 medium red onion (sliced thinly, from stem to blossom end. )
1/3 cup sugar
1/3 cup apple cider vinegar
1/3 cup water
1 teaspoon celery seed
1 teaspoon kosher salt
salt & pepper (to taste)
pepper

Steps:

  • Cut potatoes into ½- to ¾-inch cubes and put them into a medium saucepan. (Leave skins on.)Add enough cold water to cover the tops of the potato cubes. Salt the water, cover the pot, and bring the potatoes to a boil. Cook for about 15 minutes, or until tender but still firm.

1 pound/500 grams potatoes
Salt, to taste
2 to 3 ounces bacon , chopped, Bauchspeck is best
1 tablespoon butter
1/4 cup finely onion, chopped
Optional : 1/4 teaspoon marjoram
Optional : 1/4 teaspoon caraway seed
Black pepper, to taste

Steps:

  • Gather the ingredients.
  • Scrub whole potatoes of the same size and cook in salted boiling water until easily pierced with a fork. Cool slightly; peel while still warm.
  • Chop bacon (or bauchspeck) into small pieces and cook in a large frying pan (11 or 12 inches) over medium heat until limp.
  • Remove from the pan but keep the grease in the pan. Add the butter and melt, but don't brown.
  • Slice the cold potatoes into 1/4-inch slices and place a single layer in the hot fat. Place any extra potatoes on top of the first layer.
  • Sprinkle the potatoes with the onions and bacon and let them cook over medium heat for 10 to 15 minutes until golden brown.
  • Flip them when they become golden brown on the underside, but don't stir them.
  • Sprinkle with marjoram, caraway, salt, and pepper and cook for 5 to 10 more minutes. Add more butter if necessary, to facilitate browning.
  • Serve and enjoy!

1 Tbsp. CLASSICO Traditional Basil Pesto Sauce and Spread
2 cloves garlic, minced
1 tsp. paprika
1 lb. new potatoes, halved
1 small red onion, coarsely chopped
3 slices cooked OSCAR MAYER Bacon, crumbled

Steps:

  • Heat grill to medium-high heat.
  • Mix first 4 ingredients until blended. Combine remaining ingredients in large bowl. Add dressing mixture; mix lightly.
  • Spoon onto 4 large sheets heavy-duty foil; fold to make 4 packets.
  • Grill 35 min. or until potatoes are tender. Cut slits in foil to release steam before opening packets.

Bacon -Butter Potatoes Oktoberfest Style image

From Oct 2007 issue of Sunset Magazine. A totally new way ( for me) to cook potatoes. Had to substitute several items, but still was very good. No Ale so used Coors reg. beer, added 2 tsp balsamic vinegar & 1 tsp molasses. Had only Yukon potatoes and Hormel real bacon bits. Made 1/2 recipe, and enough leftovers I fried the leftovers the next day for breakfast. The orginial recipe says 12-16. 1/2 served Dh and I for dinner and breakfast leftovers. I use Kosher salt. Great side dish to serve with German-style sausages cooked in the ale, cole slaw and pickled beets. The potatoes are a little work but the end result is delicious. Dh says to make these again and again. The recipe I have included is the original.

2 (12 ounce) bottles med.-bodied ale (3 cups)
4 lbs red potatoes
8 slices thick bacon
1/4 cup real butter
1 small onion, diced
1/2 teaspoon fresh grd pepper
salt

Steps:

  • Bring Ale to a boil in a 5-6 qt saucepot that will hold a steamer basket. Cut potatoes in bite size pieces and put into steamer basket and cover & steam for 15 minutes on low or until tender. Take off heat and keep warm over ale.
  • Meanwhile cook bacon in a frypan over med. heat until crisp. Remove and drain off fat, but do not wipe out pan. Saute onions in butter in pan on med. Cook until starting to brown about 10 minutes.
  • Place cooked potatoes in serving bowl. Put 3/4 of reserved ale into the fry pan, scraping up bits, add bacon to ale and onions, heat through and pour over potatoes adding salt and pepper toss gently. Serve hot or warm.

100g butter , plus extra for greasing
100g smoked bacon , cut into lardons
2kg large potatoes , thinly sliced (a mandolin is ideal)
300g white onions , finely sliced
500ml fresh chicken stock

Steps:

  • Heat oven to 200C/180C fan/gas 6 and grease a large casserole dish. Melt the butter in a large frying pan over a medium heat. Toss in the bacon and season really well. Cook until golden and crisp, about 5 mins.
  • In a large bowl, gently mix the potatoes with the onions, bacon and some more seasoning. Spoon the mixture into the prepared dish and pat it all down, pouring over the stock.
  • Bake in the centre of the oven for 1 hr 45 mins, covering the potatoes after an hour to stop them getting too dark. You should be able to push a knife through the potatoes with little resistance when the dish is cooked.

4 baking potatoes, scrubbed
1 ¼ teaspoons salt
12 slices bacon
2 tablespoons olive oil for brushing
1 cup brown sugar
2 tablespoons freshly ground black pepper

Steps:

  • Preheat an outdoor grill for medium-high heat.
  • Make 4 cuts into each potato without going all of the way through so that each potato has been cut into 5 thick slices. Place potatoes onto squares of aluminum foil. Sprinkle 1/4 teaspoon of salt inside each potato, then wrap with 3 slices of bacon and secure with toothpicks if needed. Brush the potatoes with olive oil, then sprinkle with brown sugar and black pepper. Wrap the potatoes loosely in the aluminum foil.
  • Grill potatoes until the bacon has crisped, and the potato is soft in the center, about 45 minutes depending on grill temperature.
