Party food doesn't get meltier, creamier, or more irresistibly cheesy than Velveeta Cheese Dip with a fresh take, a little Mexican flair. The perfect game day party appetizers, coming together with just a few ingredients and almost zero prep!

1 (32-ounce) package Velveeta cheese (cut into 1" chunks)
1 1/2 cup pico de gallo, store-bought or homemade ((or you could sub in 2 10-ounce cans Rotel, drained))
1 (12-ounce) can evaporated milk

Steps:

  • Add the Velveeta and evaporated milk to a large microwave-safe bowl. Cover and microwave for 2 minutes. Remove the bowl from the microwave (carefully -- the bowl will be very hot) and stir.
  • Continue to microwave at 30-second increments, stirring after each addition until the cheese has completely melted. Add the pico de gallo (or drained Rotel) and stir to evenly distribute throughout the cheese.
  • Serve alongside tortilla chips and enjoy.

1/2 lb ground beef or turkey
1 pkg taco seasoning
1 can diced tomatoes & green chilies
Variation # 3: (Double Recipe)
32 oz Velveeta
1/2 lb pork breakfast sausage
1 can cream of mushroom soup
2 cans diced tomatoes & green chilies

Steps:

  • Variation #1:
  • Cube Velveeta into microwave-safe bowl and pour diced tomatoes & green chilies over. Microwave on high for 3 - 4 minutes and stir. Repeat until creamy and smooth. Serve with tortilla chips or corn chips.
  • Variation #2:
  • Cube Velveeta into a microwave-safe bowl pour diced tomatoes & green chilies over. Microwave on high for 3 - 4 minutes and stir. Repeat until creamy and smooth. Meanwhile, cook ground beef or turkey with taco seasoning according to package directions. When done, drain and add to Velveeta mixture. Serve with tortilla chips or corn chips.
  • Variation #3:
  • Cube Velveeta into a microwave-safe bowl pour diced tomatoes & green chilies. Microwave on high for 3 - 4 minutes and stir. Repeat until creamy and smooth. Meanwhile, cook pork sausage and drain. Add cream of mushroom soup. Add to Velveeta mixture and serve with tortilla chips or corn chips.

1 (8 ounce) jar salsa (whichever you prefer)
1 lb ground beef

Steps:

  • Brown ground beef and drain grease.
  • Melt cheese in crockpot on low for about 3 hours. (Make sure to shred cheese or it will take a long time to melt.)
  • Add salsa and beef to crockpot.
  • Serve with tortilla chips.

This is a really easy dip that is good for games or parties! One of my good friends dad made this "secret dip" that we always had during movie nights or when we were hanging out w/ a bunch of friends there. One day, my family and I were having appetizers bc we were watching a football game and I decided to try and make a similar dip. It turned out really good - my entire family loved it!

1 lb ground beef
1 large onion, chopped finely
1 teaspoon taco seasoning
8 ounces Velveeta cheese, cubed
1 (16 ounce) jar salsa

Steps:

  • Brown the ground beef and onion in a medium sauce pan until the meat is thoroughly cooked and the onion is translucent. Drain.
  • Cube the Velveeta cheese.
  • Combine the beef and onion with the taco seasoning and add it to the crockpot. Add the cubed Velveeta cheese and mix well.
  • Pour and stir in the jar of salsa.
  • Stirring occasionally, cook on low for 30-60 minutes or until the cheese is melted and the dip is heated through.
  • Serve with tortilla or corn chips. Keep in crockpot on low, so that it stays warm. Enjoy!
  • Note: You could also exchange the salsa for 1 (10 oz) can of Rotel Tomatoes w/ green chilies.
  • -I have also made a variation w/ some chopped black olives in it, but don't usually make it this way bc most of the people in my family don't like them. If you want to add a small can of olives, just add them right after the salsa.
