VEGETARIAN TACO BURGERS
These taco burgers will delight anyone at your table, whether they're vegetarian or not. Serve them in hamburger buns with whatever dressings/toppings you desire!

Steps:
- Combine beans, taco seasoning mix, and pepper in a large bowl with an electric mixer. Add tofu and mash into the bean paste until mostly smooth but with some chunks remaining. Mix in 1/2 of the crushed chips and flour. Divide mixture into 4 patties and press together firmly so they hold their shape. Turn them over in the remaining crushed chips to coat.
- Heat oil in a large skillet over medium-high heat. Add burgers and fry until crispy, 2 to 3 minutes per side.

- In large fry pan, heat oil over medium heat.
- Cook the onion, celery, red or green pepper, jalapeno, and garlic until softened.
- Add garbanzo beans, spices, and a couple tsp of salsa.
- Stir until heated through.
- I like to fit the taco shells in a baking pan, spoon in filling evenly into the shells and bake in a 300°F oven for 5 minutes or so.
- It helps the shells from falling apart when you take the first bite.
- Remove from oven and top with your favorite toppings.

VEGETARIAN BLACK BEAN/HAMBURGER TACOS
This recipe uses Mexican flavored vegetarian Hamburger and it is very good. You may cook your own black beans but to simplify the recipe I used a 16oz can of black beans. Be inventive and add your own choice of vegetables. Your shells should be heated but watch they burn very quickly. I like to put everything on the table and let folks build their own so the shells stay crisp and the ingredients hot. If you are making Tostados add more black beans , burger etc to the shell because 1 Tostado is a whole meal. This recipe makes 6 Tacos or 4 Tostados

Steps:
- Over medium heat fry the garlic & peppers in the olive oil for 3 minutes.
- Add drained beans (reserve juice) and mash them, mixing in the peppers & garlic,.
- Add bean juice as needed for a nice consistency. Mix well & stir frequently.
- Heat the vegetarian hambugerr in a skillet over medium heat, stir frequently.
- When the beans are ready, the burger heated through assemble your tacos.
- Put 3 tbsp of beans in the bottom of the shell, add 3 tbsp burger, then the lettuce, tomatoes, cheese and salsa.
- Top with sour cream and sliced Avocado (if using) or serve your avocado on the side.
- Enjoy.

- Add the carrot and onion to a large, nonstick pan set over medium-high heat. Cook 3-4 minutes, or until soft.
- Add the cooked vegetables, rice, beans and taco seasoning to a food processor or blender. Process 10-15 seconds, or until the mixture comes together in a ball. Divide into 4 patties. (At this point, you can refrigerate the patties, if desired.)
- Cook over medium-high heat for 5 minutes on each side. If desired, top with cheese and cover for the last 2 minutes of cooking.

- Add the lentils, black beans, scallions, and taco seasoning to a food processor. Process until well blended but not all the way. You still want some texture and to be able to see the black beans still.
- Add the burger mix to a bowl and start shaping the burgers into patties. I just used to my hands or you can use jar rings to shape them.
- Bake the burgers in the oven at 350 degrees for 25 to 30 minutes or on a skillet. 2 to 4 minutes per side. Enjoy
