Have the best of both worlds with this easy weeknight dish from Gertrudis Miller of Evansville, Indiana. It tastes really light and refreshing but the ravioli makes it hearty and filling.

1 package (9 ounces) refrigerated cheese ravioli
2 small zucchini, julienned
1 medium onion, chopped
1 can (14-1/2 ounces) diced tomatoes, undrained
2 tablespoons chopped ripe olives
3/4 teaspoon Italian seasoning
3 tablespoons shredded Parmesan cheese

Steps:

  • Cook ravioli according to package directions. Meanwhile, in a large nonstick skillet coated with cooking spray, cook and stir zucchini and onion until tender. Stir in the tomatoes, olives and Italian seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. , Drain ravioli and add to the pan; stir gently to combine. Sprinkle with cheese.

This is a week day dish that tastes like you had the leisure of the weekend. The won-ton wrappers and ready made sauce make this dish go together quickly if your kitchen is organized and you work quickly. I made this dish after being unsatisfied with the texture and flavor of other vegan recipes we tried. Nothing really satisfied the pasta craving like I wanted.

wonton wrapper
1 lb extra firm tofu
1/2 lb fresh spinach, finely chopped
5 ounces mushrooms, finely chopped
1/2 red bell pepper, finely chopped
1 bunch chives, chopped finely (or scallions finely chopped OR purple onion finely chopped and sauted to mellow)
1/2 cup sunflower seeds, milled
4 -6 sun-dried tomatoes, reconstituted finely chopped
3 -4 baby carrots, finely grated
3 tablespoons nutritional yeast flakes or 3 tablespoons vegan parmesan cheese
1 teaspoon crushed rosemary
2 -3 garlic cloves, crushed
1/8-1/4 fluid ounce lemon juice
fresh cracked pepper
sea salt

Steps:

  • Mill sunflower seeds into meal consistency then set aside.
  • Drain sundried tomatoes and finely chop
  • Blend chopped tofu, lemon juice, sea salt, nutritional yeast until ricotta like consistency. It is best not to use a blender for this or you get tofu paste. Add chopped tomatoes, red peppers, and chives. Blend by hand until well mixed. In a small bowl combine tofu mixture with remaining ingredients and mix until thoroughly combined.
  • Place 1 Tbsp of mixture in center of wonton wrapper (or other vegan ravioli dough rolled out). Wet, crimp and seal edges of wrapper SECURELY or the wrapper will open in the pan and contents will spill out. Spray the bottom of a steamer with a bit of oil. Steam a few at a time making sure to not crowd pan or they will stick to each other and be glue-ey. Spritz with oil after cooking and keep warm on a covered dish while the remainder cook. Toss with a bit more olive oil when all are cooked and sprinkle with a little fresh parsley. Serve topped with favorite vegan sauce and vegan parmesan cheese if desired. (NOTE: We have also deep fried these and had them with a vegan cheese sauce out of the "Ultimate Uncheese Cookbook" as well as a plum type sauce and they were good but more like a rangoon than a ravioli).

1/4 cup spinach (fresh or frozen or can)
1 (26 ounce) jar ragu traditional pasta sauce
1 teaspoon oregano
1 teaspoon parsley
1 teaspoon garlic
1 teaspoon basil
1 teaspoon nutritional yeast
1/4 cup textured vegetable protein (TVP)
1/2 cup milk (regular or soy)
2 tablespoons olive oil
1 dash pepper
0.5 (12 ounce) bag of morningstar farms grillers veggie crumbles
2 cups flour
1 teaspoon salt
2 tablespoons butter or 2 tablespoons margarine
1/2 cup boiling water

Steps:

  • To make sauce put all the ingredients listed for sauce in a large skillet over a simmer on the stove.
  • To make ravioli dough mix all ingredients except water in a food processor until it looks fluffed,crumbly and coarse like cornmeal.
  • Now with food processor running add the water slowly until mixed.
  • Take out and form into 2 balls.
  • Roll out on a floured surface to about 1/8 inch thick.
  • I couldn't do that to well so I picked it up and stretched it out a bit that works to!
  • Cut into 3 inch wide strips and then into 3 inch wide squares.
  • Put filling from sauce in the center of the square and then put another ravioli dough over that and pinch ends together tightly to seal.
  • It is ok if a little filling comes out--it will go away during the boiling process.
  • If you want to eat fresh put in boiling water for 3-4 minutes.
  • They fall to bottom of pan and when done will float up and rise to the top.
  • Take out with a slotted spoon.
  • Serve with sauce over it.
  • If you want to freeze these you may freeze them on a cookie sheet until firm and then put in a plastic bag in freezer up to 3 months.
  • Cooking is the same for frozen ravioli in boiling water but will take 9-10 minutes to cook.

Roll it out as thin as you can (2-3 mm), the thinner the dough the tastier the ravioli. You can obviously use a pasta machine to roll out your dough if you have one.
  • Use a 5 cm / 2" cookie cutter or an upside down glass to cut out circles of the dough. Place about a teaspoon of filling (I used ½ tsp pumpkin filling and ½ tsp of my vegan ricotta) on half of the cut out circles. Place another circle on top and drape it around the filling, taking care not to trap any air pockets inside. Seal the two circles of dough with your fingers. If you want them to look like mine, go around each raviolo and crimp the sealed edges with the end of a fork. Put the finished dumplings on a lightly floured surface and cover them with a kitchen towel while making the rest so that they don’t dry out. Continue in the same way until you have used up all the dough and / or all the filling.

Wet your fingers and lightly moisten the top surface of the dough surrounding the filling dollops. Fold the dough about the score to cover the dollops of filling, pressing to seal around them and form pockets in the dough. Use a knife or scissors to cut the dough into squares around the pockets (or circles, or whatever shape you like). Trim any excess dough and save for rolling with another batch of dough. Optionally, use the tines of a fork to create ridges along the outer edges of each ravioli.
