ASPARAGUS AND ASIAGO GRATIN



Asparagus and Asiago Gratin image

This spring asparagus and Asiago gratin couldn't be quicker or easier. Asparagus is roasted in the oven while breadcrumbs, lemon zest, cheese, and parsley are tossed then sprinkled over the asparagus and roasted a bit more. Thirty minutes to spring heaven. Recipe by Domenica Marchetti.

1 pound asparagus, ends trimmed
2 tablespoons extra-virgin olive oil
1 cup shredded Asiago fresco cheese*
3 tablespoons dried bread crumbs
1 tablespoon minced flat-leaf parsley leaves
Finely grated zest of 1 lemon, plus 1 to 2 tablespoons fresh lemon juice
Fine sea salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450°F (232°C).
  • Arrange the asparagus in a single layer in a large baking dish and drizzle with 1 tablespoon of the olive oil. Toss the spears gently to coat with the oil.
  • In a bowl, whisk together the cheese, bread crumbs, parsley, lemon zest, 1/2 teaspoon salt, and a grinding of pepper. Drizzle in the remaining 1 tablespoon oil and stir until well mixed. Sprinkle the bread crumb mixture over the asparagus.
  • Bake, uncovered, until the asparagus is just tender and the topping is melted and golden brown, 10 to 15 minutes, depending on the thickness of your asparagus.
  • Drizzle the asparagus with some lemon juice and serve hot, straight from the baking dish, or arrange on a lovely little gratin dish to take to the table. Originally published March 28, 2012.

2 lbs asparagus spears, woody stems removed
2 tablespoons olive oil
1/4 teaspoon italian seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
2 ounces asiago cheese

Steps:

  • Heat oven to 400.
  • Put asparagus on a baking sheet, and drizzle with oil, Italian seasoning, salt, and pepper. Toss to coat.
  • Spread in one layer.
  • Roast 15 mins., or until tips are lightly browned, and just fork tender.
  • Shave cheese onto asparagus. Toss gently.

2 lbs medium asparagus
2 tablespoons extra virgin olive oil
1/2 teaspoon kosher salt
fresh ground black pepper
1 -2 ounce chunk asiago cheese or 1 -2 ounce parmesan cheese
1 ounce thinly sliced prosciutto

Steps:

  • Preheat the oven to 450 degrees F.
  • Trim the woody ends from the asparagus. Spread the spears in a single layer in a shallow baking pan, drizzle with olive oil, sprinkle with salt, and roll to coat thoroughly.
  • Roast the asparagus until lightly browned and tender, about 10 minutes, giving the pan a good shake about halfway through. Spread the roasted asparagus on a serving platter. Grind a generous amount of pepper over and shave the Asiago into wide flakes on top. Tear the prosciutto into ragged pieces and scatter on top Serve warm or at room temperature.

1/4 cup balsamic vinegar
1/2 cup olive oil
1 tablespoon chopped chives
3/4 teaspoon salt
1 pinch black pepper
20 asparagus spears, washed, stems trimmed
2 ounces asiago cheese, shaved

Steps:

  • In a medium bowl, whisk together the vinegar, olive oil, chives, salt and pepper. Toss the asparagus in the dressing, then cook over a medium-hot grill to desired doneness. Place on four salad plates, drizzle with remaining dressing and garnish with cheese.

1 lb fusilli
1/4 cup olive oil
1 garlic clove, minced
1 (9 ounce) bag fresh spinach, roughly chopped
1 lb asparagus
1 cup about 3 1/2-ounces grated asiago cheese
1/2 cup grated parmesan cheese
1 teaspoon salt
3/4 teaspoon fresh ground black pepper

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta reserving 1/2 cup of the cooking liquid.
  • Microwave the asparagus with a little bit of water for about 2:30 minutes or until bright green and tender. Drain and then cut into bite-sized pieces.
  • Meanwhile, warm olive oil in a large, heavy skillet over medium-high heat. Add the garlic and cook until fragrant, about 2 minutes. Add the spinach and cook until the spinach wilts, about 2 more minutes. Add the asparagus and cooked pasta and toss. Add the cheeses, salt, pepper, and the pasta cooking liquid and stir to combine. Transfer the pasta to a serving plate and serve.

2 lbs asparagus
olive oil
1/2 teaspoon kosher salt
black pepper, freshly grounded
1 -2 ounce asiago cheese, grated (or Parmesan cheese)
1 ounce prosciutto, thinly sliced

Steps:

  • Preheat oven to 450. Trim woody ends from asparagus. Spread the spears in a single layer in a shallow baking pan that has been sprayed with Pam. Sprinkle with salt.
  • Drizzle with olive oil; shake pan back and forth to coat asparagus.
  • Roast asparagus until lighly browned and tender, about 10 minutes, giving the pan a good shake about halfway through.
  • Spread the roasted asparagus on a serving platter. Grind with a generous amount of pepper over and shave the Asiago into wide flakes on top.
  • Tear the prosciutto into ragged pieces and scatter on top.
  • Serve warm or at room temperature.

1 lb fresh asparagus, cut into 1-inch pieces
16 ounces linguine, uncooked, broken in half
1 tablespoon butter or 1 tablespoon margarine
1 cup asiago cheese, shredded or 1 cup parmesan cheese, grated
1/2 cup sour cream
1/2 cup pitted sliced ripe olives
salt and black pepper, to taste

Steps:

  • Place 3 qts. of water in Dutch oven. Cover, and bring to a boil over high heat.
  • Drop asparagus into boiling water. Boil 1-2 mins., or until crisp-tender. Remove with slotted spoon. Rinse under cold water. Drain.
  • Add linguine to boiling water. Cook according to package directions, until al dente. Drain.
  • Combine linguine and butter in lg. bowl. Toss gently until butter is melted.
  • Add asparagus, cheese, sour cream, and olives. Toss gently until linguine is coated, and cheese is melted.
  • Season to taste with salt and pepper.
  • Serve immediately.
