VEGETARIAN POZOLE VERDE (HOMINY SOUP)



Vegetarian Pozole Verde (Hominy Soup) image

This recipe is my vegetarian adaptation of Pozole Verde: Hominy and Meat Soup with Green Herbs from 'A Cook's Tour of Mexico' by Nancy Zaslavsky. It's a great way to use up all the tomatillos and greens that we tend to get in our CSA boxes in the Pacific Northwest. This soup is great topped with a quick red onion pickle and crumbled cotija cheese.

½ pound dried pinto beans
½ cup vegetable oil, divided
8 ounces raw shelled pumpkin seeds
1 pound tomatillos - husked, cored, chopped
10 serrano peppers, chopped
1 bunch arugula leaves, chopped
10 leaves fresh spinach, chopped
10 leaves Boston lettuce, chopped
¼ cup chopped fresh parsley
¼ cup chopped fresh cilantro leaves
2 quarts vegetable stock, or more as needed
2 (29 ounce) cans white hominy, drained and rinsed
salt and ground black pepper to taste

Steps:

  • Place pinto beans in a large stock pot with water to cover; let soak, 8 hours to overnight. Drain.
  • Cover the beans with about 3 inches water and cook over medium-low heat until tender, 35 to 40 minutes. Drain.
  • Heat 1/4 cup vegetable oil in a skillet over medium-high heat. Add pumpkin seeds; cook and stir until light brown and popping, about 6 minutes. Let cool slightly, about 5 minutes.
  • Pour pumpkin seeds and oil into a blender or food processor. Blend until smooth. Add 1/2 the tomatillos, serrano peppers, arugula, spinach, lettuce, parsley, and cilantro into the blender. Puree until smooth. Pour into a large bowl. Repeat with remaining tomatillos, serrano peppers, arugula, spinach, lettuce, parsley, and cilantro.
  • Heat remaining 1/4 cup oil in a deep pot. Add the tomatillo sauce carefully. Simmer, stirring with a wooden spoon, until thickened, about 30 minutes.
  • Pour pinto beans, vegetable stock, and hominy into the pot. Bring to a boil. Reduce heat to low. Let simmer, uncovered, until flavors are thoroughly blended, about 15 minutes. Season with salt and pepper.

This is a hearty main course soup. It's easy to stretch with more broth and/or veggies. It's so simple, quick and flavorful. Even my three-year-old grandson likes it!

1 cup textured vegetable protein, chunks
3 cups water, boiling
2 onions, chopped
4 fresh garlic cloves, minced
1 tablespoon canola oil or 1 tablespoon olive oil
1 (4 ounce) can diced green chilies
2 (15 ounce) cans white hominy or 2 (15 ounce) cans yellow hominy
4 diced tomatoes (fresh or canned)
vegetarian chicken broth (I use Frontier brand powdered broth)
1 tablespoon chili powder (I use Frontier brand Fiesta Blend)
3 -5 stalks fresh cilantro, chopped
6 cups water (additional)
lime juice

Steps:

  • Add several tablespoons of powdered broth (to your taste) to boiling water.
  • Stir until dissolved.
  • Add Textured vegetable protein chunks.
  • Cover and remove from heat.
  • Let the chunks absorb the liquid while you prepare the rest of the soup.
  • In a large soup pot, saute onion until soft.
  • Add garlic and continue sauteing until fragrance is released.
  • Add chili powder to sauteed vegetables and mix well.
  • Add 6 cups of water and bring to a boil.
  • Stir in chilies, hominy and tomatoes.
  • Add Textured vegetable protein chunks and additional broth powder to taste.
  • Simmer for 10-20 minutes to blend flavors.
  • Add fresh cilantro to bowl (Some folks don't care for the taste).
  • Add a squirt of lime juice to taste.
  • Serve with corn chips or tortilla chips.

1 cup celery, chopped
1/2 cup bell pepper, chopped
4 garlic cloves
1 (6 ounce) can tomato paste
1 tablespoon molasses
3/4 cup ketchup
water, to thin the sauce
2 cups textured soy protein granules
vegetable bouillon granules, enough to cover and cook textured soy protein
hot sauce

Steps:

  • Makesauce by sauteing onions, celery, bell pepper, and garlic til soft in some margarine.
  • Add ketchup, tomoto paste, molasses, and water to thin the sauce.
  • cook for a few minutes til flavors are blended.
  • add some hot sauce if you like. set sauce aside.
  • Cook textured soy protein in the vegetable bullion for a few minutes, then drain.
  • Fry textured soy protein in a little oil for ten minutes, add sauce, cook til bubbly, and its ready to serve.

8 cups low sodium vegetable broth
2 poblano peppers, seeded
2 jalapeno peppers, seeded
1 lb tomatillo, husks removed
salt, to taste
pepper, to taste
1 small bunch cilantro
4 garlic cloves
1 tablespoon dried oregano
60 ounces hominy, drained
2 -3 zucchini, chopped
shredded cabbage
radish (sliced or chopped)
queso fresco
avocado
chopped onion
chopped jalapeno
tortilla chips

Steps:

  • Put 1 cup of vegetable broth and all ingredients except for the hominy and the zucchini into a blender and blend until smooth. Taste for seasoning and spiciness - it should be a bit spicier than you want. Add additional poblanos or jalapenos, if necessary.
  • Add to the slow cooker with the remaining broth and the hominy.
  • Cook on low for 4 hours.
  • Add the zucchini and cook for 30 minutes longer.
  • Serve in bowls with your favorite garnishes.

2 medium onions, diced
3 garlic cloves, diced
2 (28 ounce) cans tomatoes
1 (12 ounce) tomato paste
4 tablespoons fresh basil
2 tablespoons fresh oregano
2 tablespoons fresh parsley
1 teaspoon paprika
1 teaspoon thyme
1 teaspoon red pepper flakes
1 teaspoon salt
1 teaspoon sugar
1 bay leaf
1 cup textured vegetable protein

Steps:

  • In a large sauce pan or casserole dish saute oil, onion, and garlic until it it begins to brown a little.
  • Put canned tomatoes, tomato paste, basil, oregano, parsley, paprika, thyme, red pepper flakes, salt, and sugar into a blender or food processor and blend until smooth. When adding canned tomatoes use a little water to clean the cans and add to blender mixture.
  • Add tomato mixture to onions and garlic.
  • Add bay leaf.
  • Boil textured vegetable protein in a separate pot until soft (about 5 minutes). Strain and add to sauce.
  • Simmer Sauce for about 2 hours. I have done both shorter, but I would recommend 2 hours.
  • Serve with your favorite pasta or use in lasagna.

2 dried New Mexico chiles, stemmed and seeded
2 dried ancho peppers, stemmed and seeded
1 cup textured vegetable protein (textured vegetable protein 240 cal or dry cup)
1 1/2 cups boiling water
4 1/2 cups onions, chopped (about 2 large onions, yellow or white)
4 minced garlic cloves
1 1/2 cups green bell peppers, chopped (about 1 whole pepper, red is good too)
1 (29 ounce) can hominy, drained & rinsed
1 (14 1/2 ounce) can diced tomatoes
4 cups vegetable broth (or vegetarian "chicken" broth)
1 tablespoon olive oil
2 teaspoons dried oregano
1/4 teaspoon ground cumin
1/8 teaspoon ground coriander
1 teaspoon salt
1/3 cup orange juice
chopped green onion
chopped cilantro
chopped avocado
shredded iceberg lettuce
hot sauce

Steps:

  • Put chile peppers in a small bowl; cover with boiling water, and let stand while you chop other vegetables.
  • In small saucepan, bring TVP and 1 1/2 cups of broth to a boil; turn off heat and let TVP soak up liquid while prepping other veggies.
  • Saute onions 5-7 minutes, then add garlic and bell pepper. Continue to saute until onions are soft (another 5-7 minutes).
  • While onions saute, transfer chiles and soaking liquid to a blender; blend until smooth.
  • When onions are soft, add hominy, tomatoes, blended chiles, 2 1/2 cups broth, TVP, oregano, cumin, coriander, and salt.
  • Simmer over medium heat 30 minutes to let flavors blend. (Can simmer longer if needed. Add extra broth or water if you like a thinner stew.).
  • Stir in OJ and serve garnished with chopped green onions, radishes, cilantro, avocado, shredded lettuce, and/or hot sauce.
