For an elegant main course, serve Ina Garten's Salmon Cakes, made with a mix of fresh veggies, capers and Old Bay, from Barefoot Contessa on Food Network.

Provided by Ina Garten

Categories     appetizer

Time 2h20m

Yield 5 servings

Number Of Ingredients 17

1/2 pound fresh salmon
Good olive oil
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
3/4 cup small-diced red onion (1 small onion)
1 1/2 cups small-diced celery (4 stalks)
1/2 cup small-diced red bell pepper (1 small pepper)
1/2 cup small-diced yellow bell pepper (1 small pepper)
1/4 cup minced fresh flat-leaf parsley
1 tablespoon capers, drained
1/4 teaspoon hot sauce (recommended: Tabasco)
1/2 teaspoon Worcestershire sauce
1 1/2 teaspoons crab boil seasoning (recommended: Old Bay)
3 slices stale bread, crusts removed
1/2 cup good mayonnaise
2 teaspoons Dijon mustard
2 extra-large eggs, lightly beaten

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the salmon on a sheet pan, skin side down. Brush with olive oil and sprinkle with salt and pepper. Roast for 15 to 20 minutes, until just cooked. Remove from the oven and cover tightly with aluminum foil. Allow to rest for 10 minutes and refrigerate until cold.
  • Meanwhile, place 2 tablespoons of the butter, 2 tablespoons olive oil, the onion, celery, red and yellow bell peppers, parsley, capers, hot sauce, Worcestershire sauce, crab boil seasoning, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes. Cool to room temperature.
  • Break the bread slices in pieces and process the bread in a food processor fitted with a steel blade. You should have about 1 cup of bread crumbs. Place the bread crumbs on a sheet pan and toast in the oven for 5 minutes until lightly browned, tossing occasionally.
  • Flake the chilled salmon into a large bowl. Add the bread crumbs, mayonnaise, mustard, and eggs. Add the vegetable mixture and mix well. Cover and chill in the refrigerator for 30 minutes. Shape into 10 (2 1/2 to 3-ounce) cakes.
  • Heat the remaining 2 tablespoons butter and 2 tablespoons olive oil in a large saute pan over medium heat. In batches, add the salmon cakes and fry for 3 to 4 minutes on each side, until browned. Drain on paper towels; keep them warm in a preheated 250 degree F oven and serve hot.

TUNA OR SALMON CAKES

Tuna or Salmon Cakes image

An easy to make Kraft tuna cake recipe. We served these tasty patties on toasted kaiser rolls with sliced tomatoes and lettuce. As suggested by reviewer, chill in refrigerator before frying (optional). You could also dip the patties in breadcrumbs just before frying too. Also good with a side of creamed corn or creamed peas and french fries. You can make these fish cakes with red sockeye salmon too.

SALMON CAKES

Salmon Cakes image

Okay, so I don't mind fish but I am a fish snob. I don't mind fish fillets, but you try to feed me a fish "loaf" and I will turn into Dracula at a garlic farm. Don't ask me why I am weird in this way... because the reality is that cakes are "tiny loaves" but don't rain on my parade. :) This recipe is also one that is still "in...

SIMPLE SALMON PATTIES RECIPE (HOW TO MAKE SALMON PATTIES)

Simple Salmon Patties Recipe (How to Make Salmon Patties) image

Wondering how to make salmon patties? These salmon cakes are so tender and flakey on the inside, but crispy and perfect on the outside. Use up that leftover salmon with this healthy dinner idea!

Provided by Emily Richter

Categories     Lunch and Dinner

Time 25m

Number Of Ingredients 13

1 lb. cooked salmon (chilled and flaked (~4 cups shredded salmon)*)
1 cup panko breadcrumbs
1 red bell pepper (finely diced)
1/2 small white onion (minced)
2 tablespoons chopped fresh parsley
1 tablespoon chili powder
1 tablespoon garlic powder
1 teaspoon salt
1/8 teaspoon smoked paprika
1 large egg
1 tablespoon mayonaisse
1 teaspoon tabasco sauce
3 tablespoons olive oil (divided)

Steps:

  • First, remove the skin from your salmon and discard. Then, place salmon into a large bowl and use a spoon to break the salmon up into small shredded chunks.
  • Next, add the breadcrumbs, bell pepper, white onion, parsley, chili powder, garlic powder, salt, paprika, egg, mayo, tabasco, and 1 tablespoon of olive oil to the bowl.
  • Using a spoon or hands, mix all of the ingredients together until the ingredients stick together and form a ball. Form the salmon patties by using a 1/3 cup scoop and make 10-12 small balls out of the salmon mixture. After all the balls are formed, carefully make patties out of each ball by gently patting them down between your hands. Set them on a plate and repeat until all the patties are made.
  • Next, heat a large skillet over medium/high heat. Add one tablespoon of olive oil to the pan. When the olive oil is fragrant, add 3-4 patties to the pan (if there is room) and cook them for 2-3 minutes on each side or until the salmon patties brown. Remove from heat. Add another tablespoon of olive oil and repeat until all the patties are cooked.
  • Enjoy them alone, on top of a salad, or get creative!

SUSAN'S SALMON PATTIES

Susan's Salmon Patties image

Growing up, I wouldn't touch salmon. But now it's one of my favorite fish. This is a great switch from the grilled salmon that is so popular today. And the bake option lets you get a healthier result.

Provided by Susan Feliciano

Categories     Fish

Time 40m

Number Of Ingredients 12

2 large cans salmon, drained and mashed
*OR* about 3 cups cooked mashed salmon
1/2 c mayonnaise, any type, even fat free works
1 egg
1/2 c chopped celery and onion combined
1 tsp garlic powder
1/4 tsp salt and pepper (or to taste)
1/2 tsp paprika
1 to 1 1/2 c dry cornbread stuffing (like pepperidge farm)
buttermilk if needed
1 c seasoned flour, breadcrumbs, or cornmeal
oil for frying or greasing the baking pan

Steps:

  • 1. Mash salmon well with a fork. You can remove bones first, but I leave them in. Stir in all ingredients except the stuffing, buttermilk, and seasoned flour. Mix well.
  • 2. Fold in one cup of the stuffing and blend well. If it looks too wet, add more stuffing. If it looks too dry, add a little buttermilk until you get a semi-wet paste that can be shaped into patties. Make patties or flattened balls about 2-1/2" in diameter.
  • 3. There are two ways you can cook these, either frying or baking.
  • 4. 1) to fry: Roll the patties lightly in the flour, breadcrumbs, or cornmeal. Heat oil over medium high heat in a heavy skillet. Fry quickly on each side until nice and brown. You may have to adjust heat down to prevent burning. Drain on paper towels and keep warm in oven.
  • 5. 2) to bake: Roll lightly in flour, breadcrumbs, or cornmeal. Grease a baking sheet well with oil. Place patties on baking sheet about 1 inch apart, and bake at 425 degrees about 15-20 minutes, turning once, until nicely browned.

HOW TO COOK SALMON ON THE STOVE - GREATIST

From greatist.com
Author Locke Hughes
  • Heat oil and butter in skillet. Add about 1 teaspoon olive oil to a heavy skillet, then swirl the pan so there’s a thin coating of oil over the entire surface.
  • Season. Season fillet with salt and pepper (and any other spices you love. Find some tasty seasoning combos here. When in doubt, a little garlic powder works on pretty much anything.)
  • Let cook, then flip. Place fillet in skillet, skin side down. (If you’re using a skinless fillet, it doesn’t matter.) Cook fillet for 3 to 5 minutes.
  • Continue to cook. Cook for 3 to 5 more minutes on the second side. Again, timing depends on how thick the fillet is and how well-done you like your fish.
  • Serve. Besides topping it with lemon, we love to plate salmon with a healthy grain like quinoa or brown rice, plus steamed broccoli, sautéed spinach, or another veggie side.
