1 carton (8 ounces) whipped cream cheese
3/4 cup shredded sharp cheddar cheese
1 teaspoon curry powder
1 jar (9 ounces) mango chutney
1/2 cup sweetened shredded coconut
1/3 cup chopped pecans, toasted
2 green onions, chopped
1/4 cup dried currants
Assorted crackers

Steps:

  • Place the cream cheese, cheddar cheese and curry powder in a small food processor; cover and pulse until blended. , Spread onto a 10-in. round serving platter. Spoon chutney over top; sprinkle with coconut, pecans, green onions and dried currants. Chill until serving. Serve with crackers.

1 (7-oz.) Gouda cheese with red wax coating
1 (3-oz.) pkg. cream cheese, softened
1 tablespoon honey
2 teaspoons lemon juice
1/4 teaspoon curry powder

Steps:

  • With sharp knife, remove about 3-inch diameter slice from top of Gouda cheese. Carefully hollow out, leaving wax coating intact to form shell.
  • In food processor bowl with metal blade, combine Gouda cheese, cream cheese, honey, lemon juice and curry powder; process until smooth and well blended. Spoon cheese mixture into shell, mounding in center. Cover; refrigerate at least 3 hours or overnight to blend flavors.
  • For easier spreading, let cheese stand at room temperature for 1 hour before serving. To serve, place cheese on serving tray; surround with wedges of fresh peaches, pears, apple or pineapple, grapes and/or assorted crackers. Spread cheese on fruit or crackers.

1/4 cup(s) finely chopped green onions, reserve a few for garnish

1 - pineapple. optional

Steps:

  • Beat cream cheese with all ingredients except almonds and fresh pineapple. Put in a serving dish or halved and scooped out pineapple. Sprinkle with almonds and green onion slices. Serve with Club Crackers.

3/4 teaspoon curry powder

This is really delicious, especially if you are low-carbing it. It's a great alternative to "plain" tuna salad. Can be used as a dip for celery sticks, spread on celery stalks, or stuffed in cherry tomatoes. Prep time does not include chill time, since you can leave it in the fridge for longer than the one hour mentioned in the recipe.

1 (6 1/2 ounce) can tuna
3 -4 tablespoons mayonnaise
1/2-1 tablespoon lemon juice
3/4 teaspoon curry powder
1 dash salt
2 green onions, finely sliced

Steps:

  • Soften the cream cheese for about 1 hour.
  • (I usually just give it a whirl in the microwave for about 20 seconds) Drain the tuna, mash with a fork.
  • Combine the cream cheese, tuna and mayo.
  • Add the lemon juice, curry and salt.
  • Mix to blend well.
  • Add the onions and stir to blend.
  • Chill for 1 hour for the flavors to blend.

Use this spread on your bagels, toast, or whatever else you have that requires cream cheese! Stuff your chicken breasts with this! Use this spread for cream cheese roll ups, chicken/crescent packets... use your imagination and use this spread! :) Obviously double or halve this recipe for the amount of cream cheese you need. Store it in a Tupperware or bowl with a lid in the fridge for later use. ** Note: I recently added a tablespoon or two of chopped fresh mint leaves to the mix and it was really good! I'm sure you could experiment with other herbs as well, but this mix is divine.

1/3 cup mango chutney

apple, wedges

Steps:

  • In food processor blend together cream cheese, imperial cheese, and curry powder. Form in a ball on your serving plate and put in fridge for at least an hour, the longer you refrigerate, the more curry flavor you get!
