Mango Summer Rolls with Ginger-Peanut Sauce image

Celebrate mango season with these fresh summer rolls! While these will keep in the fridge, they taste best when enjoyed right after making. To transition these rolls to a heartier meal, add in precooked shrimp, chicken or baked tofu. Enjoy any leftover filling and sauce like a salad.

4 ounces vermicelli or thin rice noodles
8 to 10 spring roll rice papers
1/2 cup julienned bell pepper
1/2 cup julienned cucumber
1/2 cup julienned mango
1/4 cup fresh basil leaves
1/4 cup fresh cilantro leaves
1/3 cup peanut butter
2 tablespoons fresh lime juice
2 tablespoons maple syrup
1 tablespoon low-sodium soy sauce
1 teaspoon freshly grated ginger
1/4 teaspoon crushed red pepper flakes

Steps:

  • For the spring rolls: Bring a large pot of water to a boil. Add the vermicelli or rice noodles and cook according to the package directions, 2 to 3 minutes. Drain, rinse with cold water and set aside.
  • For the ginger-peanut sauce: Combine the peanut butter, lime juice, maple syrup, soy sauce, ginger and red pepper flakes in a medium bowl and whisk together. Slowly add in hot water, 1 tablespoon at a time, until the desired consistency is achieved. (It should be thick but pourable.)
  • To assemble the spring rolls: Pour very hot water into a shallow dish or skillet and immerse a sheet of rice paper to soften for about 10 to 15 seconds. Transfer the rice paper to a cutting board and gently spread out the edges, taking care not to tear them. On the bottom third of the wrapper, place a small handful of cooked noodles and a layer of bell pepper, cucumber, mango and a few leaves of basil and cilantro. Gently fold over once, then tuck in the edges and roll until the seam is sealed, like wrapping a burrito. (It's OK if the first one fails; it may take a few attempts to get used to rolling them up.)
  • Place seam-side down on a serving platter and cover with a damp towel to keep fresh. Repeat with the remaining wrappers and filling. Serve with ginger-peanut sauce.

10 each spring roll wrapper, wet under hot water for 5-10 seconds or with hot soaked wet towel
20 thin fresh ripe mango slices, cut from peeled and pitted mango cheeks/planks, sliced vertically
10 ounces cooked brown rice, cold
10 leaves, fresh basil
10 sprigs, fresh cilantro
10 leaves, fresh mint
10 each, 3 to 4-inch long green onion pieces, green part only
20 each thin julienne 2-inch long red pepper
3 tbsp sweet chile sauce
1/2 tsp sriracha
1/2 tsp fish sauce
2 tbsp fresh mango, pureed
2 tsp Fresh lime juice
1 tsp fine minced carrot
1 medium clove, fine minced garlic
1/2 cup water
salt to taste

Steps:

  • Prep pre-shift and hold approximately 1 shift, well wrapped and refrigerated.
  • On a cutting board with 2-4 wet spring roll wrappers at a time lay down 2 slices of mango on each roll, opposite of each other.
  • Add 2 leaves each of basil and cilantro, then 3 leaves each of mint per roll.
  • Add 1 ounce brown rice, then 3-4 pieces of red pepper julienne per roll.
  • Fold the sides of the wrapper over so they each cover half of the filling, then roll the filling into a "cigar."

Tropical Mango Spring Rolls with Avocado-Cilantro Dipping Sauce image

These bold, fresh, mango spring rolls make a perfect spring/summer appetizer. They're gluten free and vegan for all to enjoy. Spring rolls might seem tricky if you haven't made them before, but you'll get the hang of them quickly! Feel free to make these spring rolls a few hours ahead and chill them until you're ready to serve. Recipe yields 6 to 7 rolls, which I served halved.

3 cups lightly packed arugula, roughly chopped
2 ripe mangos, sliced into long, thin strips (see photos)
1 large red bell pepper, seeded, membranes removed and sliced into long, thin strips
2 jalapeños, seeded, membranes removed and sliced into long, thin strips
4 green onions, green and white parts, chopped (about 1/3 cup)
6 to 7 round rice papers, also known as spring roll wrappers or spring roll skins
2 ripe avocados, diced
1/3 cup lime juice (about 2 large limes, juiced)
1/3 cup water
1/2 cup lightly packed fresh cilantro
1/2 teaspoon salt

Steps:

  • Fill a shallow pan larger than your spring roll wrappers (a pie plate works great) with warm water. Fold a lint-free tea towel in half and place it next to the dish. Place your prepared spring roll fillings within reach.
  • Place one rice paper in the water and let it rest for about twenty seconds. You'll learn to go by feel here-wait until the sheet is pliable but not super floppy. Carefully lay it flat on the towel.
  • Leaving about an inch of open rice paper around the edge, cover the lower third of the paper with about 1/2 cup chopped arugula. Top with four slices of mango down the length of the greens, followed by several slices of bell pepper and jalapeño, and finally, a sprinkle of green onions.
  • Fold over one long side to enclose the filling, then fold over the short sides like you would a burrito, and lastly, roll it up, stretching the remaining long side around the the roll to seal it. Repeat with remaining ingredients.
  • To make your avocado sauce, combine the avocado, lime juice, water, cilantro and salt in a small food processor or blender. Purée until smooth and transfer to a small serving bowl. If you won't be serving the rolls immediately, press plastic wrap against the surface of the dip to prevent oxidation.
  • Slice the rolls in half on the diagonal with a sharp chef's knife or serve whole, with avocado dipping sauce on the side.

1 ripe mango, diced
1 (1 inch) piece fresh ginger, grated
2 tablespoons sweet Thai chili sauce
2 tablespoons rice vinegar
1 lime, juiced
½ cup fresh Thai basil and/or cilantro, chopped
1 large avocado - peeled, pitted, and thinly sliced
2 cups fresh vegetables such as cucumbers, lettuce, microgreens, carrots and bell peppers, thinly sliced, diced or cut into matchsticks
Salt and pepper to taste
½ cup cilantro leaves
½ cup fresh mint leaves
8 rice paper wrappers
1 teaspoon Chopped peanuts, for topping
Reynolds Wrap® Aluminum Foil

Steps:

  • In a blender, combine all the dipping sauce ingredients except the basil and cilantro. Blend until smooth, add the basil and cilantro and pulse until chopped. Pour into a bowl, cover and place in the fridge until serving.
  • Squeeze a little lime juice over the sliced avocado. Create an assembly line of vegetables and herbs, so that they are all ready to go.
  • Fill a shallow dish with warm water. Add a rice paper sheet, one at a time for 5 to 10 seconds. Remove and place on a flat surface. Toward one end of the rice wrapper, begin layering with 1 to 2 slices of avocado, small handfuls of fresh cilantro and mint, and a handful of veggies. Sprinkle the veggies with salt and pepper. Fold both ends to the center and roll the sheet as tightly as you can without ripping. Place each prepared spring roll on a serving platter and cover with Reynolds Wrap® Aluminum Foil to keep the spring rolls from drying out.
  • Continue with remaining ingredients, adding them to the platter as you work. Keep the spring rolls covered with foil at all times.
  • Serve the spring rolls with the mango dipping sauce and chopped peanuts (if desired).

This is a Nigel Slater recipe from The Observer Food Monthly magazine. I haven't made it myself yet, but posted it here for future use and safekeeping, as I thought it sounded great. The sauce is a vegetarian version of the Vietnamese classic. You can also add a little extra crunch by adding some shredded carrot. If you make it let me know what you think please! cooking time includes infusion time for the sauce. (The coriander in the recipe refers to cilantro.)

40 g rice noodles
5 spring onions, mainly the white parts, chopped finely
2 carrots, peeled and cut to matchstick size
1 1/4 cups bean sprouts (the recipe calls for 2 large handfuls)
2 garlic cloves, peeled and cut into fine slivers
18 mint leaves, torn into small pieces
6 large egg roll wraps
oil, for frying
2 small hot red chili peppers, chopped very finely
1 tablespoon dark soy sauce
6 tablespoons water
3 tablespoons rice vinegar
4 tablespoons caster sugar
1 large lime, juice of
1 bunch coriander leaves, chopped

Steps:

  • For the Spring Rolls.
  • In a bowl with warm water soak the rice noodles until soft, approximately five minutes.
  • Drain and mix with the carrot, spring onion, bean shoots.
  • garlic and mint.
  • On a flat surface lay out a spring roll wrapper and place 1/6 of the mix in the middle.
  • Roll the whole thing up, so that it looks like a fat sausage.
  • Using a little water, moisten the edges to seal, also folding over the ends.
  • Repeat.
  • Heat oil in a dep frying pan (make sure the is quite a bit of room between the oil and the top of the pan as it will bubble up when you put the spring rolls in).
  • Fry the spring rolls for 2-3 minutes, turning once, until crisp and golden brown.
  • Drain of excess fat on kitchen paper.
  • Serve hot with dipping sauce.
  • For the Dipping Sauce.
  • Put the Soy sauce, water, vinegar and sugar in a small pan and heat until it nearly comes to a boil.
  • The sugar should dissolve if you stir it well before the sauce boils.
  • Remove from heat and leave to cool.
  • Once cool add all the other ingredients and leave for at least an hour to infuse before serving.

  • Whisk all ingredients together in a small bowl until combined. If you would like a thinner sauce, whisk in more water.
  • Cook thin rice vermicelli noodles according to package directions. Once they are al dente, transfer the noodles to a strainer and rinse with cold water until the noodles are completely chilled. Toss the thoroughly with a drizzle of oil (I like using sesame oil) to prevent the noodles from sticking together. Set aside.
  • Fill a large shallow pan with warm water (a sauté pan or pie dish works great). Lay a spring roll wrapper in the hot water and let it rest there for about 20-30 seconds until soft, but not mushy. Transfer the spring roll wrapper to plate (or a clean towel spread out on a flat surface, which will help the wrapper not to stick).
  • Arrange your fillings in the center of the wrapper in a vertical line. Fold in the top and bottom sides of the wrapper. Then fold over the left side of the wrapper, tightly tucking in the fillings, and roll the wrapper to the right until it is sealed.
