1 x 400 g tin of chickpeas
1 x 340 g tin of sweetcorn
½ a bunch of fresh coriander, (15g)
½ teaspoon paprika
½ teaspoon ground coriander
½ teaspoon ground cumin
1 lemon
3 heaped tablespoons plain flour, plus extra for dusting
rapeseed oil
1 small round lettuce
2 large ripe tomatoes
tomato ketchup
4 wholemeal burger buns

Steps:

  • Drain the chickpeas and sweetcorn, then tip into a food processor. Pick the coriander leaves, adding half the leaves and all the stalks to the processor.
  • Add the spices, flour and a pinch of sea salt, finely grate in the lemon zest, then pulse until combined, but not smooth - you want to retain a bit of texture.
  • On a flour-dusted surface, divide and shape the mixture into 4 equal-sized patties, roughly 2cm thick. Place in the fridge for 30 minutes to firm up.
  • Heat a splash of oil in a large frying pan over a medium heat, add the patties and cook for 10 minutes, or until golden and cooked through, turning halfway.
  • Meanwhile, click off, wash and spin-dry four nice lettuce leaves, then finely slice the tomatoes horizontally.
  • Squeeze a large dollop of ketchup onto the base of each bun (toast them if you like), then top with the burgers. Layer over a couple of slices of tomato, a lettuce leaf, a few coriander leaves and finally the burger tops. Delicious served with a fresh green salad.

1 (15 ounce) can chickpeas, rinsed and drained
1 (4 ounce) can diced green chilies
2/3 cup packed fresh flat leaf parsley
2/3 cup breadcrumbs
salt and pepper
1 large egg, lightly beaten
2 tablespoons vegetable oil
4 slices cheddar cheese
4 hamburger buns
Dijon mustard, for serving (optional)
ketchup, for serving (optional)
mayonnaise, for serving (optional)

Steps:

  • In a food processor, pulse the chickpeas, green chiles, and parsley until finely chopped.
  • Transfer the mixture to a medium bowl and stir in the bread crumbs and salt and pepper to taste.
  • Stir in the egg and form the mixture into 4 patties, each about 2/3" thick.
  • In a large skillet or grill pan, heat the oil over medium-low heat.
  • Cook the burgers for 4 minutes, then flip and cook for 3 minutes more.
  • Top the patties with the cheese slices for the last minute of cooking.
  • Serve the cheeseburgers on the hamburger buns with your choice of optional toppings.

1 carrot (medium size grated)
1 garlic clove
1 (19 ounce) can chickpeas
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
salt & pepper
1 large egg
2 tablespoons plain flour
oil (for frying)
2 slices whole wheat bread (cut in round shapes)
1 tomatoes
1 red onion

Steps:

  • Peel the carrots, grate them coarsely and set them aside.
  • Peel and roughly chop the garlic.
  • Drain and rinse the chickpeas and put them into a food processor with the garlic, ground spices, salt and pepper. Slightly process to obtain a rough paste then add the carrot, egg, and flour and process briefly until evenly mixed but slightly rugged.
  • Heat the oil in a frying pan and divide the mixture into 8. Fry in batches for 2-3 minutes on each side, until golden, then drain on kitchen paper.
  • Keep opened chickpea can to cut round shapes in bread slices. Toast each slice in toaster or in frying pan.
  • Serve with slices of tomato and red onions and mayonnaise.

One 15-ounce can chickpeas, drained and rinsed
1 small carrot, roughly chopped
1 clove garlic
1 small onion, roughly chopped
2 large eggs
1 teaspoon kosher salt
1/3 cup breadcrumbs (I used whole-grain)
2 teaspoons toasted sesame seeds
2 tablespoons vegetable or canola oil
9 hamburger buns, split
Sliced avocado, for serving
Arugula or Bibb lettuce, for serving
Aioli, ketchup and/or mustard, for serving

Steps:

  • Place the chickpeas, carrot, garlic, onion, eggs and salt in a food processor and pulse until combined. Transfer to a medium bowl, add the breadcrumbs and sesame seeds and stir or gently knead to combine. The mixture will be moist.
  • Scoop about 1/4 cup of the mixture with an ice cream scoop then form into a patty with your hands. You should have 9 patties.
  • Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Working in batches, cook the patties in a single layer until golden brown on the bottom, about 5 minutes. Flip the patties, reduce the heat to low and continue to cook until golden brown and heated through, about 5 minutes. Add the remaining 1 tablespoon oil and repeat with the remaining patties.
  • Serve on the buns with your desired toppings and condiments.

1 medium onion, chopped
4 garlic cloves, chopped
1 cup shredded carrots
1 cup cauliflower florets
1/2 tsp salt
1 1/2 cups chickpeas (from a can)
1/2 cup quinoa, cooked.
1/2 cup One Degree Organic sprouted rolled oats
1/2 cup parsley
1 tsp cumin powder
2 tsp chilli powder
1 tsp paprika
1 egg, or 3 tbsp of auqafaba (chickpea liquid from the can)
1-2 tbsp oil for frying

Steps:

  • Heat the avocado oil in a pan on medium-high heat. Add the onion and cook for 2 minutes, then add the garlic, carrots, and cauliflower and let cook for 6-8 minutes.
  • Add the veggies to a food processor with the rest of the burger ingredients and pulse until combined, but still has some texture.
  • Use your hands to shape into 6-8 patties then place in the fridge for 30 minutes to set.
  • Heat some oil a large pan on medium-high heat then place your burgers in the pan. Cook on each side for 3-4 minutes.
  • Serve in a bun with your favourite toppings.

.50 cup jarred harissa (such as Mina), plus more for serving (optional)
1 cup loosely packed fresh cilantro leaves and/or flat-leaf parsley leaves, finely chopped
.50 cup panko
1 tablespoon fresh lemon juice (from 1 lemon)
1.50 teaspoons kosher salt
Freshly ground black pepper
2 tablespoons olive oil
2 avocados
4 brioche buns, split and toasted
Sliced tomatoes, sliced red onion, and red leaf lettuce, for topping

Steps:

  • Place chickpeas and harissa in a large bowl. Mash with a masher or fork until a coarse paste forms; leave some slightly larger pieces of chickpeas. (Alternatively, place chickpeas and harissa in a food processor and pulse until a coarse paste forms, 8 to 10 pulses.) Add herbs, panko, lemon juice, salt, and several grinds of pepper. Stir and lightly mash mixture until well combined. Let stand at room temperature for 15 minutes or refrigerate, covered, up to overnight.
  • Form mixture into 4 (¾-inch thick) patties. Heat oil in a large nonstick skillet over medium. Add patties and cook, flipping once, until golden brown, about 3 minutes per side.
  • Mash avocados and spread evenly on both cut sides of buns. Assemble burgers with patties, tomatoes, onion, and lettuce. Serve alongside additional harissa, if desired.

No need for a food processor when you make these ridiculously easy veggie burgers! Just mash chickpeas, hummus, and a handful of other ingredients together and saute for a super tasty, super simple vegan veggie burger.

1 cup rolled oats (not quick-cooking)
1/2 cup cooked chickpeas
1/3 - 2/3 cup prepared classic hummus (homemade or store-bought)
1/4 cup finely diced yellow onion
2 tablespoons fresh chopped parsley (optional)
2 teaspoons onion powder
1/2 teaspoon ground cumin
1/16 teaspoon ground red cayenne pepper
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
2 tablespoons olive oil
4 hamburger buns (for gluten-free, sub your favorite gluten-free buns, brushed with olive oil and toasted)
Baby arugula (tossed in a bit of lemon juice and olive oil)
Quick-pickled red onions (I like this recipe)
Sliced avocado
Harissa mayo (Mayo stirred with a dollop of spicy Harissa and a squeeze of lemon juice)

Steps:

  • Add all ingredients except olive oil to a medium bowl, starting with the lesser amount of hummus. Using a fork or potato masher, mix all ingredients together, mashing the chickpeas as you do so (but don't completely mash them - you want to leave a bit of texture). Add more hummus if needed to bind the burgers together. You want the mixture to hold together easily when squeezed, but you don't want it too wet. Because moisture levels in hummus can vary, I suggest starting with less hummus then adding a little more at a time until your mixture holds together when you squeeze it.
  • Divide the burger mixture into fourths. Using your hands, form four patties about 4 inches in diameter. I like to press my burgers into this 4.5-inch circular cookie cutter for the perfect shape, but it's not necessary at all.
  • Heat a large saute pan over medium heat. When hot, add the olive oil. When the olive oil is hot, add the burgers, cooking in batches if your pan isn't big enough.
  • Cook on one side for 3-4 minutes, until golden brown. Flip and cook on the other side for 2-3 more minutes, until browned.
  • Serve immediately - on a bun with accompaniments, over a salad, or on its own as a quick snack (um not that I've ever done that).

1/2 tbsp dried oregano
2 tbsp maple syrup

1/2 tbsp allspice
2 tbsp Tandoori spice
2 tbsp lime juice
1 tbsp agave syrup

Steps:

  • Choose your favorite flavor combination above. Follow the steps below, using the correct spices and liquids for your flavor combo.
  • Preheat the oven to 400°F or 200C°.
  • In a fine-mesh strainer, drain and rinse a 15 oz can of chickpeas. Place the chickpeas on a clean, dry kitchen towel to pat off the excess moisture.
  • Spread the chickpeas on a lined baking sheet. Place the baking sheet in the oven and roast for 20 minutes.
  • Remove the baking sheet from the oven. Pour the chickpeas into a mixing bowl. Add the spices and liquids for your chosen flavor combination.
  • Return the chickpeas to the oven. Roast for an additional 20 minutes, taking them out at 10 minutes to turn and move the chickpeas around on the pan (this will keep them from sticking and promote more even baking).
  • Test the chickpeas after another 10 minutes. If they still soft on the inside, return to the oven for another 5 minutes.
  • If the chickpeas are starting to burn, but they still aren't totally crispy, turn off the oven, open the oven a few inches at the top, and let the chickpeas rest for 10 to 15 minutes. They will continue to dry out in the hot oven.
  • When the chickpeas are crunchy on both the outside and inside they are done. Enjoy right away or store at room temperature, (covered but not airtight) for up to 5 days.

  • Drain and rinse the chickpeas. Use a potato masher or fork to mash them in a bowl until they’re mostly mashed with some chunks. Use a large size grater to grate the onion and carrot, then finely grate the garlic OR place them all in a food processor and process until finely minced. Add them to the bowl with the chickpeas. Stir in the tahini, flour and spices. Mix with a spoon and then your fingers until a sticky dough forms. Form 4 round patties and place them on a cutting board, about 3 inches wide by about 3/4 inch thick (we had a 3-inch circle biscuit cutter, which you could use if you have one).
  • In a medium frying pan, heat 1/4 cup oil over medium heat. Carefully add the patties to the pan. If you have one, top with a splatter screen. Fry for about 3 to 4 minutes until golden brown on one side. Flip and fry for another 3 to 4 minutes until golden brown, turning down the heat as necessary.
  • Transfer the patties to a parchment lined baking sheet. Bake for 20 minutes until golden brown and baked through.
