HOMEMADE VEGETARIAN CHILI

Homemade Vegetarian Chili image

The smoky, complex flavor of this simple vegetarian chili comes from basic pantry ingredients, vegetables and spices! It makes great leftovers, too. Recipe yields 4 large or 6 moderate servings of chili.

Provided by Cookie and Kate

Categories     Chili

Time 1h

Number Of Ingredients 19

2 tablespoons extra-virgin olive oil
1 medium red onion, chopped
1 large red bell pepper, chopped
2 medium carrots, chopped
2 ribs celery, chopped
1/2 teaspoon salt, divided
4 cloves garlic, pressed or minced
2 tablespoons chili powder*
2 teaspoons ground cumin
1 1/2 teaspoons smoked paprika*
1 teaspoon dried oregano
1 large can (28 ounces) or 2 small cans (15 ounces each) diced tomatoes**, with their juices
2 cans (15 ounces each) black beans, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
2 cups vegetable broth or water
1 bay leaf
2 tablespoons chopped fresh cilantro, plus more for garnishing
1 to 2 teaspoons sherry vinegar or red wine vinegar or lime juice, to taste
Garnishes: chopped cilantro, sliced avocado, tortilla chips, sour cream or crème fraîche, grated cheddar cheese, etc.

Steps:

  • In a large Dutch oven or heavy-bottomed pot over medium heat, warm the olive oil until shimmering. Add the chopped onion, bell pepper, carrot, celery and 1/4 teaspoon of the salt. Stir to combine and cook, stirring occasionally, until the vegetables are tender and the onion is translucent, about 7 to 10 minutes.
  • Add the garlic, chili powder, cumin, smoked paprika and oregano. Cook until fragrant while stirring constantly, about 1 minute.
  • Add the diced tomatoes and their juices, the drained black beans and pinto beans, vegetable broth and bay leaf. Stir to combine and let the mixture come to a simmer. Continue cooking, stirring occasionally and reducing heat as necessary to maintain a gentle simmer, for 30 minutes.
  • Remove the chili from the heat and discard the bay leaf. For the best texture and flavor, transfer 1 1/2 cups of the chili to a blender, making sure to get some of the liquid portion. Securely fasten the lid and blend until smooth (watch out for hot steam), then pour the blended mixture back into the pot. (Or, you can blend the chili briefly with an immersion blender, or mash the chili with a potato masher until it reaches a thicker, more chili-like consistency.)
  • Add the chopped cilantro, stir to combine, and then mix in the vinegar, to taste. Add salt to taste, too-I added 1/4 teaspoon more at this point. Divide the mixture into individual bowls and serve with garnishes of your choice. This chili will keep well in the refrigerator for about 4 days or you can freeze it for longer-term storage.

THE BEST VEGETARIAN BEAN CHILI RECIPE

The Best Vegetarian Bean Chili Recipe image

A 100% vegan chili recipe that has all of the deep chili flavor, textural contrast, and rib-sticking richness that the best chili should have.

Provided by J. Kenji López-Alt

Categories     Entree     Chili     Mains

Time 2h

Yield 6

Number Of Ingredients 18

3 whole sweet dried chilies like Costeño, New Mexico, or Choricero, stems and seeds removed
2 small hot dried chilies like Arbol or Cascabel, stems and seeds removed (optional)
3 whole rich fruity dried chilies like Ancho, Mulatto, Negro, or Pasilla, stems and seeds removed
1 quart water
2 whole chipotle chilies in adobo sauce with 2 tablespoons sauce from can
2 (14-ounce) cans chickpeas
1 (28-ounce) can whole tomatoes packed in juice
2 tablespoons vegetable oil
1 large onion, finely diced
3 cloves garlic, grated on a microplane grater
1 1/2 tablespoons cumin
2 teaspoons dried oregano
1 tablespoon soy sauce
1 teaspoon marmite or vegemite
2 (14-ounce) cans dark red kidney beans, drained, liquid reserved separately
2 tablespoons vodka or bourbon
Kosher salt
2 to 3 tablespoons masa

Steps:

  • Drain chickpeas, reserving liquid from can. Transfer chickpeas to a food processor and pulse until just roughly chopped, about three 1-second pulses. Set aside.
  • Roughly squeeze tomatoes through your fingers into approximate 1/4-inch pieces. Add to chickpea water along with any juices.
  • Heat oil in a large saucepan or Dutch oven over medium-high heat until shimmering. Add onions and cook, stirring frequently, until softened but not browned, about 4 minutes. Add garlic, cumin, and dried oregano and cook, stirring constantly, until fragrant, about 30 seconds. Add puréed chiles, soy sauce, and marmite and cook, stirring constantly, until fragrant, about 30 seconds. Add reserved chickpea/tomato water mixture and stir to combine. Add chopped chickpeas and kidney beans. Stir to combine.
  • If beans are sticking out of the top, add reserved kidney bean liquid until just barely submerged. Bring to a boil over high heat, reduce to a bare simmer, and cook, stirring occasionally, until thick and rich, about 1 1/2 hours, adding more reserved kidney bean liquid as necessary if chili becomes too thick or sticks to the bottom of the pan.
  • When cooked, add vodka or bourbon and stir to combine. Season to taste with salt and whisk in masa in a slow steady stream until desired thickness is reached. For best results, allow chili to cool and refrigerate for at least one night and up to a week. Reheat to serve.
  • Serve, garnished with cilantro, chopped onions, scallions, avocado, lime wedges, and warm tortillas as desired.

VEGETARIAN WHITE BEAN CHILI

Vegetarian White Bean Chili image

I borrowed this from The New England Soup Factory Cookbook. This is a thick, hearty, and filling soup for the winter and is easy to make. Feel free to substitute canned beans for the dried variety, but it's best to be ready for this a day in advance as the beans need to soak overnight.

Provided by Lateshow9

Categories     Beans

Time 2h30m

Yield 12 serving(s)

Number Of Ingredients 26

1 lb great northern bean, dried
1/2 lb chickpeas, dried
4 tablespoons olive oil
5 garlic cloves, minced
1 large yellow onion
4 carrots, peeled and diced into 3/4 inch pieces
1 yellow bell pepper, seeded and diced into 3/4 inch pieces
1 red bell pepper, seeded and diced into 3/4 inch pieces
24 ounces diced tomatoes
6 ounces tomato paste
2 cups tomato juice
1 cup white wine
8 cups vegetable stock
3 teaspoons chili powder
2 teaspoons ground cumin
2 teaspoons ground coriander
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried basil
3 bay leaves
salt
pepper
1 jalapeno pepper, minced
1 tablespoon lime juice
1 cup corn kernel
1 bunch scallion, diced
1/4 cup fresh cilantro, chopped

Steps:

  • Place beans and chickpeas in a deep bowl. Add enough cold water to cover by 2 inches. Place the bowl in the refrigerator and soak overnight. Drain before using.
  • Heat a large pot over medium-high heat. Add the olive oil, garlic, onion, carrots, and bell peppers.
  • Saute for 7 minutes, stirring frequently.
  • Add the drained beans, chickpeas, tomatoes, tomato paste, V-8 juice, wine, stock, chili powder, cumin, coriander, oregano, basil, bay leaves, and salt.
  • Cover and bring to a boil. Reduce heat to medium or low and simmer for 1-1/2 hours, or until the beans are tender and fully cooked.
  • Remove from the heat and discard bay leaves. Add jalepeno, lime juice, corn, scallions, cilantro, pepper, and additional salt to taste.

  • Prep your ingredients: First, finely chop 1 large white onion. Cut in half from top to bottom. Trim top, then peel onion skin and first tough layer; discard. Leave root end on. Make slices parallel to cutting board, starting close to the board and moving upward. Then make slices lengthwise from top of onion to root end. Slice across onion, again from top to bottom, and you’ll come away with nice little cubes. Run your knife through once more if any pieces are too big. You should have about 2 cups chopped onions. Set aside 2 Tbsp. for serving.
  • Smash, peel, and finely chop 6 garlic cloves. Separate leaves from stems from ½ bunch cilantro. Coarsely chop leaves; set aside for serving. Finely chop stems. Using a fork, pull 1 chipotle chile from can, then finely chop until a paste forms. Transfer to a small bowl, along with 1 tsp. adobo sauce from can. Add ¼ cup tomato paste. Drain and rinse 2 15-oz. cans pinto beans.
  • Heat ¼ cup extra-virgin olive oil in a large saucepan or Dutch oven over medium-high. Add onion, garlic, cilantro stems, and 2 tsp. chili powder and cook, stirring frequently, until onion is starting to soften, 5–6 minutes. Add tomato paste mixture and cook, stirring frequently, until brick red and starting to stick to bottom of pan, 2–3 minutes.
  • Add 1 28-oz. can fire-roasted tomatoes and bring to a simmer. Cook, stirring frequently, until tomatoes are cooked down and slightly darker in color, 8–10 minutes.

  • Make the “meat” – pulse all ingredients in a food processor until broken down into a chunky paste-like texture. Set aside.
  • Heat the olive oil over medium heat. Add the onions and garlic. Sauté for 5-10 minutes until very soft.
  • Add green chiles, tomato paste, chili powder, cumin, smoked paprika, and soy sauce. HELLO FLAVOR.
  • Add your “meat” to the pan – once it mixes in and starts cooking, it should start to resemble chili meat. Let the “meat” cook for 10 minutes or so to soften the vegetables. Season with salt.

  • In a large pot, heat the olive oil over medium heat. Cook the onion for 2-3 minutes until it begins to soften. Toss in the garlic and spices, and cook for another minute, stirring so nothing sticks to the bottom of the pan.
  • Now add in the diced tomatoes (and their juices), tomato sauce, beans (drained), and corn (if frozen, thaw it first). Stir and continue to cook until everything is hot. Taste and add salt and pepper as you need. You can serve this as soon as everything is hot, or you can lower the heat and let the flavors mingle a little longer. We pretty much always eat it as soon as it's ready.

  • In a large pot or Dutch oven, heat olive oil over medium heat. Add onion and poblano pepper and cook, stirring occasionally, for about 10 minutes, then add garlic and 1/2 tsp of the salt and continue cooking until onions, peppers, and garlic are very tender, about 10 more minutes. If they begin to brown, reduce heat slightly.
  • Meanwhile, heat a cast-iron skillet over high until it begins to smoke. Place tomatillos in the skillet and cook undisturbed for about 2 minutes, or until they begin to blacken. Continue cooking, rotating every minute or so, until tomatillos feel like water balloons when gently squeezed (with tongs), and are beginning to burst. Transfer to a blender or food processor and blend until smooth. Set aside.
  • Add cumin, cayenne, and sweet smoked paprika to the onion mixture, and cook another minute. Add apple cider vinegar and cook, stirring, until the liquid is evaporated, then stir in 6 cups of water and remaining 2 tablespoons of the salt and the blended tomatillos. Bring to a boil over high heat, then add beans.
  • Cook for 10 minutes, until beans are very tender, then ladle about 1/3 of the soup into the blender and puree until smooth; return the pureed soup to the pot. Add corn and bring to a boil and cook another 10 minutes, until soup thickens slightly. Adjust seasonings to taste. Divide among bowls and serve with toppings.
