VEGAN CHOP SUEY

This vegan chop suey dish is the essence of healthy Chinese American cuisine. Read about the different variations (vegan & non-vegan) and make it your own.

90ml (6 tbsp) vegetable stock
30ml (2 tbsp) soy sauce
15ml (1 tbsp) cornflour
30ml (2 tbsp) rice wine vinegar
15ml (1 tbsp) brown sugar
15ml (1 tbsp) vegetable oil
1 large onion, peeled and chopped
2 garlic cloves, peeled and crushed
2.5cm (1in) fresh ginger root, peeled and julienned
1 carrot, peeled and sliced
1 red pepper, washed and chopped
150g (5oz) mixed mushrooms, cleaned and sliced
100g (3oz) mangetout, washed
180g (6 oz) beansprouts
8 spring onions, cleaned and chopped
60g (2oz) cashews
5ml (1 tsp) sesame oil

Steps:

  • First prepare the stir fry sauce by combining stock, soy sauce, cornflour, vinegar and brown sugar in a bowl. Set aside.
  • Heat the oil in a large wok and fry the onion for 1 minute.
  • Add garlic, ginger and carrot to the wok and fry for 1 minute.
  • Add the pepper, mushrooms, mangetout, beansprouts and spring onions to the wok and continue to stir fry at a high heat for 1 minute.
  • Give the sauce in the bowl a stir and pour it over the vegetables, and let the content bubble away while you stir.
  • Continue cooking until the mushrooms are just cooked which should take about 2 minutes, then add cashews and sesame oil.
  • Cook for 1 minute and remove from the heat.
  • Serve immediately on rice. Enjoy!

This recipe was modified from a recipe my grandmother used to make with beef. Now we've made it into a tasty vegetarian dish. Great for lunch or dinner.

1 (1 lb) box elbow macaroni
1 (14 ounce) package Lightlife Gimme Lean ground beef
1 (8 ounce) can campbell's tomato soup
4 tablespoons margarine
1 medium onion, chopped
1 teaspoon garlic powder
1 teaspoon sugar (optional)

Steps:

  • Boil elbow noodles according to instructions on the box, lightly salt water. Meanwhile, put a large deep frying pan on a medium flame and put a 1/2 stick of margarine in, let melt. Then add Light Life Gimme Lean ground beef. (I also use LifeLight Smart Ground Original).
  • Chop onion finely, and add to pan mixture along with the garlic power, tomato soup, and sugar. Mix together. Stir frequently. Cook until very hot and until mixture has a little bit of a crumbly texture.
  • Add cooked noodles to mixture, and stir well.

My grandmother always made this for big family gatherings. When I was a kid I always picked out the hamburger, but it's the best part now! This is a pretty quick and easy recipe with no frills, but tastes great.

3 cups elbow macaroni
1 1/2 lbs ground beef
1 large green pepper
1 large onion
1 (14 ounce) can tomato soup
1 (15 ounce) can tomato sauce
1 (14 1/2 ounce) can diced tomatoes

Steps:

  • Boil elbow macaroni until just under cooked or al dente and drain.
  • Chop onion and green pepper.
  • Brown ground beef in a skillet with chopped onion and green pepper. Do not drain all of the grease. It brings out a lot of flavor.
  • Combine macaroni, beef mixture, tomato soup, tomato sauce, and diced tomatoes in large pot.
  • Simmer on very low heat and add salt, pepper, and other spices to taste. I add a little bit of garlic powder and italian seasoning for more flavor.
  • Serve immediately or store for later.

2 tablespoons peanut oil
1 onion, chopped
3 garlic cloves, diced
1 green bell pepper, diced
1 red bell pepper, diced
2 3/4 ounces broccoli florets
1 zucchini, sliced
1 carrot, cut into matchsticks
3 1/2 ounces bean sprouts
2 teaspoons light brown sugar
2 tablespoons soy sauce
1/2 cup vegetable stock
salt and pepper
1/2 cup cashews (optional)
1 tablespoon chili oil (optional)

Steps:

  • Heat oil in a wok until oil is almost smoking.
  • Add the onion and garlic and stirfry for 30 seconds. Take care not to burn the garlic.
  • Stir in peppers, broccoli, zucchini, and carrots. Stir fry for 3 more minutes.
  • Add bean sprouts, brown sugar, soy sauce and vegetable stock (add chilli sauce and cashews here is desired).
  • Add a dash of salt and pepper and cook an additional 2 minutes. Serve immediately with noodles or rice.

2/3 cup chopped onion
3 garlic cloves, minced
2 teaspoons grated fresh gingerroot
1 tablespoon toasted sesame oil
1/2 cup diagonally cut carrot
1/2 cup diagonally cut celery
2/3 cup sliced white button mushrooms
1 cup sliced bell pepper
2/3 cup coarsely shredded red cabbage
2 cups diagonally cut zucchini
2/3 cup mung bean sprouts
2/3 cup sliced green beans
2/3 cup snow peas
2/3 cup bamboo shoot
2/3 cup sliced water chestnuts
1 cup sliced tomatoes
1 cup water
2 tablespoons soy sauce
3 tablespoons cornstarch
3 cups cooked brown rice
salt

Steps:

  • Cook the onion, garlic and ginger, stirring, in the oil over medium-high heat.
  • Add the carrots and celery, and cook, stirring, 5 minutes.
  • Add the mushrooms, peppers, cabbage and zucchini, and cook 3 minutes more.
  • Add the bean sprouts, green beans, snow peas, bamboo shoots, water chestnuts and tomatoes, and cook 3 minutes more.
  • Stir together the water, soy sauce and cornstarch; stir gently into the vegetable mixture.
  • Cook until the sauce is thickened and all the vegetables are tender-crisp. Salt and pepper to taste.
  • Serve over rice.

This reminded me of American Chop Suey (an old '60s comfort food recipe which I used to make in a skillet on the stove) but healthier and made in a crockpot. I thought a chopped green pepper or sliced mushrooms may be great additions to this recipe. Adapted from Fresh From the Vegetarian Slow Cooker

1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, minced
1 (28 ounce) can tomatoes, crushed
1 (12 ounce) package frozen vegetarian veggie crumbles
1 -2 cup hot water
1/2 cup red wine
1 teaspoon italian seasoning
salt
pepper
8 ounces pasta (I used bow ties, but any macaroni-type of pasta will work)
1 tablespoon basil, chopped
1/2 cup parmesan cheese, grated

Steps:

  • In a skillet over medium heat heat oil and then add onion, cooking until softened. Stir in garlic and cook another minute or so. Although I didn't use them I thought a green pepper and/or mushrooms would be great to add to the skillet.
  • Transfer onion mixture to the crockpot.
  • Stir in next 7 ingredients (tomatoes - pepper) and cook on low for 3 1/2 hours.
  • Stir in pasta, cover and cook on low for another 30 minutes.
  • Stir in basil and sprinkle with cheese.

3 tablespoons butter
1 medium yellow onion, chopped
1 green bell pepper, stemmed, seeded, and chopped
2 garlic cloves, minced
1 lb ground beef
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon ground black pepper
kosher salt
1 (14 1/2 ounce) can diced tomatoes
1 (14 1/2 ounce) can tomato sauce
1/4 cup tomato paste
2/3 cup tomato juice
1 pinch sugar
1 lb elbow macaroni

Steps:

  • In large pot over medium heat melt butter. Add onion and bell pepper and cook, stirring occasionally, until soft, about 5 minutes. Stir in garlic for about 1 minute. Stir in ground beef and cook, stirring and breaking up meat chunks with a spoon. Cook until meat is done, about 7 minutes until no longer pink. Toss herbs and pepper over the meat mixture, add salt to taste, and stir until well mixed.
  • Add canned tomatoes with their juices, tomato sauce, tomato paste, and tomato juice. Add sugar to taste. Simmer gently while you prepare the pasta.
  • Bring a large pot of salted water to the boil over high heat. Add macaroni and cook until al dente, stirring occasionally. Drain the macaroni and add to the chop suey.
  • Serve hot.
