12 fingerling potatoes, washed and cut into chunks
12 whole shallots, peeled
8 small turnips, washed
2 whole rutabaga, washed and cut into chunks
Olive oil, for drizzling
Salt and pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Combine garlic, potatoes, shallots, turnips and rutabaga in a bowl and toss with olive oil, salt and pepper.
  • Spread on a baking sheet and roast until the vegetables start to slightly char, 35 to 45 minutes.
  • Serve immediately.

Steps:

  • Set a steamer basket in a saucepan with 1 inch of simmering water. Add asparagus and carrots. Cover and cook until tender, 5 minutes. Transfer to a plate, drizzle with garlic oil with some cloves coarsely chopped, and season with salt and pepper. Serve warm or at room temperature.

3 carrots, peeled and cut on the bias into 1/2-inch pieces
8 spears asparagus, cut into 2-inch pieces
1/4 head cauliflower, cut into 1-inch florets
1/4 head broccoli, cut into 1-inch florets
1 tablespoon sesame-chile oil
1 teaspoon olive oil
2 cloves garlic, chopped
1/4 teaspoon red pepper flakes
Juice of 1/2 lemon
Kosher salt and freshly ground black pepper

Steps:

  • Special equipment: a metal steamer basket
  • Fill a large pot with 2 inches of water and bring to a boil over medium heat. Arrange the carrots, asparagus, cauliflower and broccoli in a metal steamer basket; place in the pot and cover. Steam the vegetables until slightly tender but still with a little crunch, 5 to 6 minutes.
  • While the veggies are steaming, heat a small saute pan over medium heat. Add the sesame-chile oil, olive oil, garlic and pepper flakes, and cook for 1 minute.
  • Transfer the steamed vegetables to a bowl. Add the sesame-chili oil mixture and the lemon juice, and season to taste with salt and pepper. Toss to coat the vegetables evenly. Serve immediately.

Garlic adds a lot of flavor to this dish. The long cooking mellows the garlic out and adds a lot of flavor to the chicken and vegetables. This recipe can be made ahead of time and baked later. I often add additional seasonings like black pepper, onions, etc. depending on my mood.

1 head garlic, about 10 cloves
3 -3 1/2 lbs chicken pieces
2 tablespoons olive oil
6 large carrots, peeled
8 small potatoes, scrubbed and quartered
1 lemon, quartered
1 teaspoon salt
1 teaspoon rosemary
1 teaspoon thyme
1/2 cup dry white wine or 1/2 cup chicken broth

Steps:

  • Heat oven to 400°F.
  • Peel and mince garlic. Chop carrots into 2 inch pieces. Place garlic in a 13 x 9 baking dish.
  • Pat chicken dry with paper towels. In batches, brown chicken pieces on all sides in olive oil over medium-high heat. Remove pieces as they are browned.
  • Place browned chicken on top of garlic in baking dish.
  • Add carrots, potatoes, and lemon to dish. Sprinkle all with salt, thyme, and rosemary. Pour in wine or broth.
  • Cover with aluminum foil and bake 30 minutes.
  • Remove foil and baste with pan drippings.
  • Then cook, uncovered for 30-45 minutes more of until chicken tests done and the vegetables are somewhat browned.
  • Discard lemon. Place chicken on serving platter.
  • Separate fat from drippings. Serve remaining drippings with chicken and vegetables.

1 teaspoon dried thyme leaves
