100g (approx) each of a mix of firm vegetables, cut into bite-size pieces, such as aubergine, broccoli, courgette, mushrooms, red pepper and sweet potatoes
tempura batter (see below)
groundnut or sunflower oil, for deep frying
3 tbsp soy sauce
3 tbsp dry sherry
1 tbsp sugar
1 lemon, zest only

Steps:

  • Heat oven to 150C/fan 130C/gas 2. Mix together the sauce ingredients in a small bowl. Make the batter (see right). Cover a baking tray with sheets of kitchen paper. Start to heat a deep-fat frying pan or large wok a third full of oil and have the frying basket, or slotted spoon to hand
  • When the oil reaches 190C dip some of the prepared veg briefly into the batter, shake off any excess, then lower straight into the hot oil. Don't crowd the frying basket. Fry for about 2 mins until light golden and crisp, then drain on kitchen paper.
  • Repeat with the remaining vegetables in batches, dipping into the batter just before you fry them and remember to let the oil heat back up to temperature between each batch. Keep the tempura warm in the oven, leaving the door slightly ajar so that they stay crisp. They are best served immediately on a warm plate with the sauce alongside for dipping.

Tempura batter is very handy and easy to make. You can use it with just about any vegetable, as long as they are cut thin enough so that the vegetable can just cook and soften in the same time as it takes for the batter to crisp. These can be eaten alone as a starter with a good sprinkle of rock salt, halves of lemon or lime and possibly some of the dips. The battered vegetables also make a nice side dish, especially with simply cooked meat or fish and a salad.

7 ounces plain flour
3 1/2 ounces corn flour
Ice-cold water, preferably soda or sparkling
3 pounds of assorted vegetables (see below)
Tempura Dipping Sauce:
1 cup rice wine vinegar
2 tablespoons sugar
1/2 handful cilantro, chopped
1 small chile, seeded and finely chopped
1/2 teaspoon chopped garlic
Salt and freshly ground black pepper

Steps:

  • Add all the flour to a bowl. With the handle of a spoon, or a chopstick, mix, and stir in the ice-cold water until the mixture is slightly thicker than buttermilk consistency. Make a point of not mixing thoroughly, as tempura is renowned for lumps of flour.
  • Dip sliced vegetables (zucchini, onions, eggplants, carrots, bell peppers, sweet potatoes, string beans, broccoli, wild mushrooms, fresh herbs, and bok choy) any vegetables will work but these are the most commonly used) into the batter mixture and shake off any excess.
  • Deep fry vegetables in a wok or deep fat fryer (you can use a frying pan if you do not have anything else, you just need about 7cm/3 inches of clean oil) at 200C/400F/Gas 6 until the batter is light golden in color and crisp. (Any large amounts of hot oil in a kitchen, especially in woks which are not always that sturdy, scare me, please be careful and do not leave the pan unattended.) Turn the vegetables at intervals to ensure that both sides are cooked equally and then fish them out with a slotted spoon, shaking off any excess oil. Place them on kitchen paper towels and eat as soon as possible. The reason that I keep going on about eating them so quickly is because as your hot cooked vegetables cool down inside the batter they begin to steam, making them less crisp as time goes on. Good tempura should be crispy and is one of those things that should be made and cooked quickly and eaten straight away.
  • Pour the rice wine vinegar into a small bowl. Add the sugar and stir until the sugar is dissolved. Taste for sweetness. Add cilantro, chile, and garlic and mix well. Season with salt and pepper and allow to sit for 10 minutes to 1 hour, for flavors to combine.;

14 ounce packet of extra firm tofu
½ cup of rice flour
½ cup of all-purpose flour
¾ tsp of baking soda
¼ tsp of salt
1 cup of club soda*
Frying oil (enough to submerge your tempura tofu strips)

Steps:

  • The first step towards the best tempura tofu is to freeze your packet of tofu. This gives the tofu a much chewier, firmer texture that's perfect for deep fried tofu recipes. Use a tofu press to press out as much liquid as you can from the block of tofu before cutting the block into tempura sized strips. Place your tofu strips into a resealable container and freeze overnight. The next day, allow the tofu to thaw, then press out any excess water a second time.
  • When you're ready to start preparing your tempura batter, you need to remember to fry your tofu right away, as the batter itself needs to be cold for the best results. You can set up your skillet or pot and start heating up enough frying oil to cover your tempura strips while you prepare the batter (it doesn't take too long).
  • Prepare your batter by first measuring out rice flour, all-purpose flour, salt, and baking soda into a mixing bowl. Mix the ingredients together and pour in cold club soda. You don't need the batter to be smooth; lumpy is fine.
  • Your oil should be hot now, so it's time to learn how to deep fry tofu. Take your first tofu strip and give it a good coating of tempura batter. Place it straight into the hot oil and let it cook for 2 minutes. Remove the tempura tofu when it's crispy and place it on paper towels or a drying rack to remove excess oil.
  • Repeat the process, frying tofu in small batches to give them enough space to cook without touching.
  • Serve your tempura tofu with dipping sauces or as part of a larger Japanese-inspired dinner!

I love tempura in any fashion! Not listed in the ingredients here but is one of my favorites is sweet potatoes (or yams). The tempura flour can be found in the Asian section of most big grocery chains. I have found that the ice cubes is absolutely necessary. If you don't use it, I guarantee that the results will not be as expected!

1 egg
2 cups tempura flour
2 cups water
ice cube
1 piece bok choy
1 large carrot
1 medium zucchini
1 quart canola oil
1/2 lb soft tofu
1/2 tablespoon sambal oelek
1 egg yolk
salt and pepper

Steps:

  • Cut vegetables into finger-size pieces, the carrot pieces need to be a little bit thinner (because carrots take longer to cook).
  • Mix tempura flour, with egg and water, add a small amount of ice.
  • Heat up the frying oil. To check temperature drip a little bit of batter into the oil, if the batter sinks and then slowly float up and gets a nice golden brown crispy texture, it's ready to go.
  • Dip vegetable pieces in tempura mixture then place in oil. Vegetables are done when they are a golden brown color and have a crispy texture; will cook about 2 to 3 minutes, carrots may take a little longer than other vegetables.
  • Remove vegetables from oil with slotted spoon and place on paper towels to cool.
  • For the Tofu chili dipping sauce:.
  • Put tofu, egg yolk and sambal oalek in a blender. Start blender and slowly add oil in a steady stream. If you find the sauce too thick, add some water. Salt and pepper to taste.

Assorted vegetables and seafood (scallops, broccoli, mushrooms, eggplant, squash, onions, scallions, asparagus, shrimp) all vegetables should be sliced thin so they fry quickly.
Hot Chinese Mustard Sauce, recipe follows
Sesame Scallion Dipping Sauce, recipe follows
2 tablespoons Chinese dry mustard (or Colman's English Mustard Powder)
Pinch turmeric
2 teaspoons water
2 tablespoons rice wine vinegar
1/4 cup pickled ginger liquid
1 lemon, juiced
1 tablespoon sugar
1 tablespoon chili oil
1 tablespoon roasted (dark) sesame oil
1 cup peanut oil
1/4 cup mirin
1 tablespoon brown sugar
1/4 cup lemon juice
1/4 cup soy sauce
1 tablespoon wasabi
2 tablespoons roasted (dark) sesame oil
2 tablespoons minced scallions or green onions

Steps:

  • In a small bowl, combine the rice flour and 1/2 cup soda water. Stir until blended. Combine the flour, baking powder and cornstarch. Sift into a medium bowl. Stir in the remaining 2 1/2 cups soda water, salt and cayenne. Lastly add the rice flour mixture. Allow to rest in the refrigerator at least 1 hour before use. Check the consistency of the batter by dipping a piece of vegetable and cook in a preheated deep fryer at 350 to 375 degrees F. Additional soda water may be needed to adjust thickness.
  • In a bowl, dissolve the dry mustard and turmeric in the water and rice wine vinegar. Stir in the pickled ginger liquid, lemon juice, and sugar and whisk until well blended. Combine the chili, sesame and peanut oils. Slowly whisk in the oil to the mustard mixture until emulsified. Refrigerate until needed. This can be prepared up to 1 week ahead.
  • In a small bowl, whisk together the mirin, sugar, lemon juice, soy, and wasabi. Stir in the sesame oil and scallions. Use as needed.

ASIAN SHRIMP AND GINGER FRITTERS WITH SWEET CHILI DIPPING SAUCE

1 lb uncooked medium shrimp, peeled and de-veined
2 1/2 cups coarse fresh breadcrumbs
1/2 cup coconut milk
2 1/2 tablespoons finely chopped ginger
1/2 cup cilantro leaf, chopped
1 egg
4 teaspoons fish sauce (nam pla)
vegetable oil (for deep frying, preferably peanut oil)
1/4 cup rice wine vinegar
2 tablespoons fish sauce
1/4 cup hot water
2 tablespoons sugar
1 kaffir lime, juiced
1 teaspoon minced garlic
1 teaspoon finely chopped hot red chile (or 1 teaspoon sambal oelek)

Steps:

  • Shrimp and Ginger Fritters: Place the breadcrumbs and coconut milk together in a bowl, and set aside.
  • Place the shrimp meat, ginger, cilantro, egg and fish sauce into a food processor bowl, and pulse until the mixture is combined.
  • It is important not to over-mix or otherwise it will turn into a paste!
  • Add the breadcrumbs, which by now should have absorbed all the coconut milk, and pulse until just blended.
  • Heat the vegetable oil over high heat, or to 350 degrees F (180 C) in a deep-fryer.
  • Drop rounded tablespoons of the mixture into the hot oil, and cook until golden brown on all sides, about 2 minutes.
  • Do this in batches.
  • As the fritters cook, remove from the oil with a slotted spoon, drain on kitchen paper, and keep warm in a low oven.
  • Sweet Chili Dipping Sauce: Place all ingredients in a blender and whizz until blended and sugar is dissolved.
  • Serve in a small bowl (it yields 1 cup) to accompany the Asian Shrimp and Ginger Fritters.

HEARTY VEGETARIAN TOFU CHILI

This is a delicious colourful chili with a perfect blend of many vegetables with tofu in a thick spicy tomato base. This original recipe came from Runner's World magazine, although I have altered it to suit my likings. Frying tofu gives it a more meat like texture. For those who like chili very spicy, more chili powder may be added.

  • Boil, reduce heat and simmer 45 to 55 minutes.

VEGETABLE TEMPURA

1 cup dashi
¼ cup soy sauce
¼ cup mirin
8 ounces daikon, peeled thickly, so you can see the radish's translucent flesh
½-inch piece ginger (about 1 ounce), peeled
2 egg yolks
2 cups cold water
¼ cup ice cubes
2 cups cake flour
1 pound vegetables, sliced on an angle into bite-size pieces
½ cup cake flour
2 quarts vegetable oil
1⁄4 cup toasted sesame oil
Chopsticks, a metal strainer, candy thermometer, and a Dutch oven or large cast-iron skillet

Steps:

  • Combine the dashi, soy sauce, and mirin in a small saucepan. Place over medium heat. As soon as the dipping sauce comes to a boil, turn off the heat.
  • Combine the yolks and water in a bowl, mixing until they're incorporated, then add the ice cubes (the "wet" part of the batter). In another bowl or container, add the flour (the "dry" part of the batter).
  • When you're almost ready to cook the tempura, reheat dipping sauce over low heat. Grate the daikon on the coarsest side of a box grater. Squeeze out excess liquid and set aside. Grate the ginger finely and set aside. Keep the sauce warm while you prepare a tempura cooking station.
  • To prepare a tempura cooking station, beside your burner, arrange the vegetables, a plate with the ½ cup of cake flour, and the wet and dry parts of the batter. Also, ready a tray lined with paper towels or newspaper to absorb the excess oil from the cooked vegetables, and the tools you'll need: chopsticks, a metal strainer, and a candy thermometer, if you have one. Place a cooking vessel on the burner; use one with a uniform size to heat oil evenly, like a large cast-iron skillet or Dutch oven (don't use a wok). Add the vegetable oil and sesame oil.
  • Heat the oil to 360°F over high heat. When the oil has reached 360°F, prepare to cook the vegetables in batches. Be careful not to overfill the skillet, which will lower the cooking temperature; use, at most, half of the surface area of the oil to cook. While the tempura is cooking, check the oil temperature with a candy thermometer. Regulate the heat to maintain a constant 360°F oil temperature. If the oil is too hot, the tempura will burn; if too low, the tempura will come out soggy and greasy.
  • When you're ready to cook the tempura, quickly add the flour (the "dry") to the liquid (the "wet"), in one shot. Hold 4 chopsticks together, the tips pointed down, like you're grabbing a bottle. Stab at the batter with the chopsticks, mashing down again and again to combine the dry and wet parts. Do not stir; you barely want to mix the batter. Mix for about 30 seconds, or until the batter becomes loose and liquidy, with the consistency of heavy cream. It should be lumpy, with visible gobs of dry flour floating in the liquid, and with unmixed flour sticking to the sides of the bowl. Remember, if you overmix the batter, you'll ruin it.
  • Lightly dredge the vegetables in the reserved cake flour, then dip into the batter. Immediately lay the vegetables in the hot oil. Working in batches, deep-fry the harder vegetables like sweet potato, carrot, or lotus root first, for about 3 minutes, until the vegetables turn golden brown. Transfer the vegetables to the prepared tray to drain excess oil. Repeat with the other vegetables. Cook softer vegetables like asparagus, broccoli, and pumpkin for about 2 minutes. For shiso leaves, dredge only one side of the leaf with flour, and cook for about 1 minute.
  • Serve the vegetable tempura with the grated daikon and ginger on the side of the warmed dipping sauce. When you're ready to eat, add the daikon and ginger to the dipping sauce and dip the tempura into it.

SUPER SIMPLE CHILI DIPPING SAUCE

  • finely chop the chili's and garlic.
  • Add the sugar, chili's and vinegar to a pan and bring to the boil. Reduce the heat and simmer for 15 minutes. Add the garlic and simmer for a further fifteen minutes until the mixture becomes thickened and syrupy.
  • Transfer to a sterilised jar and allow to cool. This can be kept in the fridge for up to a month. (Only lasts a week in our house though!).

1 1/2 lbs jumbo shrimp, peeled and deveined (8 to 12 per pound)
1 1/2 cups unbleached all-purpose flour
1/2 cup cornstarch
1 large egg
1 cup vodka (see note)
1 cup seltzer water
kosher salt
1/4 cup soy sauce
3 tablespoons mirin
1 teaspoon sugar
1 teaspoon toasted sesame oil
1 garlic cloves, minced (about 1 teaspoon) or 1 garlic clove, pressed through garlic press (about 1 teaspoon)
2 teaspoons grated fresh ginger
1 scallion, finely chopped
3 tablespoons mayonnaise
2 tablespoons Dijon mustard
1 teaspoon lime, juice of
2 teaspoons soy sauce
1 teaspoon grated fresh ginger
2 teaspoons prepared horseradish
1/2 cup mayonnaise
2 tablespoons chili sauce (Thai-style chili sauce, like sriracha)
1 tablespoon lime, juice of
1/4 teaspoon soy sauce

Steps:

  • Adjust oven rack to upper-middle position and heat oven to 200 degrees. In large, heavy Dutch oven fitted with clip-on candy thermometer, heat oil over high heat to 385 degrees, 18 to 22 minutes.
  • While oil heats, make 2 shallow cuts about ¼ inch deep and 1 inch apart on underside of each shrimp. Whisk flour and cornstarch together in large bowl. Whisk egg and vodka together in second large bowl. Whisk seltzer water into egg mixture.
  • When oil reaches 385 degrees, pour liquid mixture into bowl with flour mixture and whisk gently until just combined (it is OK if small lumps remain). Submerge half of shrimp in batter. Using tongs, remove shrimp from batter 1 at a time, allowing excess batter to drip off, and carefully place in oil (temperature should now be at 400 degrees). Fry, stirring with chopstick or wooden skewer to prevent sticking, until light brown, 2 to 3 minutes. Using slotted spoon, transfer shrimp to paper towel-lined plate and sprinkle with salt. Once paper towels absorb excess oil, place shrimp on wire rack set in rimmed baking sheet and place in oven.
  • Return oil to 400 degrees, about 4 minutes, and repeat with remaining shrimp. Serve immediately with Dipping Sauce.
  • NOTE: Do not omit the vodka; it is critical for a crisp coating. For safety, use a Dutch oven with a capacity of at least 7 quarts. Be sure to begin mixing the batter when the oil reaches 385 degrees (the final temperature should reach 400 degrees). It is important to maintain a high oil temperature throughout cooking. If you are unable to find colossal shrimp (8-12 per pound), jumbo (16-20) or extra-large (21-25) may be substituted. Fry smaller shrimp in three batches, reducing the cooking time to 1½ to 2 minutes per batch. See Straighten Out Your Shrimp below for tips on preventing the shrimp from curling.
  • DIPPING SAUCE: Mix all ingredients in a medium bowl.

TEMPURA FOR VEGETABLES

2 tablespoons soy sauce
1 tablespoon Asian fish sauce
2 tablespoons mirin
1 tablespoon thinly sliced scallion
1 teaspoon freshly squeezed lemon juice
2 tablespoons rice-wine vinegar

Steps:

  • Using a ginger grater or the fine side of a box grater, grate ginger root. Fold a 12-inch square of cheesecloth into quarters. Place the grated ginger in corner of cheesecloth. Working over a medium bowl, tightly wring the ginger in order to extract the juice. Discard the cheesecloth and the remaining root.
  • Add the soy sauce, fish sauce, 3 tablespoons water, mirin, scallion, lemon juice, and vinegar to the ginger juice. Whisk to combine. Dipping sauce can be refrigerated in an airtight container up to 1 week.
