1/2 pound lean ground beef (90% lean)
1/2 cup chopped onion
2 garlic cloves, minced
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 can (14-1/2 ounces) Mexican diced tomatoes, drained
3/4 cup reduced-fat ricotta cheese
1/4 cup shredded part-skim mozzarella cheese
3 tablespoons minced fresh cilantro, divided
4 whole wheat tortillas (8 inches)
1/2 cup shredded cheddar cheese

Steps:

  • Preheat oven to 400°. In a large skillet, cook and crumble beef with onion and garlic over medium heat until no longer pink, 4-6 minutes. Stir in spices and tomatoes. Bring to a boil; remove from heat. In a small bowl, mix ricotta cheese, mozzarella cheese and 2 tablespoons cilantro., Place 1 tortilla in a 9-in. round baking pan coated with cooking spray. Layer with half the meat sauce, 1 tortilla, ricotta mixture, another tortilla and remaining meat sauce. Top with remaining tortilla; sprinkle with cheddar cheese and remaining cilantro. , Bake, covered, until heated through, 15-20 minutes.

1/2 cup butter
1 cup flour

Steps:

  • Blend cream cheese and butter together.
  • Add flour and mix.
  • Chill for at least 30 minutes.
  • Divide into 24 balls and press into miniature muffin tins, pushing dough up the sides.
  • Spoon filling into pastry shells.
  • Bake at 325 degrees Fahrenheit for 25 minutes.

Looks like a pie, cuts like a pie, and tastes like a little bit of Southwestern heaven. This casserole is made from pinto and black beans layered with tortillas and cheese. Picante sauce gives it just the right kick. You can replace the Cheddar cheese with Monterey Jack if you like.

2 (15 ounce) cans pinto beans, drained and rinsed
1 cup salsa, divided
2 cloves garlic, minced
2 tablespoons chopped fresh cilantro
1 (15 ounce) can black beans, rinsed and drained
½ cup chopped tomatoes
7 (8 inch) flour tortillas
2 cups shredded reduced-fat Cheddar cheese
1 cup salsa
½ cup sour cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a large bowl, mash pinto beans. Stir in 3/4 cup salsa and garlic.
  • In a separate bowl, mix together 1/4 cup salsa, cilantro, black beans and tomatoes.
  • Place 1 tortilla in a pie plate or tart dish. Spread 3/4 cup pinto bean mixture over tortilla to within 1/2 inch of edge. Top with 1/4 cup cheese, and cover with another tortilla. Spread with 2/3 cup black bean mixture, and top with 1/4 cup cheese. Repeat layering twice. Cover with remaining tortilla, and spread with remaining pinto bean mixture and cheese.
  • Cover with foil, and bake in preheated oven for about 40 minutes. Cut into wedges, and serve with salsa and sour cream.

Steps:

  • Melt a little butter in a skillet.
  • Heat tortilla for 10-15 sec on each side, until softened.
  • Press into tart tin.
  • Bake for 10 mins at 350F.
  • Fill the tart and bake until filling is set.

Found this in my recipe book. I've really no idea where i got it from (i think it's from the internet). Posted on request. Update: I only used 1/4 cup of brown sugar and 2 TB of white granulated sugar. Turned out fine, unless you have a really sweet tooth.

1/2 cup brown sugar
8 ounces cream cheese, softened
1/4 cup butter, melted
1/4 cup granulated sugar

Steps:

  • Blend cream cheese and brown sugar.
  • Spread a thin layer on 4 tortillas.
  • Top with another tortilla, making a'sandwich'.
  • Brush both sides with melted butter and sprinkle with sugar.
  • Place in a 4" tartlet pan.
  • Fill the tarts and bake at 350F until filling is set (approx 30 mins).

2 cups all-purpose flour
1/2 teaspoon salt
3/4 cup water
3 tablespoons olive oil

Steps:

  • In a large bowl, combine flour and salt. Stir in water and oil. Turn onto a floured surface; knead 10-12 times, adding a little flour or water if needed to achieve a smooth dough. Let rest for 10 minutes., Divide dough into 8 portions. On a lightly floured surface, roll each portion into a 7-in. circle., In a greased cast-iron or other heavy skillet, cook tortillas over medium heat until lightly browned, 1 minute on each side. Serve warm.

1 1/2 cups all-purpose flour, plus more for dusting
1 teaspoon salt
1/4 cup solid vegetable shortening
4 to 6 tablespoons ice water

Steps:

  • Sift flour and salt together into a medium bowl. Add shortening, and mix in with fingertips until the mixture resembles cornmeal. Add just enough ice water to form a dough. Gather into a ball, wrap in plastic, and place in refrigerator for a few minutes before rolling out.

1 egg

1/2 teaspoon ground cinnamon
1 cup pecans, chopped

Steps:

  • For tart shells, beat butter and cream cheese in small bowl, until smooth.
  • Add flour and salt and mix, until a soft dough forms.
  • Cover; chill at least 1 hour or overnight.
  • Preheat oven to 350 degrees.
  • Shape dough into 1-inch balls.
  • Place balls of dough into cups of ungreased mini-muffin pan.
  • Dip mini tart shaper in flour; press into dough to form tart shell.
  • (Use floured fingers to press dough up sides of muffin cups, if you do not have a tart shaper.) For filling, combine remaining ingredients, except pecans in a small bowl; mix well.
  • Sprinkle pecans into each tart shell.
  • Fill tart shells evenly with filling mixture.
  • Bake 20-25 minutes or until light golden brown.
  • Remove from muffin pan to cooling rack (loosen edges with a knife, if needed).
  • Cool completely.

  • Set oven to 300 degrees.
  • Prepare mini muffin tins.
  • In a bowl mix all ingredients with an electric hand mixer until well blended.
  • Pinch off small pieces of dough (do not roll the dough first) using your fingers pat into the muffin tins to form a "shell".

1/2 cup cream cheese, softened
1 cup all-purpose flour

Steps:

  • Beat butter and cream cheese in a bowl until smooth. Add flour; beat just until a soft dough forms. Form into a ball and wrap in plastic wrap; chill for 1 hour or overnight.
  • Preheat oven to 425 degrees F/220°C.
  • Shape dough into 1"/2.5 cm balls. Place each ball of dough into cups of mini muffin pan. Dip Mini-Tart Shaper into flour; press into dough to form tart shells. Pierce shells with a fork. (If you don't have a Mini-Tart shaper just use your fingers and form into shells).
  • Bake 10-12 minutes or until light golden brown. Cool in pan for 5 minutes; carefully remove tart shells from pan. Cool completely. Fill as desired.
