STUFFED FLANK STEAK

This is a delicious flank steak. The stuffing makes it much more filling, but there's never any left over! Can also be cooked in the microwave. Just cover and cook at medium setting (50 per cent) in a microwave-safe dish for 30 minutes, rotating dish halfway through cooking. Serve with sauce from the pan.

2 cups dry stuffing mix
1 cup boiling water
2 tablespoons butter or margarine
1 ½ pounds flank steak, pounded thin for easy rolling
2 green onions, chopped
1 red bell pepper, chopped
1 (10.5 ounce) can mushroom gravy
¼ cup red wine
1 clove garlic, minced
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine the stuffing mix, water and butter or margarine. Mix well and let stand for 5 minutes. Spoon the stuffing onto the steak, leaving a 1 inch border. Add the green onions and the red bell pepper.
  • Roll from the long edge of the steak and secure with wooden toothpicks. Place steak seam side down in a 9x13 inch baking dish.
  • In a separate small bowl, combine the gravy, wine OR apple juice, garlic and cheese. Mix well and pour over the steak.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, remove from oven and let stand before slicing.

I found several stuffed flank steak recipes here, but none just like this. Although I like quick and easy on weekdays, I love to smell something cooking for a long period of time on the weekends. With a 2 1/2 hour cook time, this gives me the happiness of smelling something cooking for a while!

2 lbs flank steaks
1 (4 ounce) can mushroom stems and pieces
1/2 cup onion, chopped
1/4 cup fresh parsley, chopped
4 slices bacon, finely chopped
2 tablespoons vegetable oil
2 (8 ounce) cans tomato sauce
1 beef bouillon cube
1 teaspoon sugar
1 teaspoon prepared mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper

Steps:

  • Trim any fat from the steak; on one side of the steak, score it in a diamond pattern 1/8 inch deep.
  • Drain mushrooms, reserving the liquid. Combine the mushrooms, onion, parsley, and bacon in a large skillet. Cook over medium heat until the onion is tender, stirring occasionally.
  • Spread the vegetable mixture evenly over unscored side of the steak to within 1 inch of the outside edges. Roll up jellyroll fashion, starting with the short side. Tie with heavy string at 2 inch intervals.
  • Brown the steak roll in vegetable oil in a large Dutch oven. Reduce the heat to low; stir in the reserved mushroom liquid, tomato sauce, and remaining ingredients. Bring the mixture to a boil. Cover, reduce heat, and simmer 2 to 2 1/2 hours or until the meat is tender.

FLANK STEAK WITH ROASTED ROOT VEGETABLES

6 carrots, halved crosswise and lengthwise
4 parsnips, halved crosswise and lengthwise
1 turnip, peeled and cut into 1/2- to 3/4-inch wedges
2 tablespoons extra-virgin olive oil
1 1/2 teaspoons chopped fresh rosemary, plus 1 sprig
Kosher salt and freshly ground pepper
1 flank steak (about 1 1/4 pounds)
2 tablespoons bourbon or low-sodium beef broth
2 tablespoons packed light brown sugar
1 teaspoon horseradish mustard or spicy mustard, plus more for serving
1 clove garlic, smashed
Chopped fresh parsley, for topping

Steps:

  • Position racks in the lower third and top of the oven; preheat the broiler. Toss the carrots, parsnips, turnip, olive oil, chopped rosemary, 1/2 teaspoon salt and a generous amount of pepper on a rimmed baking sheet. Roast on the lower oven rack, 10 minutes.
  • Meanwhile, halve the steak lengthwise and poke a few times on both sides with a fork; transfer to a resealable plastic bag. Add the bourbon, brown sugar, mustard and garlic; tear the rosemary sprig in half and add to the bag. Seal and vigorously massage the ingredients into the meat for 5 minutes to tenderize. Transfer the steak to a foil-lined baking sheet, discarding the marinade. Season with salt and pepper.
  • Leaving the vegetables in the oven, broil the steak until a thermometer inserted sideways into the center registers 125 degrees F to 130 degrees F for medium rare, 4 to 6 minutes per side. Transfer to a cutting board to rest, 5 minutes. Move the vegetables to the top oven rack and broil, stirring occasionally, until lightly charred, 6 to 8 minutes.
  • Slice the meat and serve with the vegetables. Top with parsley and serve with mustard.

1 beef flank steak (about 1-1/2 pounds)
1/8 teaspoon plus 1/2 teaspoon salt, divided
1/8 teaspoon pepper
4 bacon strips, diced
3 leeks (white portion only), sliced
1-1/2 cups chopped sweet yellow pepper
1-1/2 cups chopped celery, divided
1/2 pound baby spinach, torn
1 teaspoon dried thyme
1 teaspoon dried basil
2 garlic cloves, minced
3 tablespoons olive oil
1 medium onion, cut into wedges
1 cup water
1/2 cup beef broth
2 teaspoons tomato paste
1 bay leaf

Steps:

  • Cut steak horizontally from a long side to within 1/2 in. of opposite side. Open steak so it lies flat; cover with plastic wrap. Flatten to 1/4-in. thickness. Remove plastic; sprinkle steak with 1/8 teaspoon salt and pepper. Set aside. In a skillet, cook bacon until crisp. Remove to paper towels. Drain, reserving 2 tablespoons drippings., In the drippings, saute leeks, yellow peppers and 1 cup celery until tender. Stir in spinach, thyme, basil and bacon. Spoon over meat to within 1/2 in. of edges. Roll up tightly jelly-roll style, starting with a long side. Tie with kitchen string., Rub steak with garlic and remaining salt. In a large skillet, brown meat in oil on all sides. Place in a greased shallow roasting pan. Add onion and remaining celery. Combine remaining ingredients; pour over steak. Cover loosely with foil., Bake at 350° for 1 hour. Baste with drippings. Bake, uncovered, 15 minutes longer or until meat is tender. Let stand for 10-15 minutes. Remove string and slice. Discard bay leaf; thicken juices if desired.

5 kalamata olives, pitted and coarse chopped

1 teaspoon Dijon mustard
5 garlic cloves, confit or 1 tablespoon garlic, crushed
1 tablespoon extra-virgin olive oil
1/2 tablespoon red wine vinegar
1/2 teaspoon cracked black pepper
1 -1 1/2 lb flank steak
salt & freshly ground black pepper

1/2 cup water
1 teaspoon Dijon mustard
1 garlic cloves, confit crushed or 1 teaspoon garlic, crushed
1 teaspoon dried rosemary
1 teaspoon olive oil
2 teaspoons canola oil or 2 teaspoons vegetable oil

Steps:

  • Combine all the stuffing ingredients in a food processor and process until they form a smooth paste, about 45 to 60 seconds.
  • Prepare the flank steak by placing between plastic and pounding to a thickness of 1/3 inch; score on one side in a criss-cross pattern.
  • Turn steak over and season well with salt and pepper.
  • Smooth all but 1 tablespoon of the stuffing over the entire steak; reserved stuffing will be used later in a sauce.
  • Roll steak up and tie with kitchen twine in about 3 places.
  • Place the steak, uncovered, in the refrigerator for at least two hours up to overnight (you want the outside to dry a bit and the inside to marinate).
  • Preheat oven to 375 degrees F and bring the steak to room temperature.
  • Heat a large skillet over medium high heat; season steak on all sides generously with salt and pepper and sear well, in a little oil, on all sides.
  • Meanwhile combine reserved stuffing, water, mustard, garlic, rosemary, and oils in a roasting pan or baking dish; place a rack for the meat on top.
  • Place meat on rack, brush with pan juices, and roast to an internal temperature of 120 degrees F, about 15 minutes.
  • Let rest about 15 minutes, then slice into 1/4 inch slices; drizzle with pan sauce and more extra virgin olive oil if desired.
