3 lbs new potatoes, unpeeled and quartered
2 small onions, sliced and separated into rings
1/4 cup olive oil
1 tablespoon caraway seed
1 1/2 teaspoons salt
1 teaspoon pepper

Steps:

  • Combine first 2 ingredients in a large heavy duty zip-top plastic bag.
  • Mix together remaining ingredients and pour into plastic bag.
  • Shake well to coat.
  • Place potato mixture in an ungreased 13x9 inch pan.
  • Bake at 400 degrees for 1 hour or until potatoes are tender, stirring occasionally.

1 kg small baby potatoes
1 dl sugar
25 g butter
1 dl duck grease ((optional))

Steps:

  • Clean the potatoes but leave the peel on. Boil the potatoes in lightly salted water for about 15 minutes. Don't boil them too soft.
  • Peel the potatoes using a knife. Let the potatoes cool off before you proceed. You can with advantage do this the day before you actually need the browned potatoes.
  • Pour the sugar in an even layer on a cold frying pan. Turn on the stove at medium heat and let the sugar melt without stirring in it. Try to avoid using a frying pan with Teflon coating.
  • When the sugar is melted add the butter to the pan and turn up to high heat. Add the potatoes to the sugar/butter mixture.
  • Fry the potatoes in the sugar/butter mixture for about 5-7 minutes. Turn the potatoes constantly. If you are making these potatoes for your Christmas dinner and you have some extra duck grease - then add 1 dl (1/2 cup) of the grease to the pan with the potatoes. This will give the potatoes a great taste and a nice look.
  • When the sugar is sticking evenly to the potatoes they are done.

2 1/2 pounds small red potatoes (about twenty-four, 1 1/2-inches in diameter)
1 tablespoon caraway seeds
1 1/2 tablespoons unsalted butter
2 tablespoons minced fresh parsley leaves

Steps:

  • Peel potatoes and in a 3- to 4-quart saucepan cover with salted cold water by 2 inches. Simmer potatoes until just tender, 12 to 15 minutes, and drain in a colander.
  • While potatoes are cooking, in a small heavy skillet dry-roast seeds over moderate heat, shaking skillet, until fragrant and slightly darker, being careful not to burn them, 3 to 4 minutes. Transfer seeds to a small bowl and cool. With mortar and pestle or in an electric coffee/spice grinder grind seeds coarse.
  • In a heavy skillet melt butter over moderately low heat and add potatoes, stirring and shaking skillet to coat. Sprinkle potatoes with ground seeds, parsley, and salt and pepper to taste and stir, shaking skillet occasionally, to coat.

1 onion, diced
1 cup cheddar cheese
4 large baking potatoes, unpeeled & cut into 2 x 1/2 inch strips

Steps:

  • Combine margarine & seasonings in a large skillet; heat until margarine melts.
  • Add potatoes & onion. Stir well.
  • Cover & cook over medium heat 15 - 20 minutes or until potatoes are lightly browned.
  • Sprinkle with cheese, cover and cook 1 minute until cheese is melted.
  • Serve.

1/4 cup bacon grease
1 dash salt
1 dash pepper
1 tablespoon caraway seed, ground into powder
2 teaspoons paprika

Steps:

  • Coat potatoes and shallots with warmed bacon grease in a bowl.
  • Put potatoes on a baking sheet.
  • Season with salt, pepper, caraway, and paprika.
  • Stir around to coat.
  • Bake uncovered for 30 minutes, stirring every so often.

1/4 cup warm water
1 cup small curd cottage cheese
2 tablespoons sugar
1 tablespoon minced onion
1 tablespoon melted butter
2 tablespoons dill or 2 tablespoons caraway seeds
1 teaspoon salt
1/4 teaspoon baking soda
1 unbeaten egg
2 1/4-2 1/2 cups all-purpose flour

Steps:

  • Soften yeast in the warm water. Set aside.
  • Heat cottage cheese to warm (not hot!); stir in sugar, onion, butter, dill or caraway seeds, salt, soda, and egg.
  • Add the yeast and mix well.
  • Add enough flour to make a stiff dough (not sticky).
  • Let rise in a warm place until doubled.
  • Punch down and shape into two loaves.
  • Put loaves into two well-greased loaf pans and let rise again until doubled.
