Black squid ink pasta is paired with shrimp and scallops in a light white wine sauce in this Halloween-inspired pasta dish.

1/4 cup olive oil
1 pound medium shrimp, shells removed and deveined (tails optional)
12 medium scallops
3 garlic cloves, thinly sliced
1/2 teaspoons red pepper flakes
Kosher salt and freshly ground black pepper
3/4 cup dry white wine
1/3 cup ripe, chopped seeded tomato
1/2 cup chopped fresh parsley leaves
1/4 cup juice from 1 to 2 lemons
1 tablespoon unsalted butter
1 pound squid ink pasta

Steps:

  • Bring a large pot of salted water to a boil. Heat oil in a heavy skillet over medium-high heat until lightly smoking. Add shrimp and sauté until opaque, about 1 minute each side. Remove to a plate. Reheat oil and cook the scallops until they too are opaque and lightly browned, 2 minutes each side. Remove scallops to plate with shrimp and add garlic to pan. Cook, stirring often, until golden, about 2 minutes. Add red pepper flakes, black pepper, salt, wine, tomato, and parsley, and cook over high heat until reduced by half, 8 to 10 minutes. Add lemon juice and butter and return seafood to the skillet, mixing well. Keep warm.

4 cups chicken stock
6 cloves garlic
1 teaspoon saffron
1 1/2 cups mayonnaise
2 tablespoons olive oil
1 tablespoon Piment d'Espelette
Zest and juice of 1 orange
1/4 cup olive oil
1 1/2 pounds Spanish chorizo
1 1/2 pounds squid (tubes and tentacles)
1 cup diced shallot
8 cloves garlic
1 1/2 cups halved cherry tomatoes
1/2 cup Castelvetrano olives
2 cups Bomba rice
1/2 cup white wine
3 teaspoons squid ink
2 teaspoons paprika
1/4 cup fresh parsley leaves
1/4 cup fresh chive batons (1-inch pieces)

Steps:

  • For the saffron mayo: Add chicken stock and 1 cup water to a medium pot and bring to a simmer. Keep on low heat until ready to use. Poach garlic in the pot of stock and water for 5 minutes, then remove from the stock (keep the stock over low heat).
  • Pour 2 spoons of the hot stock over the saffron in a small bowl to bloom it. Add saffron stock, garlic cloves, mayonnaise, olive oil, Piment d'Espelette and orange zest and juice to a blender and puree until smooth. Set aside.
  • For the paella: Heat a paella pan over medium-high heat and add olive oil to coat. Once oil shimmers, add chorizo and squid and cook, stirring, until squid begins to brown and chorizo renders out some of the fat. Remove chorizo and squid from pan and set aside.
  • Reduce heat to medium and add shallots, garlic, cherry tomatoes and olives. Stir to combine and cook until shallots become translucent and tomatoes begin to burst, about 4 minutes. Add the rice and mix to coat, then cook for an additional 2 minutes. Add the white wine and bring to a boil, then reduce down to a simmer. Add the squid ink, paprika and warmed stock and mix to combine. Turn heat to medium and allow to cook, uncovered, without stirring, until you can hear some sizzling at the bottom of the pan and it starts to crisp on the bottom, for about 25 minutes. Add the chorizo and squid back to the pan and distribute evenly on top. When squid is heated through, remove paella from heat and serve right out of the pan. Serve with dollops of saffron mayo, parsley and chives.

5 shrimp, sliced in half lengthwise, peeled and deveined, reserving shrimp shells for sauce
3 tablespoons olive oil, plus more for garnish
1/2 fennel, sliced (save fronds for garnish)
1/2 red onion, sliced
Kosher salt
Pinch crushed red pepper flakes
10 heirloom cherry tomatoes, sliced in half
2 large cloves garlic, smashed
2 sprigs oregano, leaves chopped finely
1/2 cup white wine
4 squid, cut in half lengthwise for 2 sets of 4 legs
1/2 bunch parsley, leaves chopped finely
Grated Parmesan, for garnish
Squid Ink Pasta, recipe follows
3 cups flour
5 large eggs (heirloom or organic)
1 large egg yolk
1/4 cup extra-virgin olive oil
1/4 cup squid ink
Kosher salt

Steps:

  • Add the shrimp shells to a small pot and cover with water. Bring to a boil and allow to simmer until it has reduced by half. Strain and keep on the heat at a low simmer until ready to use.
  • Add the olive oil, fennel, onions, a pinch of salt and crushed red pepper flakes in a saute pan over medium heat. Let the fennel and onions cook until translucent. Then add the tomatoes, garlic, oregano and white wine. Let it reduce until there is about 1/4 cup of liquid left. Then add the squid, shrimp and 1/2 cup of the shrimp stock. Stir in the parsley.
  • Cook the fresh squid ink pasta in salted boiling water until tender, but still has a bite. Add the cooked pasta to the saute pan and toss to coat. Garnish the pasta with fennel fronds, a drizzle of olive oil and grated Parmesan.
  • Mound the flour on a clean, dry work surface. Make a hole (this is also called a well) in the center of the flour pile that is about 8 inches wide (bigger is definitely is better here). Crack the eggs into the hole and add the egg yolk, olive oil, squid ink and some salt.
  • Using a fork, beat the eggs together with the olive oil, squid ink and salt; then begin to incorporate the flour into the egg mixture, being careful not to break the sides of the well or else the egg mixture will run all over your board and you will have a big mess! Also, don't worry about the lumps. When enough flour has been incorporated into the egg mixture that it will not run all over the place, begin to use your hands to really get everything well combined. If the mixture is tight and dry, wet your hands and begin kneading with wet hands. When the mixture has really come together into a homogeneous mixture, THEN you can start kneading.
  • When kneading, it is VERY important to put your body weight into it; get on top of the dough to really stretch it and not to tear the dough. Using the heels of your palms, roll the dough to create a very smooooooth, supple dough. When done, the dough should look VERY smooth and feel almost velvety. Kneading will usually take from 8 to 10 minutes for an experienced kneader, or 10 to 15 minutes for an inexperienced kneader. Put your body weight into it; you need to knead! This is where the perfect, toothsome texture of your pasta is formed. Get in there and have fun!
  • When the pasta has been kneaded to the perfect consistency, wrap it in plastic and let it rest for at least 20 to 30 minutes. If using immediately, do not refrigerate.
  • Roll and cut the pasta into the desired shape.
