8 cups low sodium vegetable broth
3 cups broccoli florets
2 cups cauliflower florets
2 medium zucchini (sliced)
1 large red onion (diced)
2 14.5 oz canned diced tomatoes, in juice
4 cloves garlic minced
2 large carrots (peeled & diced)
1 large red bell pepper
1 large green bell pepper
3 tbsp tomato paste
2 bay leaves (fresh or dry)
2 tsp Italian seasoning

Steps:

  • In a large pot drizzle in the olive oil, and turn the heat to medium
  • Once the oil is nice & hot, add in the onions and cook for 2 minutes.
  • Add in the garlic, and cook for about 1 more minute.
  • Add in the carrots, and bell peppers. Stir and cook for 3 minutes.
  • Now add in the tomato paste, and pour in the tomatoes with juice, and broth.
  • Stir the ingredients, then add in the bay leaves and seasonings.
  • Simmer for 8 - 10 minutes.
  • Toss in the broccoli , cauliflower, and zucchini.
  • Simmer until tender.
  • Fish out the bay leaves.
  • Serve & enjoy!

1 teaspoon olive oil (or butter)
1 small onion (diced)
2 cloves garlic (minced)
4 cups cabbage (chopped, approx. ¼ head of cabbage)
1 cup carrots (diced)
1 cup green beans (cut into 1″ pieces)
2 whole bell peppers (chopped)
2 cups cauliflower florets (or broccoli)
28 ounces low sodium diced tomatoes (with juice)
6 cups low sodium beef broth
2 tablespoons tomato paste
2 bay leaves
½ teaspoon thyme
½ teaspoon basil
pepper to taste
2 cups zucchini (sliced)

Steps:

  • Heat olive oil in a large pot over medium heat. Add onion & garlic and cook until slightly softened, about 3 minutes.
  • Add cabbage, carrots, & green beans and cook for an additional 5 minutes.
  • Stir in bell peppers, cauliflower, undrained tomatoes, broth, tomato paste, bay leaves, and seasonings. Simmer 8-10 minutes.
  • Add in zucchini, simmer an additional 5 minutes or until softened.
  • Remove bay leaves before serving.

Extra Virgin Olive oil (I used Private Reserve Greek EVOO)
8 oz sliced baby bella mushrooms
1 bunch flat leaf parsley, washed, dried, stems and leaves separated, then each chopped
1 medium-size yellow or red onion, chopped
2 garlic cloves, chopped
2 celery ribs, chopped
2 carrots, peeled, chopped
2 medium zucchini, tops removed, sliced into rounds or half-moons or diced
2 golden potatoes, peeled, small diced
1 tsp ground coriander
1/2 tsp turmeric powder
1/2 tsp sweet paprika
1/2 tsp dry thyme
Salt and pepper
1 32-oz can whole peeled tomatoes
1 15-oz can chickpeas, rinsed and drained
2 bay leaves
6 cups low-sodium vegetable or chicken broth
Zest of 1 lime
Juice of 1 lime
1/3 cup toasted pine nuts (optional)

Steps:

  • In a large pot like this one (affiliate) heat 1 tbsp olive oil over medium-high until shimmering but not smoking. Add the mushrooms and cook for 3-5 minutes, stirring regularly. Remove from the pot and set aside from now.
  • Add more olive oil, if needed and heat. Add the chopped parsley stems (stems only at this point), onions, garlic, celery, carrots, zucchini and small diced potatoes. Stir in the spices, and season with salt and pepper. Cook for about 7 minutes, stirring regularly, until the vegetables have softened a bit.
  • Now add the chickpeas, tomatoes, bay leaves, and broth. Bring to a boil for 5 minutes, then turn the heat down to medium-low. Cover only partway and cook for 15 more minutes.
  • Uncover and add the sauteed mushrooms. Cook for just a few more minutes until mushrooms are warmed through.
  • Finally, stir in the parsley leaves, lime zest, and lime juice.
  • Remove from the heat. Remove bay leaves. Transfer the vegetable soup to serving bowls and top with toasted pine nuts, if you like. Add a side of your favorite crusty bread or pita along with extra lime wedges and crushed red pepper. Enjoy!

3 cups crushed plum tomatoes
2 1/2 cups pasta sauce
1/2 cup tomato paste (1 small can)
6 green onions
2 cups beef broth
1 bunch celery & tops
2 cups fresh green beans
2 green bell peppers
2 lbs carrots
2 teaspoons chili powder
1 teaspoon coarse salt
2 teaspoons paprika
1/8 teaspoon cayenne pepper
2 teaspoons prepared mustard
1 teaspoon ground black pepper

Steps:

  • In a very large stock pot, combine tomatoes, pasta sauce, tomato paste and beef broth.
  • Over med/high heat, bring mixture to a boil.
  • Reduce heat and simmer covered for 15 minutes.
  • Wash and rough chop carrots, celery (including tops), and green peppers into 1 inch cubes.
  • Wash, trim and cut green beans into 1 inch lengths.
  • Chop green onion into 1/4 inch lengths.
  • Add all vegetables to simmering pot.
  • Stir to combine.
  • Add chili powder, cayenne, mustard, salt, black pepper and paprika to soup mixture.
  • Stir and simmer on low for 60 - 90 minutes.

This was posted by a fellow SBDer, Mamacita, in the 3 Fat Chicks on a Diet boards. It's a wonderfully delicious, simple, vegetable soup. It originally called for zucchini, but I leave it out as I dislike summer squash. Feel free to add some in if you like, though. I sometimes add in a can of navy beans, rinsed and drained, with the tomatoes. For South Beach Diet, make sure your tomatoes have no added sugar. It makes quite a bit, but it reheats fairly well--or you can cool and freeze it. Don't be afraid of the garlic--it mellows out a lot during cooking.

1 small head green cabbage, shredded (I use angel hair shredded cabbage) or 1 (10 ounce) bag shredded cabbage for Coleslaw (I use angel hair shredded cabbage)
1 head celery, washed and sliced
1 leek, rinsed, trimmed, and sliced thinly
5 garlic cloves, peeled and minced
1 cup fresh green beans, cut into 2-inch lengths
1 medium zucchini, cut into 1/4 inch rounds (I leave out)
1 medium summer squash, cut into 1/4 inch rounds (I leave out)
1 (15 ounce) can diced tomatoes, drained
1 (14 1/2 ounce) can navy beans, rinsed and drained (optional)
shredded parmesan cheese, optional garnish (optional)
basil pesto, optional garnish (optional)

Steps:

  • Combine broth, cabbage, celery, leek, garlic, and green beans in an 8-quart soup pot. Bring to a boil, reduce heat, and simmer until green beans are just tender.
  • Add tomatoes, zucchini, and squash (and navy beans, if using) and cook an additional 45 minutes.
  • Serve hot, sprinkled with Parmesan cheese or with a spoonful of pesto stirred in, as desired.
