Air Fryer Vegetable Kabobs are perfect game day fare that is also perfectly healthy.

1 cup (75g) button mushrooms
1 cup (200g) grape tomatoes ( or cherry tomatoes)
1 small zucchini (cut into chunks)
1/2 tsp ground cumin
1/2 bell pepper (sliced)
1 small onion (cut into chunks (or 3-4 small shallots, halved))
Salt (to taste)

Steps:

  • soak skewers in water for at least 10 mins before using.
  • Preheat air fryer to 390F / 198C.
  • Thread vegetables onto the skewers.
  • Place skewers in air fryer and make sure they are not touching. If air fryer basket is small, you may need to cut the ends of the skewers to fit.
  • Cook for 10 mins, turning half way through the cook time. Since air fryer temperatures can vary, start with less time and then add more as needed.
  • Transfer veggie kabobs to a plate and serve.
  • Preheat the grill (or barbecue) to medium.
  • Oil the grill plate (make sure use an oil approved for your dietary considerations).
  • Place kabobs on a griddle on the hot barbecue or grill.
  • Cook for 2-3 mins on each side until they are cooked through.
  • Transfer to a plate and serve.

2 large red bell peppers, cut into 2-inch pieces
1 large pineapple, peeled and cut into 2-inch pieces
1 large red onion, cut into 2-inch pieces
Olive oil, for drizzling
1 tablespoon olive oil
1 tablespoon honey
1 teaspoon cumin
Juice of 1 lime
1/2 bunch fresh cilantro chopped

Steps:

  • Heat a grill pan over medium-high heat.
  • For the kabobs: Thread 1 piece of red pepper, 1 piece of pineapple and 1 piece of red onion on a metal skewer. Repeat the process until you reach the end of the skewer. Continue with the remaining fruit, vegetables and skewers.
  • Drizzle the grill pan with olive oil and grill the kabobs until all sides have char marks, 3 minutes on each side, 12 minutes total.
  • For the honey-lime vinaigrette: Add the olive oil, honey, cumin, lime juice and cilantro to a small bowl and mix until combined. Drizzle the vinaigrette over the grilled kabobs.

Marinade, recipe follows
1/2 cup olive oil
1/2 cup lemon or lime juice
1/4 cup water
1/4 cup Dijon mustard

1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Cook potatoes in salted water until fork tender; let cool and cut into 1-inch chunks. Place potatoes and the vegetables in a shallow dish or container. Pour Marinade over vegetables. Cover and refrigerate for 2 hours.
  • Preheat an outdoor grill to medium heat.
  • Remove vegetables from the Marinade, reserving Marinade. Thread vegetables onto skewers, alternating colors. Cook skewers on grill until vegetables are lightly charred all over, about 10 minutes, basting with reserved Marinade and turning occasionally.
  • Whisk together all ingredients in a small bowl. The marinade can be prepared in advance and held covered in the refrigerator for up to 7 days.

1 green pepper
1 red pepper

1/2 lb button mushroom
4 tablespoons olive oil
2 tablespoons balsamic vinegar

  • Wash veggies well; cut into 1-inch pieces.
  • Mix olive oil, vinegar, salt and pepper (to your liking) in a small bowl.

1/3 cup frozen orange juice concentrate (thawed)
2 tablespoons white wine vinegar or 2 tablespoons balsamic vinegar

1 lb lean boneless pork (I use butterfly pork loins)

This is a beautiful appetizer dish or side dish. It's great for potlucks and it always gets lots of compliments. The key is to use the freshest of ingredients. I buy the fresh basil and tomatoes from my farmer's market or (if it's winter) our local fresh market. NOTE: If you can't find little cherry sized mozzarella, you can buy the large sized balls and cut them into bite sized pieces.

1/4 cup extra virgin olive oil
1 lemon, juice of
2/3 cup chopped fresh basil
1/2-3/4 teaspoon sea salt

2 (8 ounce) packages ciliegine fresh mozzarella cheese (little cherry sized)
bamboo skewer, 6 inch size

Steps:

  • Whisk lemon juice with salt and pepper, then gradually add oil while whisking vigorously. Whisk in basil.

  • Chili Beef: Toss cubed beef tri-tip with 3 tablespoons each brown sugar and chili powder, 1 tablespoon salt, and 1/2 teaspoon each fresh thyme and pepper; marinate.
  • Bacon-Beef: Boil bacon strips 5 minutes, then cut into pieces. Skewer cubed beef tri-tip, onion and bell pepper with cherry tomatoes and the bacon; season with salt and pepper.
  • Hungarian Beef: Marinate cubed beef tri-tip in 1/2 cup olive oil, 2 smashed garlic cloves, a pinch of salt, 1/2 teaspoon paprika and 2 teaspoons crushed caraway seeds.
  • Buccaneer Pork: Boil 1 cup water, 3 tablespoons each salt and brown sugar, 2 teaspoons pickling spices and 4 garlic cloves. Add 1 cup rum, then cool.
