Steps:

  • Cut 1 pound each carrots and parsnips into fries (cut around the parsnips' cores); toss with 1 tablespoon vegetable oil and 1 teaspoon each lemon-pepper seasoning and kosher salt. Toss with 2 beaten egg whites, then coat in 1/2 cup panko breadcrumbs. Spread out on 2 baking sheets. Bake at 400 degrees F, stirring once, until crisp, about 35 minutes.

3 tablespoons cooking oil
4 to 6 garlic cloves, minced
1/2 cup diced yellow onion
2 large eggs, lightly beaten
4 cups day-old rice, long grain or jasmine
1/2 cup sliced carrot (cut into half coins)
1/2 cup diced bell pepper
2 tablespoons oyster sauce
1/2 tablespoon soy sauce
1/2 tablespoon sugar
2 teaspoons white pepper
1/2 teaspoon salt
2 to 3 green onions, chopped

Steps:

  • In a large skillet, heat the oil until a wisp of white smoke appears. Add the garlic and onion, saute 30 seconds. Add the beaten eggs and immediately add the rice, gently press down in small circles to separate the rice grains.
  • Stir in the carrot and bell pepper and cook for about 1 minute. Don't be afraid to scrape rice stuck to the bottom of the pan. Fold in the oyster sauce, soy sauce, sugar, white pepper and salt. Continue to stir and fold for about 2 more minutes. Cook until the rice absorbs the sauces and is slightly crisp on the edges.
  • Fold in the green onions and serve immediately.

2 tablespoons vegetable oil
1 large egg, beaten
Kosher salt
2 cups baby spinach
1/2 cup chopped broccoli florets
1/2 cup chopped red bell pepper
1/4 cup shredded carrots
1/4 cup thinly sliced snow peas
1 teaspoon minced garlic
1 teaspoon finely grated fresh ginger
1 teaspoon soy sauce
3 cups cold cooked long-grain white rice
1 teaspoon toasted sesame oil

Steps:

  • Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that's only half set, about 10 seconds; scoop onto a plate.
  • Add the remaining tablespoon oil, then add the spinach, broccoli, bell pepper, carrots, snow peas, garlic, ginger, soy sauce and 1/4 teaspoon salt and stir-fry until crisp-tender, about 2 minutes.
  • Add the rice, stirring to break up any clumps, and spread it out in the skillet. Cook until heated through, about 3 minutes. Return the egg to the skillet and cook, stirring and breaking up the egg, to mix it in thoroughly, about 1 minute. Season with additional salt if needed. Stir in the sesame oil and serve.

1 tablespoon chopped fresh cilantro (optional)
scallion, strips (optional)

Steps:

  • Mix soy sauce and lime juice; set aside.
  • In skillet, heat oil over medium heat.
  • Add onion and garlic; cook, stirring, 1 minute.
  • Stir in red pepper and carrots; cook until crisp-tender, 2-3 minutes.
  • Add rice; cook, stirring, 2 minutes.

1 large turnip
1 teaspoon chili powder
1/2 teaspoon salt
2 tablespoons olive oil

Steps:

  • Peel and cut the sweet potato and turnip into 1/4" strips.
  • Place in a bowl and sprinkle with the combined salt, chili powder and olive oil, turning to coat thoroughly.
  • Spread in one layer on a foil-lined cookie sheet with sides.
  • Bake 375 degrees, 12-15 minutes. Turn and bake an additional 12-15 minutes. Test to make sure they are cooked through.

1 cup flour
1 cup yellow cornmeal
milk
salt and pepper
1 cup flour
1 cup yellow cornmeal

Steps:

  • Cut veggies into strips or slices except for the okra; leave whole.
  • Place vegetables in a bowl of cold water until ready to use.
  • Meanwhile in a medium mixing bowl add one cup flour and one cup yellow cornmeal (non self-rising cornmeal) and enough milk to make a batter.
  • Salt and pepper veggies and place in batter mixture.
  • In a large plastic bag add one cup flour and one cup yellow cornmeal, shaking to mix.
  • Add veggies a few at a time and deep fry in hot oil (375 degrees) until golden brown, about 2 to 3 minutes.
  • Drain veggies on paper towel, serve hot.
