- For the crust: Preheat the oven to 350 degrees F.
- In medium bowl, stir together the cracker crumbs, sugar and the melted butter until combined and resembles a wet sand mixture. Pour into a pie plate and press the mixture firmly along the bottom and sides. Bake for 7 to 8 minutes. Remove from the oven and let cool completely.
- For the filling: In a large bowl, add the sweetened condensed milk and whipped topping. Fold the two together gently until combined, being careful to keep the mixture light and fluffy. - Preheat oven to 325 degrees F (165 degrees C). Mix graham cracker crumbs with sugar and melted butter. Press into 9 inch pie plate and bake for 5 minutes. Remove from oven and let cool.
- Separate 2 of the eggs, placing the two egg whites into a mixing bowl. Reserve the yolks in another bowl.

FLUFFY KEY LIME PIE FROM TOH (LIGHTER VERSION)
Got this on-line from Taste of Home, a little differant from other recipes with no condensed milk. It's described as low in fat, sugar and fuss, doesn't get any easier than that and would be a good desert for my Mom who is a diabetic. Diabetic exchanges reported as 1 starch, 1 fruit and 1 fat. Finally got around to making this and for a light version it's very good, fluffy and tart and pretty simple. A nice treat for those warm summer evenings. I couldn't find the prepared graham crust so used recipe#338535 and made it with splenda and it turned out great.

- Preheat oven to 375 degrees. Place a 9-by-1 1/2-inch flan ring or the ring of a springform pan on a baking sheet lined with parchment paper; set aside.
- On a lightly floured surface, roll out dough to 1/8 inch thick. Cut into a 10 1/2-inch round, and fit into ring, pressing up sides. Refrigerate until firm, about 30 minutes. Trim sides of dough to 1 inch. Line with parchment paper. Fill with pie weights or dried beans. Bake shell until dry and beginning to brown around edges, 25 to 30 minutes. Remove parchment and weights; continue baking until pale golden brown and cooked through, about 5 minutes more. Transfer to a wire rack, and let cool completely.
- Put 1 1/3 cups sugar, the cornstarch, flour, and 1/4 teaspoon salt into a medium saucepan; whisk in 1 3/4 cups water. Bring to a boil over high heat, whisking constantly. Cook, whisking, until thickened, about 3 minutes. Add 2 teaspoons zest, the lemon juice, and ginger; whisk to combine. Remove from heat, and add egg yolks. Return to heat, and cook, whisking, until bubbling in center, 2 to 3 minutes. Pour through a medium sieve into a medium bowl. Stir in remaining teaspoon zest. Let stand 20 minutes, stirring occasionally. Pour into cooled shell. Refrigerate until set, at least 2 hours or overnight.
- Stir together remaining 1/2 cup sugar, the egg whites, and a pinch of salt in a heatproof bowl set over a pan of simmering water. Cook, whisking constantly, until sugar has dissolved. Transfer to the bowl of the electric mixer fitted with the whisk attachment, and beat on medium speed until foamy. Add cream of tartar, and beat on high speed until medium glossy peaks form, about 3 minutes.
- Heap meringue on top of chilled filling, leaving a 1-inch border. Place under broiler or use a kitchen torch to brown. Serve immediately.
LIGHT LEMON PIE
DH loves lemon icebox pie and being a diabetic enjoying that pie can be a challenge. This is an adaption of a Taste of Home recipe that I found. This is like having lemon mousse in a crust. Please note that the cooking time is the time need to chill the pie before serving.

- Preheat oven to 350 degrees.
- In a blender or food processor container, crumble the graham crackers and process until crumb consistency, gladly add in the melted margarine and continue processing until combined.
- Press the mixture into a 9-inch pie plate and bake in preheated oven for 5 to 8 minutes; allow to cool completely before adding the filling.
- In a small mixing bowl, combine the boiling water and stir the gelatin for 3 to 4 minutes or until dissolved.
- Add enough ice cubes to the cold water so that the water measures 3/4 cup, add to the gelatin mixture and continue to stir until ice is melted and the gelatin thickens.
- In blender container, combine the cottage cheese with Splenda granular and process until smooth, scraping sides of container as needed; add in the thickened gelatin and process lightly to combine well.
- Gently fold the whipped topping into the cottage cheese mixture, combining well; pour into cooled crust and place in refrigerator to chill for at least 4 hours before serving.
- To serve, cut the pie into 8 equal slice, place on plate, warm the spreadable fruit and drizzle a few tablespoons over each slice of pie.
- Make strawberry fans by cutting from tip to stem 3 to 4 times depending on size of strawberries, without cutting completely through the stem, fan the strawberries and place on plate with pie slices.

- Mix Graham cracker crumbs, 1 tablespoon sugar, and melted butter or margarine.
- Press Graham cracker crumb mixture into the bottom of a 9"x13" pan. (You do not need to grease the pan.).
- Mix lemon Jello with 2 cups boiling water until Jello is dissolved.
- Add cream cheese to Jello mixture, breaking cheese up with a potato masher or the beaters of an electric mixer.
- In a chilled bowl (glass or metal work best) whip with electric mixer chilled evaporated milk with 1 tablespoon sugar until small peaks form. (Getting peaks to form is much easier if the bowl and milk are cold.).
- Add Jello mixture to evaporated milk and continue to beat until well blended.
- Pour over Graham cracker crust.

You can use your fingers or gently use a small glass. You have a bit of flexibility with the size of dish. Bake for 8 minutes, or until golden brown and fragrant. Cool completely.
- In a large bowl, whip heavy whipping cream with sugar until somewhat stiff peaks form. Be careful not to overwhip it into butter! Set aside.
- Before serving, top with additional whipped cream (at least 1/2 cup of cream whipped with 1 teaspoon of sugar) and lime zest (optional). Enjoy! :)
