Categories     Dinner     Main Course

Time 1h10m

Number Of Ingredients 11

1 tablespoon extra-virgin olive oil
1 pound sweet or hot Italian sausage (casings removed)
1 teaspoon fennel seeds
24 ounces jar marinara sauce
Kosher salt and freshly ground pepper
1 pound rigatoni or other short pasta
1 pound broccoli rabe (chopped)
1/3 cup heavy cream
1 pound mozzarella (torn into bite-size pieces)
2/3 cup finely grated parmesan cheese
Basil leaves (for garnish)

Steps:

  • Preheat the oven to 400°F. In a large, deep, ovenproof skillet or braiser pan, cook the sausage in the olive oil over medium-high heat, breaking up the meat with a wooden spoon, until nicely browned and cooked through, 8 to 10 minutes. Add the fennel seeds and cook until fragrant, about 1 minute. Add the marinara sauce and bring to a simmer. Season the sauce with salt and pepper.
  • In a pot of boiling water, cook the pasta 2 minutes less than the package suggests. Add the broccoli rabe and cook with the pasta for 1 minute. Scoop out ¾ cup of the pasta water, then drain the pasta in a colander. Return the pasta and broccoli rabe to the pot. Fold in the sauce, heavy cream, reserved pasta water, and half of the mozzarella and parmesan cheeses.
  • Transfer the mixture to the skillet or braiser pan and scatter the remaining cheeses on top. Bake for 25 to 30 minutes, until bubbling and browned. Let stand for a few minutes, then garnish with basil and serve.

ORECCHIETTE WITH SAUSAGE AND BROCCOLI RABE

Orecchiette with Sausage and Broccoli Rabe image

A wonderful, flavorful pasta dish from New York's famous Italian restaurant Rao's. Orecchiette pasta with hot and sweet Italian sausages, garlic, broccoli rabe and Pecorino cheese. Easy to throw together and excellent for a special occasion.

Provided by Lisa

Categories     Main Dish

Time 35m

Number Of Ingredients 9

1 pound of broccoli rabe (1 bunch)
1/4 cup extra virgin olive oil
5 large garlic cloves, peeled and finely chopped
1/4 teaspoon crushed red pepper flakes (or 1/2 teaspoon Aleppo pepper flakes)
1 pound Italian sausage, (3-4) a mix of sweet and hot, to your taste, casings removed, cut or chopped into bite-size pieces.
1 cup of broccoli rabe water - reserved from when you blanch the broccoli rabe
Salt and black pepper, to taste
I pound of dried orecchiette pasta
Pecorino Romano cheese, freshly-grated

Steps:

  • To blanch the broccoli rabe, fill a large bowl with ice water and set it aside. Bring a large pot of salted water to a boil. Cut away a couple of inches of the thicker tough stems of the broccoli rabe, leaving the tender stems, buds and leaves. Cut or pull the leaves off the stems and tear the leaves into large pieces. Boil broccoli rabe for 2-3 minutes until it's bright green and the stems are crisp-tender. IMPORTANT: Reserve one cup of the cooking water. Drain broccoli rabe in a colander and quickly plunge it into the ice water to stop the cooking process. When cool, drain and set aside.
  • To make the pan sauce, heat olive oil in a large heavy skillet over medium high heat. Add garlic, red pepper flakes and sausages and sauté, stirring often, until the sausages are cooked through and browned in spots.
  • Add the broccoli rabe to the skillet, along with the cup of broccoli rabe water, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Turn heat to high and cook, stirring, until sauce is hot.
  • Meanwhile, cook the orecchiette per package instructions, until al dente (cooked through but still firm to the bite.)
  • Drain Orecchiette and return it to its cooking pot. Add 1/3 of the sausage-broccoli rabe sauce and toss over high heat. When combined and hot, remove from heat and mound onto a platter or into individual bowls. Top with remaining sauce and a generous sprinkle of Pecorino cheese.

PASTA WITH SPICY SAUSAGE, BROCCOLI RABE AND CHICKPEAS

Pasta With Spicy Sausage, Broccoli Rabe and Chickpeas image

In this hearty weeknight pasta recipe, chickpeas contribute an earthy, nutty flavor to the classic combination of sausage and broccoli rabe. The addition of Parmesan, butter, and lemon juice just before serving balances the heat from the sausage with a bit of richness, creating a bright and flavorful sauce in the process. This pasta is incredibly versatile: You can use any sturdy greens or even broccoli in place of the broccoli rabe, and feel free to swap in whatever pasta shape and canned beans you have on hand. You can even substitute sweet Italian sausage or ground pork or turkey for the sausage in a pinch; add about 1/2 teaspoon red-pepper flakes to give this dish its spicy kick.

Categories     dinner, easy, weeknight, beans, meat, pastas, vegetables, main course

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 11

Kosher salt and black pepper
1 1/2 pounds broccoli rabe or broccoli, chopped, tough stems discarded, or hearty greens like kale or escarole
1 pound shaped pasta, such as campanelle or orecchiette
2 tablespoons olive oil
1 pound hot Italian sausage, casings removed, or sweet Italian sausage, ground pork or turkey
3 garlic cloves, minced (about 1 tablespoon)
1/2 cup dry white wine or chicken stock
1 (15-ounce) can chickpeas or other white beans, rinsed and drained
2 tablespoons unsalted butter
1/2 cup grated Parmesan or pecorino, plus more for serving
1 lemon, zested and juiced

Steps:

  • Bring a large pot of salted water to a boil. Roughly chop the broccoli rabe, add it to the pot, and cook for 3 minutes. Use a sieve or slotted spoon to lift the broccoli rabe from the water and place it in a colander to drain.
  • Bring the water back to a boil. Cook the pasta according to package instructions until al dente, reserve 1 cup pasta water, then drain pasta.
  • Meanwhile, in a large Dutch oven or deep, 12-inch skillet, heat the olive oil over medium-high. Add the sausage and cook, breaking it up with a wooden spoon, until browned, 3 to 5 minutes. (Don't worry if the sausage is not completely cooked through.) Add the garlic and cook for 30 seconds.
  • Add the wine and cook, scraping any bits from the bottom of the pan, until the wine is reduced by half, about 1 minute.
  • Add the broccoli rabe, chickpeas, 1 teaspoon salt and 1/2 teaspoon pepper to the skillet and cook over medium heat, stirring often, until the sausage is cooked through and the broccoli rabe is very tender, about 3 minutes.
  • Add the pasta and 1/2 cup of the reserved pasta water, toss well, and cook over low heat until the sauce comes together, about 1 to 2 minutes. Add additional pasta water, a few tablespoons at a time, if needed for moisture.
  • Remove the pan from the heat, add the butter, Parmesan, lemon zest and lemon juice, and toss until the butter is melted. Divide pasta among shallow bowls and top with additional cheese sprinkled on top.

¼ cup plus 1 Tbsp. extra-virgin olive oil
1 lb. sweet or hot Italian sausage, casings removed
6 garlic cloves, coarsely chopped
1 Tbsp. finely chopped sage, plus 10 leaves for serving
½ tsp. crushed red pepper flakes
2 cups half-and-half
12 oz. Fontina and/or aged cheddar, coarsely grated, divided
1 lb. ridged medium pasta shells (such as lumaconi) or large tube pasta (such as rigatoni)
1 bunch broccoli rabe, stems cut into 2" pieces, leafy ends left long

Steps:

  • Place racks in middle and upper third of oven; preheat to 325°F. Heat a large, deep ovenproof skillet over medium-high. Pour in ¼ cup oil; add sausage and break up into small pieces. Cook, undisturbed, until browned underneath, about 4 minutes. Stir a few times; cook, undisturbed, until cooked through, about 3 minutes.
  • Add garlic, chopped sage, and red pepper flakes to sausage and cook, stirring, until garlic is golden, about 2 minutes. Mix in half-and-half and simmer until thickened slightly, about 2 minutes. Cook, stirring, until sauce is smooth and thick, about 3 minutes; season with salt. Remove from heat.
  • Meanwhile, cook pasta in a pot of boiling salted water, stirring occasionally and adding broccoli rabe during the last 2 minutes, until very al dente, about 2 minutes less than package directions. Drain in a colander, shaking well. Return pasta and broccoli rabe to pot.
  • Add sausage mixture to pasta and toss to coat; transfer to skillet. Cover with foil and bake on middle rack until pasta is al dente and sauce is bubbling, 30-40 minutes. Remove from oven. Heat broiler.
  • Top pasta with remaining cheese. Toss sage leaves and remaining 1 Tbsp. oil in a small bowl; arrange over pasta. Broil on upper rack until cheese is browned in spots, about 5 minutes. Let cool slightly before serving.

Orecchiette With Broccoli Rabe and Sausage image

This is from "Lidia's Italian Table: Italian American Favorites" by Lidia Matticchio Bastianich, author and host of the PBS television series of the same name. The shape of the pasta (orecchiette means "little ears" ) soaks up the flavorful sauce. This is a one-dish meal, very hearty and very satisfying. Serve with lots of crusty bread to soak up the sauce.

Provided by Maxine

Time 35m

Yield 4

Number Of Ingredients 7

2 lbs of sausage (hot and sweet sausage each)
2 bunches of broccoli rabe
2 tablespoons of minced garlic
1 can of diced tomato
1 lb of orecchiette pasta
Olive oil
Salt, pepper, parmesan and red pepper flakes as you like

Steps:

  • Start by blanching the broccoli rabe in a deep pan of boiling water. Put the broccoli rabe in for 2 minutes and take it out. When you are done, use tongs to take the broccoli rabe out and set aside. Do not strain the water as we will be cooking the pasta inside the same pot of water!
  • Take the sausage out of the casing and then cutting the sausage into bite sized pieces. In a large pan, place 1 tablespoon of olive oil and 1 tablespoon of minced garlic. Wait until the garlic browns and then add the sausage. Cook the sausage for 8 minutes, stirring occasionally.
  • Pour in the diced tomatoes. Stir for 4 minutes and place the blanched broccoli rabe into the sausage mixture. Add salt, pepper and red pepper flakes to your liking. Stir everything until the sausage is cooked, about an extra 10 minutes. The sausage will be ready when the outside of the sausages are a deep golden brown and the inside is pale but with no sign of pink or blood.
  • Cook the pasta in the same broccoli rabe water and put the pasta back into the pot according to package instructions. When both the sausage mixture and pasta are done, combine and enjoy! Top with parmesan cheese and red pepper flakes to your liking.

Season with salt and black pepper. Once all of the broccoli rabe has been added, cook, stirring occasionally, until bright green and wilted, about 2 minutes. Remove pot from heat and set aside.
  • Add pasta to reserved broccoli rabe mixture along with cream, three-quarters of the cheese, ½ cup chives, and reserved pasta cooking liquid; mix well. Season with salt and black pepper and add more red pepper flakes if you prefer more heat (keep in mind that the saltiness and spiciness will increase as the pasta bakes).

  • When the broccoli rabe is drained well, give it a rough chop on a clean cutting board and set aside.

  • In a large pot of boiling salted water, cook the broccoli rabe until tender, about 3 minutes. Using a slotted spoon, transfer the broccoli rabe to a colander; save the pot of boiling water to cook the pasta. When the broccoli rabe is cool enough to handle, squeeze dry and coarsely chop it.
  • In a large, deep skillet, heat 1 tablespoon of the olive oil. Prick the sausages with a knife. Add them to the skillet, cover and cook over moderate heat, turning once, until cooked through, about 8 minutes. Transfer the sausages to a plate, let cool then coarsely chop.
  • Add the remaining 2 tablespoons of olive oil to the skillet along with the garlic and shallots and cook over moderately low heat, stirring occasionally, until softened, about 4 minutes. Add the wine and simmer over moderate heat until reduced to 2 tablespoons, about 3 minutes. Stir in the broccoli rabe and sausage and season with salt and pepper.

  • Heat a generous glug of olive oil in a heavy bottom pan (a 12-inch cast-iron skillet or a 3.5-quart braiser is best) over medium-high heat. Once the oil is shimmering, add the sausage in little chunks, breaking them up with a spoon but not stirring too much, so they can develop a nice brown crust. After 6 to 8 minutes, the sausage should be browned on the outside. (It’s okay if it’s still pink in the center.) Remove the sausage from the pan and set aside.
  • Reduce the heat to medium and add another glug of olive oil to the same pan. Add the onions and cook for about 5 minutes, stirring them and scraping up any brown bits left behind by the sausage. Season with a big pinch of salt.
  • Add the bell peppers and garlic and cook for another 5 to 8 minutes, until the peppers are tender.
  • Add the tomato paste and cook for about 5 minutes. Then add the tomatoes and turn the heat up to medium-high. Bring the sauce to a boil, then reduce the heat to medium-low and add the reserved sausage along with the Calabrian chili paste. Let simmer gently for about 30 minutes, until the sauce is slightly thickened and the flavors have melded together.
