Steps:
- Bring a large pot of water to a boil. Prepare an ice-water bath; set aside. Add salt and broccoli rabe to the boiling water. Cook until just tender. Drain, and transfer to ice bath. When cool, drain, and set aside.
- Heat oil in a 10-inch skillet over medium-high heat. Add garlic and shallots; cook until just golden. Add sausage; saute, breaking up with the back of a spoon, until cooked through. Add broccoli rabe and stock. Cook until heated through.
- Into the same large pot, add pasta; cook according to package directions until al dente. Drain.
- Add pasta to skillet; toss to combine. Season with salt, black pepper, and crushed red pepper. Sprinkle with cheese; toss to combine. Serve immediately.

- Preheat the oven to 400°F. In a large, deep, ovenproof skillet or braiser pan, cook the sausage in the olive oil over medium-high heat, breaking up the meat with a wooden spoon, until nicely browned and cooked through, 8 to 10 minutes. Add the fennel seeds and cook until fragrant, about 1 minute. Add the marinara sauce and bring to a simmer. Season the sauce with salt and pepper.
- In a pot of boiling water, cook the pasta 2 minutes less than the package suggests. Add the broccoli rabe and cook with the pasta for 1 minute. Scoop out ¾ cup of the pasta water, then drain the pasta in a colander. Return the pasta and broccoli rabe to the pot. Fold in the sauce, heavy cream, reserved pasta water, and half of the mozzarella and parmesan cheeses.
- Transfer the mixture to the skillet or braiser pan and scatter the remaining cheeses on top. Bake for 25 to 30 minutes, until bubbling and browned. Let stand for a few minutes, then garnish with basil and serve.

- To blanch the broccoli rabe, fill a large bowl with ice water and set it aside. Bring a large pot of salted water to a boil. Cut away a couple of inches of the thicker tough stems of the broccoli rabe, leaving the tender stems, buds and leaves. Cut or pull the leaves off the stems and tear the leaves into large pieces. Boil broccoli rabe for 2-3 minutes until it's bright green and the stems are crisp-tender. IMPORTANT: Reserve one cup of the cooking water. Drain broccoli rabe in a colander and quickly plunge it into the ice water to stop the cooking process. When cool, drain and set aside.
- To make the pan sauce, heat olive oil in a large heavy skillet over medium high heat. Add garlic, red pepper flakes and sausages and sauté, stirring often, until the sausages are cooked through and browned in spots.
- Add the broccoli rabe to the skillet, along with the cup of broccoli rabe water, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Turn heat to high and cook, stirring, until sauce is hot.
- Meanwhile, cook the orecchiette per package instructions, until al dente (cooked through but still firm to the bite.)
- Drain Orecchiette and return it to its cooking pot. Add 1/3 of the sausage-broccoli rabe sauce and toss over high heat. When combined and hot, remove from heat and mound onto a platter or into individual bowls. Top with remaining sauce and a generous sprinkle of Pecorino cheese.

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. - Bring a large pot of salted water to a boil. Roughly chop the broccoli rabe, add it to the pot, and cook for 3 minutes. Use a sieve or slotted spoon to lift the broccoli rabe from the water and place it in a colander to drain.
- Bring the water back to a boil. Cook the pasta according to package instructions until al dente, reserve 1 cup pasta water, then drain pasta.
- Meanwhile, in a large Dutch oven or deep, 12-inch skillet, heat the olive oil over medium-high. Add the sausage and cook, breaking it up with a wooden spoon, until browned, 3 to 5 minutes. (Don't worry if the sausage is not completely cooked through.) Add the garlic and cook for 30 seconds.

- Place racks in middle and upper third of oven; preheat to 325°F. Heat a large, deep ovenproof skillet over medium-high. Pour in ¼ cup oil; add sausage and break up into small pieces. Cook, undisturbed, until browned underneath, about 4 minutes. Stir a few times; cook, undisturbed, until cooked through, about 3 minutes.

- Bring the chicken stock to a boil.
- Cook the orecchiette in a large pot of boiling salted water until al dente; drain well.

- Cut Broccoli Rabe all the way down to end of stems. Cut in about 1/2 inch sections on top and get smaller as you go down. When stems get very tough towards bottom stop cutting and discard.
- Wash thoroughly and drain.
- Place in large pot cover with water add salt.
- Bring to boil uncovered and then reduce heat.
- Simmer until all is soft about 45 minutes.
- Drain when cooked set aside.
- At the same time Broccoli is cooking, cook pasta in rapidly boiling salted water.
- Drain when cooked and put aside.
- While Pasta and Rabe are cooking fry the sausage in about 1/2 tablespoons Olive Oil until brown. Set aside.
- Chop Garlic.
- Place Olive Oil in Pan heat and then add garlic.
- When you SMELL the garlic (not brown) add the Hot Pepper and slowly add Brocoli Rabe.
- Toss oil and garlic through all Broccoli Rabe.
- Toss in Pasta and Sausage.
- Cover with generous sprinkle of Parmasian Cheese.
- Serve.

- Cut broccoli rabe in quarters.
- Bring a large pot of water to boil. When it comes to a rolling boil, add broccoli rabe.
- Blanch for about 1 1/2 - 2 minutes, drain and set aside in a colander.
- Re-fill pot with water and salt for the pasta and bring back to a boil.
- Add pasta and cook according to package directions for al dente.
- In a large deep sauté pan, brown sausage on medium heat, breaking up into small pieces as it cooks.
- When completely cooked through set aside in a dish or a bowl.
- Increase heat to medium high, add olive oil to the pan; when hot add garlic and cook until golden (don't burn).
- Return broccoli rabe to the pan, mix well with the garlic and oil, season with salt and pepper and cook about a minute. Return cooked sausage to the pan and mix well.
- Drain pasta and add to the broccoli rabe. Reduce heat and stir for about 30 seconds.
- Add chicken broth, parmesan cheese and red pepper flakes if using.
- Adjust salt and pepper to taste and toss another 30 seconds so that everything is mixed well and the pasta is coated with the sauce.
- Remove from heat and add to a large pasta dish or divide equally between 6 pasta bowls. Serve with additional grated cheese if you desire.

- Remove the sausage from the casing and crumble into small pieces.
- Wash the broccoli rabe under cold water and pat dry with paper towels. Cut off and discard about one inch off bottom of stems. Cut remaining broccoli rabe with leaves into about 2 inch pieces.
- Bring a large pot of liberally salted water to a boil.
- In a large saute pan or skillet, heat the olive oil over medium-high heat. Add the crumbled sausage and cook stirring and breaking up the sausage until cooked through and lightly browned.
- Using a slotted spoon remove the cooked sausage from the pan and set aside, leaving as much oil behind as possible to saute the garlic and broccoli rabe in, if needed add an extra tablespoon of olive oil.
- Drop the broccoli rabe into to the pot of boiling water.
- At the same time add the garlic to the saute pan and cook until lightly browned, about 1-2 minutes.
- Immediately remove the broccoli rabe from the pot using a mesh strainer or tongs (do not strain the whole pot, because you will be cooking the pasta in the same boiling water), shake excess water out and add to the pan with the garlic. Season with Salt and pepper. Cook stirring until broccoli rabe is tender, 3-5 minutes.
- Add the sausage back into the pan and toss to combine. Remove pan from the heat.
- Meanwhile add the orecchiette to the pot of boiling water that the broccoli rabe was cooked in. Cook until pasta is al dente, and strain.
- Place the pan with the broccoli rabe and sausage back over medium-high heat, and add the oricchiete. Toss together until well combined.
- Dish out the pasta to warm plates and serve with cheese on the side for sprinkling.

- Start by blanching the broccoli rabe in a deep pan of boiling water. Put the broccoli rabe in for 2 minutes and take it out. When you are done, use tongs to take the broccoli rabe out and set aside. Do not strain the water as we will be cooking the pasta inside the same pot of water!
- Take the sausage out of the casing and then cutting the sausage into bite sized pieces. In a large pan, place 1 tablespoon of olive oil and 1 tablespoon of minced garlic. Wait until the garlic browns and then add the sausage. Cook the sausage for 8 minutes, stirring occasionally.
- Pour in the diced tomatoes. Stir for 4 minutes and place the blanched broccoli rabe into the sausage mixture. Add salt, pepper and red pepper flakes to your liking. Stir everything until the sausage is cooked, about an extra 10 minutes. The sausage will be ready when the outside of the sausages are a deep golden brown and the inside is pale but with no sign of pink or blood.
- Cook the pasta in the same broccoli rabe water and put the pasta back into the pot according to package instructions. When both the sausage mixture and pasta are done, combine and enjoy! Top with parmesan cheese and red pepper flakes to your liking.
PASTA WITH SAUSAGE AND BROCCOLI RABE
Tips: Cook the broccoli rabe the night before and you'll be way ahead. Whatever you do, read the recipe through start to finish before you get started. It's a little out of the ordinary but relatively painless. Cook off the garlic and sausage up to one hour ahead and let it sit in the pan until you're ready to finish the dish.

- Cut the broccoli rabe into 3 to 4 inch pieces, discarding the stems. In a large pot of rapidly boiling water, blanch the broccoli rabe until tender and cooked through, about 5 to 6 minutes. Before you drain broccoli rabe, reserve 1 cup of cooking liquid. Drain and rinse the broccoli rabe with cold water until it has cooled off. Spread it out on a towel to finish draining.

- Grate 12 oz. Fontina cheese on the large holds of a box grater (you should have about 4½ cups). Smash 6 garlic cloves, peel, and coarsely chop. Trim tough dried ends from 1 bunch of broccoli rabe, then cut stems into 2" pieces. Leave leafy ends long.
- Heat a deep, large, ovenproof skillet, preferably cast iron, over medium-high. Add ¼ cup oil and swirl to coat. Remove 1 lb. sausage from casings and add to skillet. - Heat a generous glug of olive oil in a heavy bottom pan (a 12-inch cast-iron skillet or a 3.5-quart braiser is best) over medium-high heat.
