8 medium tomatoes, peeled and cut into wedges
8 slices bread, crusts removed, cubed
1/2 cup plus 2 tablespoons butter, melted
1 teaspoon salt
1 teaspoon dried basil
1 teaspoon dried thyme
3/4 cup grated Parmesan cheese

Steps:

  • Arrange tomatoes in a greased 13x9-in. baking dish. Top with bread cubes. Combine the butter, salt, basil and thyme; drizzle over bread and tomatoes. Sprinkle with cheese. , Bake, uncovered, at 350° for 30-35 minutes or until tomatoes are tender.

16 oz frozen california style vegetables (aka broccoli normandy)
1 pkg garden vegetable style cream cheese, softened
1 can(s) cream of mushroom soup
croutons for topping

Steps:

  • 1. Let cream cheese container come to room temperature. Cook vegetables according to package directions, or simply microwave them in the original bag using the "frozen vegetable" setting!
  • 2. If you choose to go with fresh veggies, it takes about 4 or 5 cups of mixed broccoli, carrots, and cauliflower pieces to be roughly equivalent to a 16 ounce bag of frozen, then you'd either steam them in a veggie steamer, or steam them in the microwave (mine has a "fresh veg" setting as well, and it's spot on). Then you'd simply continue with the next step as usual.
  • 3. Combine hot cooked veggies, cream cheese, and mushroom soup together in a large bowl until well blended. Transfer to a greased 2-quart casserole dish, top with croutons, and bake at 350 degrees for 30 minutes or until bubbly, and serve!

Steps:

  • Make a white sauce of butter, flour, milk and salt.

There are a lot of chicken casseroles out there but this is the best I've ever had. My kids love it too. Freezes well (let thaw and then bake) and works well for a covered dish meal. I like to serve it with cranberry sauce on the side. And as a reviewer suggested, I have heard of people adding chilies to this recipe. I usually broil my chicken. The results are much tenderer than boiling it. Thigh meat can also be used if you prefer.

3 cups croutons, homemade are best,boxed are okay
1 (15 ounce) can diced tomatoes
1 cup provolone cheese or 1 cup mozzarella cheese, grated
2 tablespoons olive oil
1 small onion, diced
4 -5 zucchini, cleaned and sliced
salt and pepper
1 (5 ounce) can tomato juice
seasoned dry bread crumb
grated parmesan cheese

Steps:

  • Lightly oil an 8x8 inch glass baking dish.
  • Drop in and even out the croutons.
  • Evenly distribute the can of diced tomatoes over that.
  • Scatter the tomatoes with the grated cheese of your choice.
  • In a saute pan over a high flame, heat the olive oil, then drop in the onion and cook it until it's just transparent.
  • Drop in the zucchini slices and saute until they begin to wilt.
  • Season with the salt and pepper.
  • Pour in the tomato juice, stir it in a cook of a minute or so to lightly reduce it.
  • Pour the mixture over the other ingredients in the casserole dish.
  • Sprinkle the top with some breadcrumbs and parmesan cheese.
  • Bake in a 350 degree oven for about 45 minutes.
  • HINTS:.
  • Use a combination of zucchini and yellow crookneck squash for nice color.
  • Any sort of tomato juice will work, even a spicy V8.
