4 TB olive oil
5 oz shiitake mushrooms (de-stemmed and chopped)
1 small shallot (about 1/4 cup) (chopped)
2 cloves garlic (minced)
3 TB gluten-free flour ((or regular flour if not GF))
1/2 cup vegetable broth
1 cup unsweetened cashew milk
1/2 tsp fresh rosemary
1/2 tsp fresh thyme
1 tsp tamari
1/4 tsp black pepper
1 tsp vegan worcestershire sauce ((optional but tasty))

Steps:

  • Add olive oil and mushrooms to saute pan and cook for about 5 minutes.
  • Add shallot and garlic to the pan and cook for another 3 minutes.
  • Stir in flour and cook for 1 minute.
  • Add in rest of the ingredients and bring sauce to a simmer.
  • Reduce heat and continue cooking (and stirring) until the gravy reaches your desired consistency (3-5 minutes). Feel free to add more herbs/spices/salt to your liking.

¼ cup vegetable oil
1 (8 ounce) package sliced fresh mushrooms
¼ cup all-purpose flour
2 cups vegetable broth
¼ teaspoon salt
⅛ teaspoon ground black pepper
⅛ teaspoon garlic powder
1 pinch dried thyme

Steps:

  • Heat oil in a saucepan over medium-high heat. Add mushrooms and saute until soft, about 8 minutes. Add flour and stir until mushrooms are evenly coated. Slowly pour in vegetable broth, stirring continuously, until flour has completely dissolved and is mixed into the broth. Add salt, pepper, garlic powder, and thyme; stir to combine.
  • Bring gravy to a boil. Reduce heat to low, stir occasionally, and simmer until thickened, about 5 minutes.

Umami is the Japanese name for savoriness, an essential characteristic of foods, like sweetness or saltiness. We sought out vegetables high in glutamate, an amino acid that plays an important part in umami, and gave them a quick char before simmering them down to a rich, flavorful stock used for gravy even a meat eater will enjoy.

Number Of Ingredients 15

1 medium onion, quartered
2 stalks celery, roughly chopped
1 medium carrot, roughly chopped
3 cloves garlic, crushed
4 tablespoons plus 1 teaspoon vegetable oil
Kosher salt
1 ounce dried shiitake mushrooms (about 1 heaping cup)
6 sprigs thyme
2 sun-dried tomatoes
2 tablespoons low-sodium soy sauce
1 dried bay leaf
6 fresh sage leaves
1/3 cup all-purpose flour
1/4 cup chopped fresh parsley
Freshly ground black pepper

Steps:

  • Position an oven rack in the highest position, and preheat to 450 degrees F. Toss the onions, celery, carrots and garlic with 1 teaspoon each oil and salt on a rimmed baking sheet. Roast until the vegetables are charred in some places, 25 to 30 minutes.
  • Bring the roasted vegetables, 1 cup water, mushrooms, thyme, sun-dried tomatoes, soy sauce, bay leaf and 1 teaspoon salt to a simmer in a medium saucepan over medium-high heat. Cook, stirring occasionally, until most of the liquid is gone, 8 to 10 minutes. Add 6 cups water and 1/2 teaspoon salt, and bring back to a simmer. Reduce the heat to medium-low, and gently simmer until reduced by about one third, about 45 minutes. Strain the stock through a strainer into a large liquid measuring cup; use the back of a ladle to squeeze all the liquid out of the solids (there should be about 4 cups of stock). If not making gravy right away, let the stock cool to room temperature, then refrigerate for up to 3 days or freeze for up to 1 month.
  • To make the gravy, warm the stock slightly in a medium saucepan if it has been refrigerated. Heat the remaining 4 tablespoons oil in another medium saucepan over medium heat. Add the sage leaves, and cook until fried and crispy, about 2 minutes; remove and set aside. Add the flour to the saucepan, and stir until smooth and lightly golden, about 2 minutes. Slowly pour in the warm stock while whisking constantly until smooth and thick, 8 to 10 minutes
  • Chop up the fried sage, stir it into the gravy along with the parsley and season to taste with pepper.

Make this mushroom gravy to serve alongside your vegan Christmas feast. It will freeze for up to three months so you can easily make it ahead to get prepared

30g dried porcini mushrooms
2 tsp olive oil
1 onion, chopped
200g chestnut mushrooms, chopped
1 tbsp miso paste
1 heaped tbsp plain flour
800ml vegetable stock, made with 2 stock cubes dissolved in 800ml water (or use fresh)

Steps:

  • Put the dried mushrooms in a heatproof bowl and pour over 300ml boiling water from the kettle. Leave to soak.
  • Meanwhile, heat the oil in a large frying pan over a low-medium heat, and cook the onion for 10 mins until starting to turn golden. Tip in the chestnut mushrooms, add some seasoning, and cook for another 8-10 mins until softened.
  • Stir in the miso paste and flour, turn up the heat and cook for a further 1-2 mins. Tip in the rehydrated mushrooms and most of their soaking liquid - leave the last few drops in the bowl, as it may contain grit. Stir well, add the stock and bring to a simmer.
  • Gently simmer for 10-15 mins, until thick enough to coat the back of a spoon. Check for seasoning. If you prefer a thicker gravy, blitz with a hand blender until smooth. If you prefer a thinner gravy, strain and discard the onions and mushrooms before serving. Will keep frozen for up to three months.

olive oil (or other vegetable oil,1/4-1/3 cup)
1/2 cup whole wheat flour or 1/2 cup brown rice flour
1/4 lb fresh shiitake mushroom, sliced
2 tablespoons fresh thyme or 2 tablespoons fresh marjoram
1 quart vegetable stock
2 tablespoons soy sauce or 2 tablespoons Braggs amino acids
1 teaspoon apple cider vinegar
sea salt
fresh ground black pepper

Steps:

  • Heat oil in a 2-quart saucepan.
  • Add flour and stir with a wooden spoon until the mixture becomes the consistency of wet sand.
  • Add mushrooms and cook 5 minutes more.
  • Pour in stock and soy sauce.
  • Bring to a slow boil and cook 20 to 30 minutes until thickened.
  • Adjust seasoning with apple cider vinegar, sea salt and black pepper.
