SMOKY RUBBED CHICKEN WINGS WITH HONEY, BOURBON, AND MOLASSES SAUCE

Smoky Rubbed Chicken Wings with Honey, Bourbon, and Molasses Sauce image

I order chicken wings anytime I see them on a menu, and this recipe will make you realize just how incredible they can be. After a lot of trial and error, when I finally got the rub right I felt like I had unlocked a magic puzzle. There are a lot of ingredients in the rub, but they provide a perfect mix of sugar and spice, and the bourbon-spiked sauce coats the wings in yet another layer of bold flavor. If you prefer the grill to the oven, grill the wings over medium indirect heat (about 400 degrees F) for about 40 minutes, until they are almost done, before adding the sauce.

Provided by Chris Santos

Categories     appetizer

Time 6h

Yield 6 servings

Number Of Ingredients 21

1 cup store-bought spicy barbecue sauce, such as Rattler BBQ Sauce
1 cup tomato ketchup
1/4 cup molasses (not blackstrap)
1/2 cup bourbon, preferably Maker's Mark
1/2 cup honey
2 tablespoons cider vinegar
1/3 cup packed light brown sugar
1 tablespoon kosher salt
1 tablespoon ground coriander seeds
1 tablespoon sweet smoked paprika
1 1/2 teaspoons ground cumin
1 1/2 teaspoons dried thyme
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1/2 teaspoon hot red pepper flakes
3/4 teaspoon celery salt
3/4 teaspoon freshly ground black pepper
3/4 teaspoon cayenne pepper
1/4 teaspoon dry mustard
1/4 teaspoon garlic powder
5 1/2 pounds chicken wingettes (see Cook's Note)

Steps:

  • To make the sauce: Bring all of the ingredients to a boil in a medium saucepan over medium-high heat, whisking often. Reduce the heat to medium-low and simmer, whisking occasionally to discourage scorching, until lightly thickened and reduced by about one-quarter, about 30 minutes. Remove from the heat and let cool. (The sauce can be covered and refrigerated for up to 2 weeks.)
  • To make the rub: Whisk all of the ingredients together in a small bowl.
  • Put the wingettes in a very large bowl and toss with the rub. Divide the wingettes among two 1-gallon self-sealing plastic bags, seal, and refrigerate for at least 4 hours or overnight.
  • Position racks in the top third and center of the oven and preheat the oven to 400 degrees F. Line two 18-by-13-inch half-sheet pans with aluminum foil for easy cleanup.
  • Spread the wingettes out on the baking sheets, spacing them well apart. Roast the wingettes, turning the wings over and switching the positions of the baking sheets from top to bottom and front to back halfway through cooking, until the wings are crisp and cooked through, about 40 minutes. During the last 5 minutes, brush the wings with some of the sauce. Remove the wings from the oven.
  • Position a broiler about 8 inches from the source of heat and preheat the broiler on high. In batches, broil the wings to caramelize the sauce in spots, about 3 minutes. Serve hot, with any leftover sauce passed on the side.

SMOKED WHISKEY WINGS

Smoked Whiskey Wings image

You got your breast men and your leg men and your thigh men, but let me tell you something: I'm a wing man. What I love about wings is that you get a two-in-one treat when you eat them: Between the drumette and the flat, that's some good gnawing. Wings are great for weeknight cooking too, because they take very little time to prepare and cook. NOTE: The best way to trim chicken wings is to use kitchen shears to lop off the tips and separate the pieces.

Provided by Myron Mixon

Yield Serves 4 to 6 as an appetizer

Number Of Ingredients 6

2 dozen whole chicken wings
Kosher salt and freshly ground pepper
3/4 cup Only Sauce , plus more for serving, optional
1/4 cup whiskey
1 tablespoon sugar
1/4 cup plus 2 tablespoons Dijon mustard

Steps:

  • Using kitchen shears or a very sharp knife, cut each wing in half to separate the flat from the drumette; cut off and discard the tip or save it for stock. Wash the pieces well, pat them dry, season liberally with salt and pepper, and set them aside in a large zip-top freezer bag.
  • In a small saucepan, whisk the sauce with the whiskey and sugar and bring just to a simmer over medium-high heat. Remove the sauce from the heat and whisk in the mustard. Cool completely. Pour the mixture in the bag with the chicken wings, seal the bag, and marinate in the refrigerator for at least 30 minutes or up to overnight.
  • Prepare a smoker with soaked wood chips and heat it to 250°F (see Cook's Notes). Alternatively, prepare a charcoal grill (see Cook's Notes) or gas grill (see Cook's Notes) for smoking and heat it to medium-low heat.
  • Remove the wings from the marinade and discard the marinade. Place the wings in a large, shallow aluminum pan in a single layer. Place the uncovered pan in the smoker and cook, for 2 hours. Remove the wings from the smoker and serve with more sauce on the side if you like.

SMOTHERED TURKEY WINGS

Smothered Turkey Wings image

Tender, giant turkey wings are slow baked with a spicy Cajun rub and then finished in a rich gravy flavored with the holy trinity -- green bell peppers, celery and onions.

Provided by Eddie Jackson

Categories     main-dish

Time 1h30m

Yield 6 to 8 servings

Number Of Ingredients 22

4 turkey wings, split into drumettes and wingettes (about 3 pounds 3 ounces)
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon smoked paprika
1 tablespoon sweet paprika
2 teaspoons cayenne pepper
2 teaspoons dried oregano
1 teaspoon dried thyme
Kosher salt and freshly ground black pepper
6 tablespoons unsalted butter, cut into pieces
1 small green bell pepper, finely diced
1 small onion, finely diced
1 medium celery stalk, finely diced
1 clove garlic, minced
Kosher salt and freshly ground black pepper
1/3 cup all-purpose flour
3 cups homemade turkey stock (see Cook's Note)
2 tablespoons Worcestershire sauce
2 teaspoons hot sauce, such as Cholula
2 bay leaves
1/4 cup heavy cream
1/4 cup parsley leaves, chopped

Steps:

  • Preheat the oven to 425 degrees F. Place a wire rack in a rimmed baking sheet.
  • For the wings: Pat the turkey wings completely dry and place them onto a work surface or cutting board. Combine the garlic powder, onion powder, smoked paprika, sweet paprika, cayenne pepper, oregano, thyme, 1 tablespoon salt and 2 teaspoons black pepper in a medium bowl; generously rub all over the turkey wings, making sure to pick up whatever falls onto the board and sprinkle back onto the turkey (it may look like too much seasoning, but it will flavor the turkey and the gravy so don't skimp!).
  • Transfer the wings to the prepared baking sheet. Add 2 cups water to the bottom of the baking sheet and tightly wrap foil over the wings and baking sheet. Bake until the wings are cooked through and just slightly tender but unable to pull away with a fork, about 1 hour.
  • Meanwhile, make the gravy: Melt the butter in a 12-inch cast-iron skillet over medium-high heat. Add the green pepper, onion, celery, garlic 1/2 teaspoon salt and a few grinds of black pepper and cook, stirring occasionally, until the vegetables have softened, 5 to 6 minutes. Sprinkle the vegetables with the flour and stir to combine. Slowly pour in the stock, stirring constantly until no lumps remain from the flour. Stir in the Worcestershire sauce, hot sauce, bay leaves, 1/2 teaspoon salt and a few grinds of black pepper and bring to a simmer. Reduce the heat to low.
  • Unwrap the wings and carefully nestle them into the gravy using tongs. Tightly cover the skillet with foil and simmer until the wings are completely tender and the meat can easily be pulled away with a fork, about 25 minutes. Pour the heavy cream into the gravy around the turkey and gently mix with a spoon as much as you can. Let simmer until heated through, 2 to 3 minutes. Garnish with parsley. Remove the bay leaves before serving.
