Steps:
- Wash and peel the cucumber. Grate the cucumber using the large holes of a box grater or a food processor fitted with the shredding attachment. or chop them as shown in the video.
- Finely chop the mint leaves.
- In a small mixing bowl, combine the grated cucumber, chopped mint, cashew yogurt, and salt. Mix well.

I gave this a try with dinner tonight and it was pretty delicious. Vegan, gluten-free and added-sugar free. It is totally appropriate for the 21 Day Quantum Wellness Cleanse.

Steps:
- Make the cashew cream by combining the cashews, water and lemon juice in a blender. Puree until it attains a yogurt like consistency. If the cashews are really dry, let them soak in the water and lemon juice for an hour or two before blending.
- Spoon the cashew cream into a bowl and add the cucumber, corn and salt. Mix well.
- Serve cold with Indian food.

- Add 1/2 cup water, lemon juice, vinegar, and salt; blend until creamy, stopping to scrape down the sides every now and then. Stir in chives.
- Serve right away or let chill in the refrigerator before serving.
