"MIND BLOWING" TURKEY SANDWICH

Steps:
- For the tomatoes: Preheat the oven to 400 degrees F.
- On a small rimmed baking sheet, spread the tomatoes, olive oil, salt, garlic and basil. Toss well to coat. Roast until the tomatoes are popped and beginning to brown, about 25 minutes. Allow to cool slightly.
- For the spread: Mix together the mayonnaise and mustard in a small bowl.
- For the sandwich: Lay out the bread and spread the mayonnaise-mustard mixture on each slice. Working 2 slices at a time, place 2 lettuce leaves on one slice and about 6 roasted tomatoes on the opposite slice. Ribbon 3 slices of turkey on the lettuce. Place the 2 halves together and secure with 2 toothpicks with a cornichon on each one. Continue with the remaining ingredients. Cut in half before serving.

- In a small bowl, mix the first 5 ingredients until blended. Using a long serrated knife, cut focaccia horizontally in half. Spread cut sides with mayonnaise mixture. Layer bottom half with lettuce, turkey, cheese, tomato and bacon; replace bread top. Cut into wedges.

Steps:
- Preheat the oven to 400 degrees F. Place the ciabatta rolls on a rimmed baking sheet with the cut side facing upwards. Bake until lightly toasted, 7 to 10 minutes.
- Arrange the bread, toasted side up, on a work surface and divide the spicy aioli on all the halves evenly. On each of the bottom halves place 1 slice of cheese, ripping in half if necessary to make the cheese fit the bread. On top of the cheese, layer the peppers, followed by the turkey. Divide the basil evenly on each of the top halves, pressing slightly to adhere to the aioli. Place the tops of the sandwiches on, then cut the sandwiches diagonally and serve.
- Whisk together the mayonnaise, chili paste and ¼ teaspoon salt in a small bowl. Refrigerate aioli until ready to assemble the sandwiches.
MAFIA'S FAVORITE TURKEY SANDWICH
Growing up on the East Coast, it wasn't hard to find all sorts of pickled peppers, both sweet and hot. You couldn't go anywhere near a cheesesteak place in Philly without seeing them. In Los Angeles, they're less common, but most grocery stores have at least one or two varieties. One of my favorites is sweet cherry pepper rings. They add plenty of flavor without any fat-you can't go wrong with that.

- Place one slice of bread on a serving plate. Top it evenly with the turkey, followed by the cheese, lettuce, tomato, and peppers. Spread the mayonnaise evenly over the second slice of bread, then flip the slice atop the sandwich. Serve immediately.

Steps:
- Place oil in skillet with lid and heat until hot.
- Add onion and garlic.
- Saute until onion is slightly browned.
- Add all peppers and heat.
- Add beer or wine.
- Add sausage and cover with lid.
- Cook covered for at least 10 minutes.
- Remove cover and cook, turning often, until browned and peppers are soft , at least 10 minutes more.
- Equaly divide the cheeses on 4 rolls.
- Place rolls with cheese under broiler until cheese starts to melt.
- Remove from broiler.
- Add chopped olives to melted cheese.
- Place cooked peppers, garlic, and onion on rolls.
- Place cooked sausage on rolls.
- Close rolls and serve.
- A good ale or glass of red wine goes good with this.
