- Heat oil in a large pot over medium-high heat. Saute onion, celery, carrots and garlic for 5 minutes. Season with chili powder, cumin, and black pepper; cook for 1 minute. Stir in vegetable broth, 2 cans of beans, and corn. Bring to a boil.
- Meanwhile, in a food processor or blender, process remaining 2 cans beans and tomatoes until smooth. Stir into boiling soup mixture, reduce heat to medium, and simmer for 15 minutes.

- In a large pot, sauté the onion, celery, carrots and garlic in 1 cup of vegetable broth over medium heat for 6-7 minutes. Add chipotle chili powder, roasted cumin, and black pepper and cook for another minute or two. Stir in the remaining vegetable broth, 4 cups (or 2.5 cans) of beans, and sweet corn. Turn to high heat and bring to a boil.
- Add remaining 3 cups (or 1.5 cans) of beans and crushed tomatoes to a Vitamix or blender and process until smooth. Stir into soup when boiling, reduce heat to medium, and simmer for 15 minutes until beans and vegetables are done to your desired tenderness.
- Taste test. Add Herbamare or salt to taste and lime juice.
- Serve in bowls and garnish with fresh chopped cilantro.

- Roast the tomatoes, onion, and garlic until they are blackened. You can do this under the broiler or in a pan on the stove.
- Blend the roasted vegetables, cumin, and oregano until smooth. (Add a little water if necessary to blend)
- Next, blend the black beans with the vegetable mixture until very smooth. (Add 1 cup of water to blend, add more if necessary)
- Place the blended soup in a pan on the stove.
- Simmer the soup for one hour. (Add water if necessary so that it doesn't become too thick.)
- Salt to taste.
- To serve, divide the soup into 6 bowls.
- Garnish each bowl of soup with the tortilla strips, 1 tablespoon of Mexican cream, 1 ounce of cubed queso fresco cheese, and the cubed avocado.

- Heat olive oil in a large pot. Add onion, carrot, celery and potatoes and cook, stirring, over medium heat for 10 minutes, till they begin to soften. Add garlic and red pepper, and cook 3 more minutes.

- Heat the oil in a large pot over medium-high heat, then add the onion and cook, stirring often for 3 minutes, or until the onions are translucent but not browned.
- Add the garlic and cook for a further minute.

VEGAN FRIJOLES NEGROS (BLACK BEANS)
Steps:
- Gather the ingredients.
- If you are soaking the beans, place the black beans, 1 green bell pepper, and 8 cups of water in a large soup or stock pot and set aside to allow to soak for 8 hours or overnight. If you are not soaking the beans, combine these ingredients and proceed to the next step.
- Bring the beans, pepper, and water to a boil, then immediately turn the heat to a simmer and cook, covered for 1 1/2 hours, or until the beans are almost tender.
- Prepare a sauce, called sofrito , by combining the remaining green bell pepper, the onion, garlic, oregano, cumin, bay leaf, and a little of the cooking water in a blender. Blend on low until the mixture is smooth.
- Add the sofrito to the beans. Bring to a boil again, then immediately reduce the heat to a simmer.
- Add salt, wine, vinegar, and sugar. Continue to simmer, uncovered, until the bean mixture becomes thick, about 2 more hours.
- Add olive oil immediately before serving. Serve over steamed rice.
