Vegan Lemon Sugar Cookie Food
VEGAN LEMON SUGAR COOKIE

Steps:
- Preheat the oven to 400 F.
- Sift the flour, baking soda and salt together in a medium-sized bowl.
- In a separate large bowl, beat together the 2/3 cup sugar, vegan margarine , and lemon zest until smooth and fluffy. Add the tofu and lemon juice and whip until well mixed, then add the flour, baking soda, and salt.
- Add the flour mixture to the margarine mixture and stir until well combined.
- Form dough into one-inch balls and roll into the 1/4 cup sugar until well coated. Flatten slightly and bake for 8-10 minutes until lightly golden brown.
- Serve and enjoy.

VEGAN LEMON COOKIES
This recipe was given to me by a friend when I was starting to cook for my boyfriend (now husband) with food allergies. I used her original written recipe so often I had to post it here so I wouldn't lose it before it became unreadable (Thanks, K!) These don't last long around our house! Try substituting lime for some of the lemon!

Steps:
- In a medium bowl, stir together flour, sugar, soda, salt, and zest.
- Make a well in the center and fill with liquid ingredients.
- Stir together until well blended.
- Drop by teaspoonfuls about 2 inches apart on a cookie sheet.
- Bake for 8-10 minutes at 350 degrees F.

- First add the butter and 1/2 cup of the sugar to a bowl and cream together until light and fluffy, about 1 minute. Then, add in the ground flax, lemon juice, lemon zest, and vanilla and mix together.
- Next, add in sifted flour, baking powder, and salt to the mixing bowl. Mix until a smooth and thick cookie batter forms. Do not overmix or else you will form too much gluten and the cookies will not spread as much and be tough.
- Cover a baking sheet in parchment paper and preheat the oven to 350F. Next, remove the dough from the fridge and use a 1.5 Tbsp cookie scoop to form your cookie dough (30 grams per cookie of dough). Roll into balls between your palms and then roll in the 2 Tbsp of sugar that was set aside so that each dough ball is coated.
