Ingredients

2 1/2 cups flour
1/4 teaspoon salt
1/2 teaspoon baking soda
2/3 cup sugar + 1/4 cup
1 cup vegan margarine , pre-softened
1/3 cup lemon zest
1/4 cup silken tofu
3 tablespoons lemon juice, preferably fresh

Steps:

Preheat the oven to 400 F.
Sift the flour, baking soda and salt together in a medium-sized bowl.
In a separate large bowl, beat together the 2/3 cup sugar, vegan margarine , and lemon zest until smooth and fluffy. Add the tofu and lemon juice and whip until well mixed, then add the flour, baking soda, and salt.
Add the flour mixture to the margarine mixture and stir until well combined.
Form dough into one-inch balls and roll into the 1/4 cup sugar until well coated. Flatten slightly and bake for 8-10 minutes until lightly golden brown.
Serve and enjoy.

This recipe was given to me by a friend when I was starting to cook for my boyfriend (now husband) with food allergies. I used her original written recipe so often I had to post it here so I wouldn't lose it before it became unreadable (Thanks, K!) These don't last long around our house! Try substituting lime for some of the lemon!

Ingredients

2 1/2 cups flour
1 1/2 cups sugar
2 teaspoons baking soda
1/4 teaspoon salt
2 tablespoons lemon zest
3/4 cup canola oil
1/2 cup lemon juice
2 teaspoons vanilla

Steps:

In a medium bowl, stir together flour, sugar, soda, salt, and zest.
Make a well in the center and fill with liquid ingredients.
Stir together until well blended.
Drop by teaspoonfuls about 2 inches apart on a cookie sheet.
Bake for 8-10 minutes at 350 degrees F.

First add the butter and 1/2 cup of the sugar to a bowl and cream together until light and fluffy, about 1 minute. Then, add in the ground flax, lemon juice, lemon zest, and vanilla and mix together.
Next, add in sifted flour, baking powder, and salt to the mixing bowl. Mix until a smooth and thick cookie batter forms. Do not overmix or else you will form too much gluten and the cookies will not spread as much and be tough.
Cover a baking sheet in parchment paper and preheat the oven to 350F. Next, remove the dough from the fridge and use a 1.5 Tbsp cookie scoop to form your cookie dough (30 grams per cookie of dough). Roll into balls between your palms and then roll in the 2 Tbsp of sugar that was set aside so that each dough ball is coated.
