VEGAN JERKY
Make this plant-based vegan jerky as a snack. It will keep in the fridge for up to a week, so it's great for those times in the day when you need a pick-me-up

Steps:
- Put the wheat gluten flour in a bowl. Blitz the rest of the seitan jerky ingredients in a food processor until smooth. Pour the liquid into the wheat gluten flour and mix until fully combined.
- Knead the seitan dough for a couple of minutes, then cut in half and shape into two logs. Freeze for 30 mins, or until firm. Heat the oven to 120C/100C fan/gas ½.
- Whisk the ingredients for the jerky sauce together in a bowl until combined. Remove the seitan from the freezer and cut into thin slices. Dunk each slice into the jerky sauce, then lay on a baking sheet lined with baking parchment.
- Bake for 1 hr, turning after 30 mins. Check its progress - when done, the thicker parts of the jerky should be soft, and the thinner parts slightly crunchy. Thicker-cut slices may take another 30 mins. Leave to cool, then store in an airtight container. Will keep in the fridge for up to a week.

- Use a Dehydrator or Dependable Oven. You can make vegan jerky very easily in a dehydrator or even in an oven that’s dependable with consistent heat. If your oven’s a little old or things sometimes cook unevenly or burn easily, you may not want to try making vegan jerky in it.
- Tempeh or Firm Tofu. Eskymaks/Shutterstock. Advertisement. To make vegan jerky, buy either tempeh or a block of firm tofu. Slice it very thin lengthwise to form thin strips.
- Flavor It. You’ll also need to flavor your jerky. I suggest buying mesquite powder, some chili powder, black pepper, some salt (which will help it dry out faster), and whatever seasonings you like.
- Prepare It. Gajus/Shutterstock. Soak the tempeh or firm tofu in a marinade of your flavor and let it sit overnight in the fridge in a container. The next day, pat your tempeh or firm tofu dry and then start the dehydrating process whether using a machine or the oven.
- Test Times. You’ll need to see how long it takes your jerky to completely dehydrate. It may take anywhere from six to eight hours in a dehydrator or perhaps even more.
- Store It Well. To store your jerky, I suggest putting it in plastic baggies to keep for on-the-go storage. This way, it can make the perfect snack to eat whenever you please.

- Vegan Eggplant Jerky. 2 tbsp maple syrup. 4 tbsp balsamic vinegar. ½ tsp garlic powder. 1 tsp smoked paprika. Olive oil, ½ cup. 3 eggplants, small. Sea salt.
- Vegan Jackfruit Jerky. Green jackfruit in brine, one can. Maple syrup, ¼ cup. Coconut oil or other vegetable oil, ¼ cup. 2 tbsp. Coconut Aminos for gluten and soy free, or Braggs Liquid Aminos for gluten free or soy sauce.
- Vegan Mushroom Jerky. 250 gr mushrooms (any kind is fine) 2 or 3 minced garlic cloves. ½ inch of the minced ginger knob. 2 tbsp. soy sauce.
- Vegan Cauliflower Jerky. ¼ cup and 2 tbsp. raw tahini. ¼ Tsp. sriracha. 1 tbsp. nutritional yeast. apple cider vinegar. ¼ tsp. salt. ½ tsp. smoked paprika or liquid smoke.
- Vegan Oatmeal Jerky. Instant oatmeal, one packet (single serving size) ½ cup Teriyaki sauce. ½ cup apple juice. 1 tsp. liquid smoke or smoked paprika.
- Vegan Soy Jerky. 1 tbsp. blackstrap molasses. 1 tsp. salt. smoked paprika or liquid smoke. ½ tsp. garlic powder. onion powder. Canola or other oil that has a neutral taste, ¼ cup.
