I got this in my email today from The Veggie Table, and it is a recipe adapted from one credited to the cookbook, "How it all vegan!" I haven't tried this one.

- Place everything but the tofu in the bowl and whisk together.
- Add tofu, stir, and let sit for at least an hour.

- Place almonds in a bowl, and cover with hot, but not quite boiling, water. Soak for 1 hour, then drain and pat dry.
- To the bowl of a food processor, add the drained almonds, tofu, lemon juice, brine, vinegar, 1 tsp salt, onion, powder, garlic powder, and oregano. Process until creamy, about 1 minute, stopping to scrape down the sides as needed.
- Taste the mixture, and add more lemon or salt, if desired. *After the cheese is heated in the next step the flavors become more muted. So you want it to taste very tart and salty at this point. Run the processor again until the consistency is fluffy, creamy, and only slightly textured. Add the agar powder, and pulse several times to incorporate.
- Transfer the mixture to a small sauce pan. Whisking constantly, cook over medium to medium/low heat until the cheese is steamy hot and thickened, about 3 or 4 minutes. When you see bubbling and are certain the mixture has reached boiling temperature, continue to whisk and cook for another 30 seconds. Transfer the cheese to a ramekin(s) or small container, and smooth the top.

- Start by pressing your tofu to remove the excess water, so it will hold its shape better. Remove the tofu from the packaging. Place it in a tofu press and let it press for about 30 minutes. Alternatively you could also press your tofu without a tofu press. Wrap it with a clean dishtowel. Place it on a plate, cover it with a baking sheet, and then place something heavy on top. I usually use a stack of cookbooks. Leave it like this for 30 minutes. You could also skip this step if you want.
- Make the marinade. Place all ingredients in a bowl or a container with a lid and stir until well combined.

- Add all of the ingredients to a food processor (this recipe does not work well in a blender, even a high powered one), starting off with only half of the salt. Blend it all up until smooth then taste and add more salt as needed. Blend to incorporate it after each addition. Remember that this is feta so it should have quite a salty edge. I like to use a full 2 teaspoons in mine.
- Serve straight from the blender, or pack into a container and refrigerate for a few hours for a firmer, spreadable cheese. If you want to be able to turn it out for use on a cheese board, line the container with cling-wrap so that you can easily remove it once it's set.
- Line an oven proof pan/dish with baking parchment. A square or rectangular shaped pan/dish is best if you want to be able to cut perfect cubes once it's ready. A loaf pan will work well. It doesn't matter if the cheese doesn't fill the container. You just need the cheese to be between 1 and 2 inches deep once it's in there.
