Number Of Ingredients 5

Dark liquid and browned bits reserved from Roasted Pork Loin
1 can (14.5 ounces) reduced-sodium chicken broth
1 tablespoon all-purpose flour
3 tablespoons water
1/2 teaspoon balsamic vinegar

Steps:

  • Pour off excess fat from roasting pan (reserving dark liquid and browned bits). Add chicken broth to pan; cook over medium-high heat, scraping up browned bits, until liquid has reduced by half, 5 to 7 minutes.
  • Meanwhile, in a small bowl, whisk flour with water.
  • Reduce heat to medium; whisk in flour mixture and balsamic vinegar until sauce is completely smooth and has thickened, 1 to 3 minutes.

1 can (14.5 ounces) low-sodium chicken broth
1 tablespoon all-purpose flour
3 tablespoons water
1/2 teaspoon balsamic vinegar

Steps:

  • Pour off excess fat from roasting pan (leaving behind dark liquid and browned bits). Add broth to pan; cook over medium-high heat, scraping up browned bits with a wooden spoon, until liquid is reduced by half, 5 to 7 minutes.
  • In a small bowl, whisk together flour and the water. Reduce heat to medium; whisk flour mixture and vinegar into pan until gravy is completely smooth and has thickened, 1 to 3 minutes.

200g self-raising flour
50g chickpea flour
1 tsp baking powder
1 tsp Dijon mustard
350ml soya milk
pinch of turmeric
125ml aquafaba (liquid from one can of chickpeas)
2 tbsp sunflower oil
8 plant-based sausages
25g vegan butter block
2 red onions, finely sliced
3 garlic cloves, finely sliced
75ml balsamic vinegar
300ml vegetable stock, made with 1 vegan stock cube

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Mix the self-raising flour, chickpea flour and baking powder together in a bowl. Add the mustard, soya milk, turmeric and 1 tsp fine salt, then whisk to combine. Lightly whisk the aquafaba in a jug until fluffy, then gently stir into the batter. Leave to rest for 10 mins.
  • Pour the oil into a large roasting tin and put in the oven to heat up. Tip the sausages into the hot oil and bake for 10-12 mins, shuffling regularly. Add the batter (it should sizzle when it hits the tin) and return to the oven for 25-30 mins, until puffed slightly and golden.
  • To make the gravy, melt the vegan butter block in a pan and add the red onions and garlic with a large pinch of salt. Cook over a medium heat for 10-12 mins, until soft and lightly caramelised. Add the balsamic vinegar and reduce until it has evaporated. Add the vegetable stock and bring to a simmer. Allow to simmer for 8-10 mins until thickened. Season with salt and pepper.
  • Cut the toad-in-the-hole into four portions and serve with the gravy on the side.

Cube steaks are cooked low and slow in the oven with a savory balsamic onion gravy.

2 pounds cube steaks
⅓ cup flour
½ teaspoon kosher salt
¼ teaspoon pepper
1 tablespoon olive oil
2 tablespoons butter
2 large onions (sliced into ¼" rings)
½ cup red wine (or beef broth)
3-4 cups beef broth (+ 1 cup, not low sodium)
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon rosemary (chopped)
salt and black pepper to taste
1 tablespoon corn starch

Steps:

  • Preheat oven to 350°F.
  • Combine flour, salt, & pepper in a shallow plate. Dredge the meat in the flour mixture.
  • Heat olive oil over medium heat in a dutch oven. Brown steaks on each side (adding additional olive oil if needed). Set aside.
  • Melt the butter in the dutch oven and cook onions in it until they are tender, add the wine and cook until it reduces. Top with browned steaks.
  • Add remaining ingredients except for cornstarch. Cover and place in the oven. Cook for 2 ½-3 hours or until fork-tender. Halfway through cooking, add 1 more cup of broth so the meat is covered with liquid.
  • Remove the dutch oven from oven and remove the steaks from the pot and place on a plate covered with foil.
  • Combine cornstarch with 1 tablespoon water. Bring liquid in the pot to a boil. Stir in cornstarch slurry and stir until thickened.
  • Serve over mashed potatoes.

This has fantastic flavor! The gravy can be started while the turkey roasts. When the turkey is through cooking, finish the gravy with balsamic vinegar and the pan juices.

16 -18 lbs turkey, neck and giblets reserved for gravy
fresh rosemary sprig (optional)
fresh sage sprig (optional)
6 tablespoons butter
3 tablespoons fresh rosemary, chopped
3 tablespoons fresh sage, chopped
1 1/2 tablespoons orange peel, grated
1 tablespoon black pepper
4 teaspoons salt
5 1/2 cups low sodium chicken broth
1 onion, quartered
1 bay leaf
6 tablespoons butter
2 large onions, halved, thinly sliced
1 tablespoon fresh rosemary, chopped
1 teaspoon fresh rosemary, chopped
1 tablespoon fresh sage, chopped
1 teaspoon fresh sage, chopped
1/3 cup flour
1/2 cup balsamic vinegar

Steps:

  • Preheat oven to 325°F.
  • Rinse turkey inside and out; pat dry. Place on rack in roasting pan. Sprinkle cavities with salt and pepper.
  • If not stuffing turkey, place rosemary and sage sprigs in main cavity. If stuffing turkey, spoon stuffing loosely into main cavity.
  • Melt butter in saucepan. Mix in chopped rosemary, sage, orange peel, pepper and salt. Brush herb butter over turkey.
  • Tuck wing tips under turkey; tie legs together to hold shape. Roast turkey 1 hour. Baste with pan juices. Continue roasting turkey until thermometer inserted into thigh registers 180°F, basting every 20 minutes, about 2 3/4 hours longer if unstuffed or about 3 1/4 hours longer if stuffed.
  • Meanwhile, prepare gravy: Combine turkey neck and giblets, 5 1/2 cups broth, quartered onion and bay leaf in saucepan. Simmer until reduced to 3 cups liquid, skimming occasionally, about 1 hour.
  • Strain turkey stock.
  • Melt butter in large skillet over medium-high heat.
  • Add sliced onions; saute 10 minutes.
  • Add 1 tablespoon rosemary and 1 tablespoon sage and saute until onions are golden, about 10 minutes.
  • Add flour; stir 1 minute. Gradually whisk in turkey stock.
  • Boil until gravy thickens, stirring often, about 3 minutes.
  • Add 1 teaspoon each rosemary and sage.
  • Transfer turkey to platter. Tent with foil. Pour juices from pan into large glass measuring cup; spoon off fat.
  • Add juices to gravy.
  • Add vinegar to roasting pan. Bring vinegar to simmer over medium heat, scraping up browned bits.
  • Pour mixture into heavy small saucepan. Boil until reduced to 1/4 cup, about 3 minutes; add to gravy.
  • Rewarm gravy; thin with more chicken broth, if desired. Season with salt and pepper.

1 boneless center-cut pork loin (3 pounds)
1 teaspoon olive oil
2 teaspoons mustard seeds, crushed
2 teaspoons dill seeds, crushed
1 teaspoon fennel seeds, crushed
Coarse salt and ground pepper
Balsamic Gravy

Steps:

  • Preheat oven to 475 degrees. Place pork in a 9-by-13-inch roasting pan. Rub pork with oil; evenly coat with mixed seeds. Season with 1 teaspoon salt and 1/2 teaspoon pepper.
  • Roast pork until browned, 25 to 30 minutes. Reduce oven temperature to 350 degrees. Continue cooking (tented with foil if browning too quickly) until an instant-read thermometer inserted into thickest part registers 140 degrees and pork juices run clear, 10 to 20 minutes.
  • Transfer pork to a platter. Tent with foil, and let rest 10 to 20 minutes while you make the Balsamic Gravy. To serve, slice the pork about 1/4 inch thick, and serve with the gravy.

BALSAMIC POT ROAST WITH RED WINE GRAVY



Balsamic Pot Roast With Red Wine Gravy image

Slow cooker pot roast that cooks all day in a delicious balsamic sauce. Make a delicious, rich gravy to top it off. I typically shred the roast using a couple forks. It will be so tender, it will fall apart. I make an open face sandwich topping some toasted ciabatta roll with some of the roast and the gravy as the finishing touch!

2 -3 lbs chuck roast
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon salt
1/2 tablespoon pepper
1 cup onion
1/2 cup tomato sauce
1/2 cup balsamic vinegar
1 cup beef stock
3 tablespoons butter
4 tablespoons flour
1 cup red wine

Steps:

  • Combine salt, pepper, garlic powder, onion power. Coat your roast with the seasonings.
  • Brown the pot roast over medium heat in pan. Brown on all sides (should take 5-7 minutes total). Do not clean your pan yet!
  • Add sliced raw onion to bottom of crockpot. Place browned meat into crockpot too.
  • In pan you just browned the meat in, add tomato sauce, balsamic vinegar, and beef stock. Simmer for 10 minutes or until reduced by half. Pour sauce over roast in crock pot. Juice should come partially up the roast but not cover it. As it cooks, the roast will release more juice.
  • Cook on low for 6-8 hours.
  • Remove roast from crockpot and lightly shred with a fork. Save all the juice from the crockpot to use in your gravy!
  • In a pan over medium-low heat, melt butter and whisk in flour. Cook on low for several minutes, whisking continuously until your rue is a golden brown color.
  • Deglaze the pan with your red wine. Make sure you continuously whisk!
  • Add in your roast juices 1 cup at a time. I typically end up adding about 3 cups of the liquid. Bring gravy to a low simmer and continue whisking. Simmer for 4-5 minutes until desired consistency.
  • Top your roast with the gravy and enjoy! I put mine on a toasted ciabatta roll. YUM!
