BANANA COCONUT MUFFINS



Banana Coconut Muffins image

These naturally sweetened banana coconut muffins are a real treat. I bet you can't tell they're made with 100% whole wheat flour! Recipe yields 1 dozen muffins.

Number Of Ingredients 12

3/4 cup whole wheat pastry flour or white/regular whole wheat flour
1/2 cup white whole wheat flour or regular whole wheat flour
1 1/2 teaspoons baking powder
1/4 teaspoon fine sea salt
1/2 teaspoon lemon zest (the zest from about about 1/2 medium lemon)
1 cup mashed ripe banana (from about 3 bananas)
1/2 cup virgin coconut oil, melted
1/4 cup honey
1 large egg, preferably at room temperature
1 teaspoon vanilla extract
3/4 cup unsweetened shredded coconut, divided
1 tablespoon turbinado (raw) sugar

Steps:

  • Preheat oven to 375 degrees Fahrenheit. If necessary, grease all 12 cups of your muffin tin with butter or muffin liners (my pan is non-stick and didn't require any grease).
  • In a medium bowl, whisk together the flours, baking powder, salt and lemon zest. Stir in 1/2 cup of the shredded coconut.
  • In a separate, medium bowl, whisk together the mashed banana, coconut oil, honey, egg and vanilla.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Divide the batter evenly between the muffin cups (a scant 1/4 cup batter each), then sprinkle the muffin tops with the remaining 1/4 cup shredded coconut. Sprinkle the tops with the raw sugar.
  • Bake for about 17 to 20 minutes, until a toothpick inserted into the center comes out clean. Transfer muffins to a cooling rack and let them cool.

3 cups all-purpose flour
1 cup white sugar
½ cup brown sugar
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground nutmeg
1 teaspoon salt
2 cups mashed ripe bananas
1 cup canola oil
1 cup coconut milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper liners.
  • Mix flour, white sugar, brown sugar, cinnamon, baking powder, baking soda, nutmeg, and salt together in a large bowl. Stir bananas, canola oil, and coconut milk together in a separate bowl; mix banana mixture into flour mixture until just combined. Fill muffin cups with batter.
  • Bake in the preheated oven until a tooth pick inserted in the center of a muffin comes out clean, 30 to 35 minutes.

This recipe is the best I've found for Banana muffins just watch not to overbake them. They come out nice and moist. they also freeze well for later use. I have put different additions in them over the years instead of walnuts, like peanut butter chips or chocolate chips, pecans and peanuts.

1/2 cup butter
1 cup sugar
2 large eggs
2 large bananas, mashed
2 cups flour, all purpose
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk
1 teaspoon vanilla
1/2 cup walnuts (optional)

Steps:

  • In large bowl mix flour baking soda and powder and salt.
  • set aside.
  • Beat together in large bowl- butter & sugar until fluffy.
  • Add eggs one at time beat well after each.
  • next add mashed banana beat well.
  • Next alternately add buttermilk and flour mixture mix only until dry ingredients are moist.
  • Do not over mix.
  • Batter will be slightly lumpy.
  • stir in vanilla and nuts.
  • Line (or grease) muffin pans.
  • Fill apx.
  • 1/2 to 2/3 full.
  • Bake in 400 degree pre-heated oven for 15-18 minutes.

1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 baking soda
1/2 teaspoon salt
1 cup sweetened flaked coconut
1 1/3 cups mashed ripe bananas (about 4 medium)
1/4 cup buttermilk
1 teaspoon vanilla
1/2 cup butter, softened
3/4 cup packed light brown sugar
1 large egg

Steps:

  • Heat oven to 350°F Lightly oil 12 muffin cups or coat them with cooking spray.
  • In a medium bowl, whisk together flour, baking powder, cinnamon, baking soda and salt. Stir in coconut. Set aside.
  • In another bowl, whisk together bananas, buttermilk and vanilla. Set aside.
  • In another bowl, use an electric mixer on high to beat butter until smooth, about 1 minute. Add brown sugar and beat until fluffy, about 2 minutes longer. Beat in egg.
  • With mixer on low, alternately beat in dry ingredients in three additions and banana mixture in two additions, beating until just combined each time.
  • Fill each muffin cup about two-thirds full. Bake for 25-30 minutes or until the tops of the muffins spring back when lightly pressed at the center, and a skewer inserted comes out clean.
  • Transfer muffins to a wire rack to cool.

1/2 cup brown sugar or 1/2 cup pure maple syrup
1/2 cup vegetable oil
1 teaspoon cinnamon

1 cup whole wheat flour
1 1/2 cups white flour
1 teaspoon baking powder
1 teaspoon baking soda

Steps:

  • Preheat oven to 350°F
  • Grease or place cups in tin for 12 muffins.
  • Mash bananas in a bowl.
  • Add oil, sugar or maple syrup, salt, cinnamon and cardamon and mix.
  • Add flours, baking powder and baking soda and mix.
  • Spoon into muffin tins and bake for 20-25 minutes until muffins are done and slightly browned on top.
