APPLE CINNAMON VEGAN FRENCH TOAST



Apple Cinnamon Vegan French Toast image

Apple Cinnamon French Toast is vegan, sweet, fruity, cinnamony and delicious for breakfast or brunch.

Number Of Ingredients 12

4 slices thickly sliced sourdough bread (must use a thick sturdy bread or your French Toast will be soggy)
2 tablespoons of ground flaxseed
1 cup of non dairy milk
1 teaspoon of cinnamon
¼ teaspoon of nutmeg
1 teaspoon of vanilla extract
Pinch of salt
Cooking spray
1 apple
1 tbsp coconut butter (normal butter will work to)
1 tbsp maple syrup
1 tbsp cinnamon

Steps:

  • Make the apple cinnamon topping: heat a medium saucepan to medium heat and cook all the topping ingredients until apples have softened to your liking, about 5-10 minutes. Let cool slightly.
  • In a large shallow dish, whisk together the ground flaxseed and milk. Let sit for 5 minutes so the flaxseed can thicken.
  • Whisk milk mixture again before adding in the cinnamon, nutmeg, vanilla extract, and salt. Whisk lightly until fully combined.
  • Over medium heat, spray a large pan with cooking spray.
  • Lightly dip the slices of bread in the milk mixture so that the bread is just covered on each side but not soaked. Do not let the bread sit in the milk mixture of any amount of time.
  • Cook the bread in the pan for 4 minutes on each side or until a nice golden brown.
  • Serve with the apple topping and additional maple syrup if desired.

1 tablespoon extra virgin olive oil or neutral cooking oil of choice
4 medium apples, (sliced (I recommend a crisp variety, such as Fuji, Braeburn, Granny Smith, Jonagold, or Gala)*)
3 tablespoons pure maple syrup
1 teaspoon ground cinnamon
1 large loaf French bread ((about 16 ounces), sliced (not too thick or thin) or torn into pieces**)
2 cups oat milk ((or other creamy plant-based milk))
8 ounces silken soft tofu
1 tablespoon extra virgin olive oil ((optional but adds a nice rich body))
2/3 cup coconut sugar or brown sugar
2 1/2 teaspoons ground cinnamon
1/2 teaspoon freshly grated or ground nutmeg
1 teaspoon ground ginger
1/4 teaspoon fine sea salt
2 teaspoons pure vanilla extract
1 teaspoon aluminum-free baking powder
1 tablespoon arrowroot powder ((or cornstarch))
1/2 cup rolled oats
1/3 cup chopped pecans
2 tablespoons coconut sugar or brown sugar
1/2 teaspoon ground cinnamon
A pinch of sea salt
3 tablespoons sunflower oil, grapeseed oil, or other neutral-flavored oil
Non-dairy yogurt or whipped topping

Steps:

  • Make the Apple Filling. Heat the oil in a large skillet over medium-low heat. Add the apple slices, maple syrup, and cinnamon, and mix to evenly coat. Cook for 10 minutes, until apples are soft but not falling apart. If you are using a good nonstick skillet, you can skip the oil, but be sure to stir frequently.
  • Lightly grease a large rectangular baking pan (about a 13×9-inch pan) with oil or nonstick cooking spray.
  • Make the French Toast. Arrange the slices of French bread in the greased baking dish so the tops are facing up.
  • In a blender, combine the oat milk, tofu, coconut sugar, cinnamon, nutmeg, ginger, salt, baking powder, and arrowroot powder (or cornstarch). Blend on high speed until the mixture is completely smooth and no lumps remain.
  • Pour the oat milk mixture evenly over the bread, making sure to moisten each piece completely. Pour the apple filling on top of the soaked bread and stir to combine, or carefully layer the apples between the slices of bread, as shown in the photos.
  • Make the crisp topping. Mix all of the ingredients together in a bowl using a spatula or your fingertips. Sprinkle the crisp topping evenly over the French Toast.
  • Cover the casserole with aluminum foil and refrigerate for at least 30 minutes, or overnight.
  • Preheat the oven to 350°F. Remove the baking dish from the refrigerator and bake, covered, for 20 minutes. Uncover and bake another 20-30 minutes, until the crisp topping is golden browned and the casserole is completely cooked through.

6 slices bread (of your choice)
½ cup apple sauce
1 cup vegan milk (of your choice)
cinnamon
2 small apples
1 cup vegan milk (of your choice)
3-6 small pitted dates (optional)

Steps:

  • Slice bread of your choice, if not already sliced.
  • Mix one part apple sauce with two parts vegan milk of your choice, like ½cup apple sauce with 1 cup milk. How much you'll need depends a little on the size and consistency of your bread (i.e. how much liquid it can absorb).
  • Pour some of the apple milk mixture into a flat bowl or a plate with a higher edge. Ideally, the slice of bread sits flat in the centre of either the bowl or plate. Generously sprinkle the surface of the mixture with cinnamon.
  • Soak the bread (on each side) for a minute or so. If you don't have that kind of bowl or plate, simply dip the slice into the mixture a few times until soaked.
  • While the bread is soaking, heat oil, or vegan butter, in a small pan over medium heat. Fry the French toast for several minutes on each side until golden brown.
  • Serve hot with vegan butter, maple syrup, fresh fruit, cinnamon sugar or whatever you like! Enjoy!

1 cup soymilk (or 1 cup other diary-free milk)
1/2 cup unsweetened applesauce
1/4 cup drained soft silken tofu
2 tablespoons light brown sugar or 2 tablespoons Splenda sugar substitute
1 teaspoon ground cinnamon
8 slices bread
2 tablespoons canola oil
1 large apple, peeled, cored, and thinkly sliced
1 teaspoon fresh lemon juice

Steps:

  • Combine the soy milk, applesauce, tofu, 1 tablespoon of the brown sugar, and the connamon ina food processor or blender and process until smooth.
  • Pour into a large, shallow bowl and dip in the bread, coating both sides evenly with the batter.
  • Preheat the oven to 275 degreesF. Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the prepared bread in batches and cook until just browned on both sides, 4 to 5 minutes total. Keep the cooked French toast warm in the oven whileyou prepare the remaining slices.
  • Heat the remaining 1 tablespoon corn oil in a skillet over medium heat. Add the apple slices, lemon juice, and remaining 1 tablespoon brown sugar and cook, stirring, until the apples are tender, about 5 minutes. Spoon the topping over the French toast and serve hot.
