Veda bread image

Veda is a Northern Irish bread made from malted flour. It can only be bought in Northern Ireland (usually) so this recipe is a lifesaver if you love it but don't live there! The bread is fairly soft, dark and chewy. Best eaten toasted with butter (and maybe cheese) for me but I've heard lots of different ways of eating it.

This recipe works perfectly in a bread maker following a standard white loaf programme (small size if you have the option). For a bread maker, add ingredients in the following order: Water, salt, oil, barley malt extract, flours, yeast
It has also been used to make bread the old fashioned, manual way - essentially, follow the usual bread making process to combine all the ingredients, knead, prove, etc, cooking for a similar amount of time to a white loaf.

Mix all the ingredients together using 200mls of the water. If it seems a little dry add a little more water just a drop at a time. It should be a softish slightly sticky dough.
